In summer, my aunt and uncle provide me with tree-fresh fruit from their peach orchard. My husband gets so excited when they have a bumper crop because he knows this dessert will be on our menu often.

  • Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. In a large bowl, combine the sugar, flour, tapioca and salt. Set aside 2 tablespoons cream. Combine remaining cream with vanilla; add to the sugar mixture. Add peaches; toss to coat. Let stand for 15 minutes., Pour peach mixture into crust. Roll out the remaining pastry; make a lattice top crust. Seal and flute edges. Brush with reserved cream; sprinkle with additional sugar., Bake at 400° for 50-55 minutes or until golden brown and bubbly (cover edges with foil during the last 30 minutes to prevent overbrowning if necessary). Cool on a wire rack. Store in the refrigerator.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease sides and bottom of a 10 inch deep-dish pie pan.
  • In a medium mixing bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Arrange the peach slices on top of the pudding mixture.
  • In a small mixing bowl, beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tablespoons reserved peach syrup. Beat for 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top.
  • Bake in preheated oven for 30 to 35 minutes, until golden brown. Chill before serving.

  • Preheat the oven to 350 degrees F (175 degrees C). Drain peaches and reserve the syrup; set aside.
  • Combine flour, pudding mix, margarine, egg, and milk; beat well. Pour into a greased 8 or 9 inch pie pan. Arrange drained peaches on top of mixture, just to edges.
  • Cream together softened cream cheese, sugar, and 3 tablespoons reserved peach syrup. Spoon mixture carefully on top of peaches, just to edges. Sprinkle sugar and cinnamon on top.

  • Preheat an oven to 350 degrees F. Fit the pie crust into a 9-inch pie plate and fold and crimp the edges as desired. Lay a large piece of foil over the dough and fill with pie weights or raw rice. Bake until the dough begins to dry and set but is still very pale, about 12 minutes. Remove the weights and foil and continue to bake until the dough is golden brown, 15 to 20 minutes more. Set aside to cool completely on a rack.

  • For the Crust: In a large bowl, whisk together flour, sugar, and salt. Use your fingers to break up butter and cut it in, until mixture resembles mostly coarse meal with a bunch of hazelnut-size pieces remaining. Drizzle with ice water and stir with a fork until most of flour is moistened (mixture will still be shaggy and not at all formed into a dough). If there is dry flour remaining, add more ice water, 1 tablespoon at a time, until a piece will hold together when pressed between your fingers.
  • Turn dough out onto a clean surface and gather into a mound. Using the heel of your hand, smear dough away from you, working your way down to create long layers of butter. Fold dough over onto itself, as if closing a book. Repeat twice more. (There should be plenty of large, flat pieces of butter visible in dough.)
  • Divide dough into two pieces, one about 12 ounces, the other about 1 pound. Pat smaller piece into a round and larger into a rectangle. Wrap each loosely in plastic, then use a rolling pin to flatten and finish compacting (use plastic rather than your hands to maneuver dough-the less body heat transferred, the better). Refrigerate until firm, at least 1 hour and up to 1 day.
  • For the Pie Filling: Prepare an ice-water bath and bring a large pot of water to a boil. Cut an X in flower (non-stem) end of each peach. Drop in boiling water and cook just until skins begin to peel back, about 30 seconds. Transfer to ice-water bath, then peel and pit peaches. Cut into 1/2-inch wedges (you should have 7 to 8 cups).
  • In a large bowl, stir together sugar and vanilla seeds, then add peaches, lemon juice, and salt; stir to combine. Let stand 30 minutes, then stir in cornstarch. Set a colander over a heatproof bowl; transfer peaches to colander to drain. Transfer liquid in bowl to a small saucepan, then transfer peaches to bowl. Bring liquid to a boil over medium-high heat, then cook, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir into peaches; let stand 15 minutes.
  • Assembly: On a lightly floured surface, roll out smaller piece of dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Fill with peach mixture. Roll larger piece of dough out into an approximately 12-by-16-inch rectangle, a scant 1/8 inch thick. Using a pastry wheel or large knife, cut into 1 1/2-to-2-inch-wide strips.
  • Place 6 strips atop pie, leaving a little space between them. Fold back every other strip, and lay a strip across center of pie, perpendicular to original strips. Unfold folded strips, then fold back remaining strips. Lay another horizontal strip across pie. Repeat folding and unfolding strips to weave a lattice pattern. Repeat on remaining side. Press edges together to seal. Trim dough to a 1-inch overhang, fold under, and crimp as desired. Refrigerate 15 minutes.
  • Preheat oven to 400°F. Brush top of chilled pie with beaten egg. Place on middle rack of oven and slide a baking sheet or a piece of aluminum foil onto rack below to catch any overflow. Bake 15 minutes, then reduce temperature to 375°F and bake until bubbling in center and top and bottom crusts are browned, about 1 hour, 30 minutes more.
  • Let cool completely on a wire rack, at least 4 hours. Pie is best eaten the day it's made, but can be stored, lightly covered, at room temperature, up to 2 days.

Peach Lattice Pie with Bourbon Caramel image

Steps:

  • To make the Bourbon Caramel Sauce:
  • Pour the sugar into a medium high-sided saucepan, tilting the pan to distribute the sugar evenly across the bottom of the pan. Set the pan over medium-high heat. Use a rubber spatula to occasionally push the sugar from the outer edge of the pan toward the center. The sugar will clump up slightly, but just keep pushing it around a bit; it will eventually smooth out. When the sugar is dissolved and darkened to the color of a copper penny (about 5 to 7 minutes), add the butter and whisk until incorporated. Be careful: the mixture will bubble up when you add the butter and might even seem like it's about to overflow the pan; just keep whisking and it will quickly settle back down.
  • Take the pan off the heat and carefully add the cream in two stages, whisking until smooth and incorporated. Add the salt, vanilla, and bourbon, whisking to combine.
  • Pour the caramel through a fine-mesh strainer into a bowl and cool completely to room temperature, about 2 hours, before using or transferring to an airtight container to store in the refrigerator. Return to room temperature before using.
  • To make the Peach Lattice Pie:
  • Roll out one disc of Magpie Dough for Flaky Piecrust into a 13-inch circle with an even thickness of 1/4 inch. Transfer dough to a 9-inch pie pan and trim overhang to 1 inch all the way around. Cover the bottom crust with plastic wrap and put the pan in the refrigerator while you roll the dough to the top shell.
  • Roll out the second disk of pie dough to a 13-inch circle with an even thickness of 1/4 inch. Transfer dough to a parchment-lined baking sheet and using a pizza wheel, pastry cutter, or large knife, along with a ruler, cut dough into ten 1-inch-wide strips. Cover with plastic wrap and refrigerate while you work on the filling for the pie.
  • Preheat the oven to 400°F (200°C) with a rack in the center. Line a rimmed baking sheet with parchment paper.
  • In a large bowl, toss the peaches with the brown sugar, vanilla extract, and lemon juice. Let sit 5 minutes.
  • In a small bowl, whisk together the granulated sugar, ground tapioca, cinnamon, and salt. Sprinkle the sugar mixture over the peaches and toss to combine. The mixture may look dry at first; let it sit at room temperature for 10 to 15 minutes to allow the sugar and lemon juice to draw more of the juices out of the fruit, then give it another good tossing to mix well and moisten all of the sugar and tapioca granules.
  • Retrieve the prepared crust from the refrigerator and set the pan on the parchment-lined baking sheet. Pour the filling into the bottom shell. Use your index finger to scrape some of the syrupy fruit juices off the sides of the mixing bowl and generously moisten the top edge of the shell.
  • Lay remaining dough strips on top of the pie in a lattice pattern, then roll and crimp the edges.
  • Whisk the egg yolk with 1 tablespoon water. Lightly brush the lattice with the egg wash and sprinkle with sanding sugar. Transfer the baking sheet to the oven and bake the pie 25 minutes, then rotate the baking sheet, lower the oven temperature to 350°F (175°C), and bake 30 minutes more, or until the juices bubble up through the lattice. Tent the top with foil if the crust starts to over-brown.
  • Set the baking sheet on a wire rack and let the pie cool and set uncovered, at room temperature, overnight (or up to 3 days) before slicing and serving. Serve with bourbon caramel sauce.

For the Bourbon Caramel Sauce:
2 cups (400 g) granulated sugar
3/4 cup (170 g) unsalted butter
1 1/4 cups (295 g) heavy cream, at room temperature
1 teaspoon kosher salt
3 teaspoons vanilla extract
2 tablespoons bourbon
For the Peach Lattice Pie:
1 recipe Magpie Dough for Flaky Piecrust, chilled overnight
2 pounds (907 g) ripe peaches, each peeled, halved, pitted, and cut into 8 wedges
1/2 cup (96 g) packed light brown sugar
1 tablespoon vanilla extract
1 tablespoon freshly squeezed lemon juice
1/2 cup (96 g) granulated sugar
3 tablespoons finely ground instant tapioca (ground using a spice grinder)
1/2 teaspoon ground cinnamon
1/8 teaspoon fine salt
1 large egg yolk
2 tablespoons sanding sugar or coarse raw sugar, for sprinkling

PEACHES AND CREAM PIE

This recipe is inspired by the fruit and cream pies at Briermere Farms, in Riverhead, N.Y., a fruit farm and bakery on the North Fork of Long Island. Here, a press-in graham cracker crust is swapped in for the traditional pastry crust, but otherwise the recipe stays true to the signature pie, with a giant mound of fresh sliced peaches concealing a lightly sweetened whipped cream filling beneath. Cream cheese acts as a stabilizer in the whipped cream, allowing you to assemble the crust and filling in advance - but once you add the peaches, the pie is best served within the hour. Perfectionists take note: This pie is a little messy, but that's part of its charm. If you can't find ripe, juicy peaches, this recipe is equally delicious made with fresh strawberries or blueberries. The quality and ripeness of the fruit is more important than the variety.

  • Heat the oven to 350 degrees. In a medium bowl, whisk together the graham cracker crumbs, granulated sugar, cinnamon and salt. Add the butter and toss until the crumbs are evenly moistened. Transfer the mixture to a 9-inch pie plate and press into an even layer on the bottom and up the sides of the pie plate, packing the crust lightly with the bottom of a measuring cup. Place the pie plate on a sheet pan and bake for 10 to 12 minutes, until set, then cool completely.
  • In a large mixing bowl, combine the cream cheese and confectioners' sugar. Using an electric mixer, beat on low speed until combined, then raise the speed to high and whip until the mixture is smooth and creamy. Add the heavy cream and vanilla, and beat on high speed until the mixture forms stiff peaks. Scrape the filling into the cooled crust, smooth the top, and chill for at least 2 hours, or overnight, until set. (Cover with plastic wrap if chilling the pie overnight.)
  • Meanwhile, bring a large pot of water to a boil and fill a large bowl with ice water. Immerse the peaches, a few at a time, in the boiling water for 30 seconds to 1 minute, depending on the ripeness of the peaches, until their skins peel off easily with a paring knife. Using a slotted spoon, transfer the peaches to the ice bath to stop the cooking. Peel the peaches, and cut into slices, placing the slices in a colander set over a bowl to drain any excess juices.
  • Just before you plan to serve the pie, spoon the peaches onto the filling, covering the entire surface of the pie. Serve immediately or refrigerate for up to 1 hour before serving.

  • For crust:
  • Whisk first 5 ingredients in medium bowl to blend. Add butter and shortening and rub in with fingertips until mixture resembles very coarse meal. Mix in 4 tablespoons ice water. Mix in more water by tablespoonfuls if dough is dry, tossing until moist clumps form. Gather dough into ball. Divide dough into 2 pieces, 1 slightly larger than the other. Flatten into disks; wrap and chill at least 2 hours and up to 2 days.
  • For filling:
  • Mix sugar, cornstarch, lemon juice and spices in large bowl. Bring medium saucepan of water to boil. Drop in 3 peaches at a time; blanch 1 minute. Transfer peaches to bowl of cold water. Using small sharp knife, peel 1 peach. Cut peach in half; discard pit and slice thinly. Stir peach slices into sugar mixture. Repeat with remaining peaches. Let filling stand until juices form, at least 30 minutes and up to 1 hour.
  • Preheat oven to 375°F. Roll out larger dough disk on lightly floured surface to 13- to 14-inch round. Transfer to 9-inch-diameter deep-dish pie dish. Roll out smaller dough disk on lightly floured surface to 11-inch round. Using ruler as aid, cut dough into 1/2-inch-wide strips.
  • Spoon filling into dough-lined dish. Arrange some of dough strips atop pie, spacing 3/4 inch apart. Form lattice by arranging more dough strips at right angle to first strips, spacing 3/4 inch apart. Trim overhang of bottom crust and lattice strips to 3/4 inch. Fold under and crimp edge decoratively.
  • Bake pie until crust is golden and filling bubbles thickly, covering edge of crust with foil if browning too quickly, about 1 hour 20 minutes. Cool pie to room temperature before serving.
