CRISPY PANKO CHICKEN BREASTS

Use crushed, crisp rice cereal squares instead of panko crumbs for a gluten-free version!

Crispy Panko Chicken Breasts image

Steps:

  • Pound chicken breasts, one at a time in a resealable freezer bag, until about 1/2-inch thick. Lightly beat egg in a shallow bowl. Combine panko crumbs, salt, pepper, garlic powder and onion powder in a separate shallow bowl. Dip chicken breasts in egg until coated, drip off excess and dip in panko mixture. Press chicken into crumbs until fully coated.
  • Heat oil in a large skillet on medium high heat. Transfer chicken to pan and cook about 2 to 3 minutes per side or until chicken is brown, crispy and fully cooked.

½ teaspoon Spice Islands® Onion Powder
¼ cup Mazola® Corn Oil

PARMESAN & PANKO CRUSTED CHICKEN

This recipe was adapted from the recipe I found on the back of a Best Food Mayonaise jar. The mayonaise helps provide a moist piece of chicken and helps adhere the panko and cheese to the chicken. Feel free to add more/less of italian seasoning/garlic powder to taste. We are huge fans of garlic so I up the quantity used for our household.

Parmesan & Panko Crusted Chicken image

Steps:

  • Combine panko crumbs, seasonings, and parmesan cheese in a bowl.
  • In a separate bowl add mayonaise.
  • Spread mayonaise on chicken then dredge chicken in crumb mixture
  • Spray a baking sheet with cooking spray
  • Bake at 450º F for 20 mins or until thoroughly cooked.

  • Preheat oven to 425°F. Line a baking sheet with parchment paper, or spray it with cooking spray.
  • Heat oil in a large saute pan over medium-high heat. Add garlic and saute for 1 minute, stirring frequently, until fragrant. Add in the tomatoes, red pepper flakes, salt, oregano and black pepper, and stir to combine. Gently stir in the sprig of fresh basil. Continue cooking until the sauce reaches a simmer. Then reduce heat to medium-low and continue to let the sauce simmer for about 15 minutes, or until the oil on the surface is a deep orange. It will be reduced and thickened. Discard the sprig of basil, and season the sauce with additional salt and pepper if needed.

  • Thoroughly dry chicken breasts with a paper towel. Place one of the pieces in between two plastic sheets or in a large plastic bag and flatten to an even ½-inch thickness. Repeat with remaining pieces. Generously season both sides of the chicken breast with salt and pepper.
  • Put the flour into a separate shallow bowl. Whisk together eggs and olive oil in a shallow medium bowl. Combine panko and parmesan cheese in a shallow bowl.
  • Dip chicken in flour, shaking off any excess coating. Next, dip in egg wash, making sure to coat completely and drain any excess. Lastly, dip in the breadcrumbs lightly, pressing to coat evenly. Repeat the process with the remaining pieces.
