FRIED CHICKEN COATING

Eileen Frank relies on this made-in-minutes mixture to cook up a down-home chicken dinner. "We think this flavorful coating tastes a lot like the one at a well-known chicken restaurant chain," she writes form Castor, Alberta.

Steps:

  • In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 3 batches (2-1/2 cups total)., To prepare chicken: Place about 3/4 cup of coating in a large resealable plastic bag. In a shallow bowl, beat eggs and milk. Dip chicken pieces into egg mixture, then place in the bag; seal and shake until coated. , In a large skillet, heat 1/2 in. of oil over medium-high heat. Brown chicken on all sides; remove to a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 50-60 minutes or until juices run clear.

2 cups all-purpose flour
1/4 cup paprika
2 tablespoons salt
2 tablespoons pepper
1 tablespoon ground mustard
1 tablespoon dried thyme
1 teaspoon ground ginger
1/2 teaspoon dried oregano
ADDITIONAL INGREDIENTS:
2 eggs
1/2 cup milk
1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
canola oil

If you bake and cook everyday then this is a must to have in your cupboard, it's so much cheaper than using cooking spray and works even better than Pam cooking spray, no chemical fumes and will not leave burnt on black residue on the edges of your pans like cooking spray will and will keep forever in your cupboard --- for baking recipes using chocolate you may use 1/2 cup unsweetened cocoa powder in place of white flour or 1/4 cup each cocoa powder and flour --- this may be increased or decreased sucessfully just make certain that *all* three ingredients are the same amounts or the mixture will not work as well ;-)

Pan Release, Professional Pan Coating (Better Than Pam Spray!) image

Steps:

  • Place all ingredients in a mixing bowl.
  • Using an electric mixer beat until mixture has increased in volume slightly and resembles marshmallow cream.
  • Place in a container with a lid and store on the counter or in a cupboard (in hot weather it may be refrigerated).
  • The mixture tends to separate slightly upon sitting in your cupboard or refrigerator so mix before using, then brush pans using a pastry brush or a clean paper towel.

LECITHIN PAN COATING

Make your own Non-Stick cooking spray. I found this many years ago in a great cookbook. MAKE YOUR OWN CONVENIENCE FOODS by Don & Joan German. What I love about it is, "No propellents, no chemicals, no waste. And it lasts a long time.

Lecithin Pan Coating image

Steps:

  • We've all seen PAM and other sprays for Non stick cooking.
  • Now you can make your own at a fraction of the cost and no additives at all. Just pure liquid Lecithin which is a derivitive of Soy Beans.
  • You can buy Liquid Lecithin in most health food stores.
  • Pour Vodka into a jar with a screw on lid. Add the lecithin and shake to dissolve. That's it!
  • If the idea of Vodka bothers you, you can use vegetable oil, corn oil or canola oil. But the oils will not dissolve the lecithin completely.
  • As your pan heats the alcohol will evaporate leaving nothing but a thin coating of lecithin. NOTHING sticks! And it's easy to wash up.
  • You can apply this with a basting brush, or a small spray bottle. I find a square of clean paper towel works best.
  • Use only as much as needed to cover the bottom of a pan. A little goes a long way. No refrigeration required.
  • Personally, I LOVE IT.
