What could be better than peaches, oranges, pineapples and cherries?? JAM! =) I just love this recipe and it makes a beautiful gift placed in a basket with some fresh bread or warm, home-made biscuits. Know someone who needs some cheering up? This is guaranteed to do it!

Peach Orange Pineapple Cherry Jam image

Steps:

  • 1. In a blender or food processor, blend fruits and cherry juice in batches until smooth. Transfer to a large kettle; stir in pectin.
  • 2. Bring to a rolling boil over medium heat, stirring constantly. Add sugar; boil for 2 additional minutes.
  • 3. Remove from heat and place into prepared, sterilized jars if canning.

8 medium peaches, peeled and cut into chunks
1 small unpeeled naval orange, cut into wedges
2 can(s) (8 oz. each) crushed pineapple, undrained
12 maraschino cherries
3 Tbsp maraschino cherry juice
2 pkg (1 3/4 oz. each) powdered fruit pectin
10 c sugar

Fresh Spiced Peach Jam image

Steps:

  • Heat five 12-ounce jars in simmering water until ready for use. Wash lids and rings in warm soapy water.
  • Mix peaches, sugar, lemon juice, cinnamon, nutmeg, and allspice in a large pot. Bring to a boil; cook, stirring occasionally, until peaches are soft, about 15 minutes. Remove from heat.
  • Mash peaches with an immersion blender or potato masher to desired size and texture. Return to the heat; continue cooking jam until thickened, about 10 minutes more.
  • Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe rims with a clean, damp cloth. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower in jars using a holder, placing them 2 inches apart. Pour in more boiling water to cover the jars by at least 1 inch. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 12 hours. Press the top of each lid with a finger, ensuring that lid does not move up or down and seal is tight.

PINEAPPLE-PEACH JAM

I stumbled on this when I had an excess of pineapple and peaches. The resulting jam tasted a lot like duck sauce when warm, and it makes an excellent condiment to savory meals and accompanies chicken nicely. Cold, it's also a delicious jam. Creates about 8 to 10 half-pint jars, depending on the size of your peaches and pineapple.

Pineapple-Peach Jam image

Steps:

  • Immerse 8 to 10 half-pint jars in simmering water until sauce is ready. Wash lids and rings in warm soapy water. Set aside.
  • Combine peaches and pineapple in a large pot. Cook and stir over medium heat until fruit juices are released, 6 to 10 minutes. Add lemon juice, stirring continuously. Add sugar and stir. Add pectin; cook and stir until slightly thickened, about 2 minutes.
  • Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw on rings finger-tight.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.

Peach-Pineapple-Orange Marmalade image

Steps:

  • Skin, dice and wash the peaches. Place in a large saucepan.
  • Add the pineapple to the peaches and mix well.
  • Slowly stir in the sugar.
  • Boil the mixture for 20 minutes.
  • Take it off the heat and stir in the orange jello.
  • If you are using it right away, let it stand (stirring occasionally) and keep it in the refrigerator. If you want to keep it in jelly jars, pour the hot mixture into the jars you are using. Seal with rings and bands, then turn the jar over onto its lid and leave it sit overnight. It will seal without a pressure canner.

Steps:

  • In a large kettle, combine peaches that have been washed, peeled, pitted and chopped with pineapple, lemon juice and cherries.
  • Add pectin and mix together.
  • Over medium high heat, bring to a boil stirring constantly.
  • Add the sugar all at once, mix well and return to a full rolling boil, adding 1/2 tsp butter if needed to reduce foaming.
  • When it reaches the full rolling boil, boil for 4 minutes.
  • Remove from heat and continue to stir for a couple minutes. If need be, skim foam off the top. Pour into hot jars.
  • If needed wipe edge of jars and then put lids and rings on. Get them as tight as you can by hand and turn upside down. Set timer for 5 minutes.
  • After 5 minutes, turn right side up and let sit in an area free from drafts until cooled.
  • If desired you can water process. Either way if the jar does not seal, put it in the fridge and use it first.

Steps:

  • Peel the oranges.
  • Put the peels in a small sauce pan. Cover with water and simmer for 20-minutes or until the peel can be pierced with a fork. Drain and rinse til cool and chop the peel.
  • Remove any extra thick, white pith from the peeled oranges. No need to remove it all. Cut the oranges in half, then quarters.
  • Slice out the white, center membrane strip and discard.
  • Puree the peeled oranges in a food processor.
  • Into a heavy saucepan, measure 2-cups orange puree, 1-cup chopped peel, 2-cups undrained, crushed pineapple, and the water or wine.
  • Gradually stir in the dry pectin.
  • Bring to a boil, add butter, and boil for one minute.
  • Add the sugar. Bring back to a boil and boil hard for one minute.
  • Ladle into seven, half-pint jelly jars, seal and process.

Steps:

  • Wash jars, place in 9X13 metal pan upside down with two cups of water in pan.Heat oven to 225*. Put pan in oven. Place seals in a saucepan, heat on low, seals should be hot.
  • In large stockpot, add 8 cups of chopped fresh peaches with any juice, or canned chopped peaches with juice.
  • Measure crushed pineapple and juice.
  • Add enough water to measure 3 1/2 cups.
  • Add to stockpot.
  • Add orange jello pkgs and sure-jell.
  • Add margarine or butter.
  • Stir with a wooden spoon to mix.
  • Add 2 cups water.
  • Heat to a boil.
  • Add sugar all at once.
  • Stir constantly so it does not scorch. Boil for one full minute, a rolling boil that you cannot stir down.
  • Take off heat.
  • Skim off foam.
  • Add maraschino cherries if desired. Stir.
  • Fill jars, 1/4 inch head room. Wipe the neck edge and top of each filled jar with damp clean cloth, seal and tighten with ring.
  • Have a canner ready to place jars in hot water bath for 10 minutes. Take out with tongs and place on towel padded counter.
  • You will hear a pop and the seal will be dented in when sealed.
  • 12-15 1/2 pint jars with seals and rings.
  • Remember thuis takes time to seal, it is hot when it comes out of the canner so let it cool. If not set up overnight, use the recipe Liquid Cement #151544. It is not mine but hats off to cook who make it, it works!

Steps:

  • Run peaches through a chopper. I think that you would blanch, peel and pit the peaches before running them through chopper.
  • Run all oranges through chopper, using rind of one orange. (just the zest; the whole rind will make it bitter; other recipes are using zest from all the oranges; you judge).
  • Add cherry juice to the peaches, oranges, and sugar.
  • Cook, stirring constantly, I am guessing this will burn easily.
  • Cook until thick.
  • When nearly done, add chopped cherries.
  • Bring to a boil.
  • Put in small jar and cover with paraffin wax (I said this was old recipe).
  • Another recipe had you water bathing for 10 minutes to seal; check Ball book.
