Patricia's Salmon Basilico Pomodoro image

Steps:

  • Preheat oven to 375 degrees.
  • Reserve a few basil leaves for garnish, chop the remaining leaves and mix them ina bowl with the tomatoes and olive oil.
  • Place salmon in a baking dish and cover with some of the tomato-basil mixture, reserving the ramainder for later use.
  • Season with salt and pepper to taste.
  • Bake for 15-20 minutes or until the salmon is cooked to taste.
  • Garnish with basil leaves and the reserved tomato-basil mixture.
  • Tip: serve with rice, mashed potatoes, or your favorite vegetable.

Steps:

  • Thaw salmon, removing from the vacuum bag or puncturing bag if applicable (or use fresh or frozen, thawed salmon portions). Preheat oven to 375. Reserve a few basil leaves for garnish; chop remaining leaves. Mix chopped basil with tomatoes and olive oil in a bowl. Put thawed salmon portions in baking dish. Cover with some of the tomato basil mixture, reserving the remainder for later use. Season to taste with salt and pepper. Bake for 15 to 20 minutes or until salmon is cooked to taste. Garnish with basil leaves and reserved tomato basil mixture. Serve with rice, mashed potatoes or your favorite vegetable. Serves 6 Cooking the Costco Way
