PEANUT BRITTLE BLONDIES

- Heat oven to 350°F. Grease 13x9-inch (3-quart) glass baking dish with shortening; lightly flour.
- In medium bowl, mix 2 1/2 cups flour, the baking powder and salt; set aside. In 2-quart saucepan, cook brown sugar and butter over medium heat, stirring frequently, until butter is melted. Remove from heat; cool slightly. Add eggs, one at a time, beating until blended after each addition. Stir in flour mixture. Stir in peanut brittle and vanilla. Press dough in baking dish.
- Bake 25 minutes or until golden. Cool completely in pan on cooling rack. Cut into 6 rows by 4 rows.

- In a large bowl, cream the peanut butter, butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition. Stir in chips. , Spread into a greased 13x9-in. baking pan. Bake at 325° for 35-40 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack., For frosting, in a small bowl, combine the butter, cocoa, milk, corn syrup and vanilla. Gradually add confectioners' sugar; beat until smooth. Frost brownies. Sprinkle with chips. Cut into bars.

- Grease a large cookie sheet. Set aside.
- In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
- Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

- Combine brown sugar, and butter in a saucepan and cook over medium heat until butter is melted.
- Remove this mixture from the heat and cool slightly.
- Add eggs, one at a time, beating until just blended.
- In a separate bowl, combine the flour, baking powder, and salt.
- Whisk the dry mixture to blend.
- Add the brown sugar mixture and stir until well blended.
- Stir in the extracts and peanut brittle.
- Lightly grease and flour a 13 X 9 inch baking pan; press the mixture into the baking dish.
- Bake at 350 degrees for 20-25 minutes or until golden brown.
- Remove from oven and cool completely before cutting.
- These can be cut into rectangular or diamond shaped bars.
