SWEET AND SPICY PEANUT BUTTER-BACON SANDWICHES

I craved peanut butter and bacon toast while pregnant. Then I sampled a friend's peanut butter with chile pepper in it and loved it. The little zip made the sandwich better, and now I live on this peanut butter sandwich recipe. -Carolyn Eskew, Dayton, Ohio

Sweet and Spicy Peanut Butter-Bacon Sandwiches image

Steps:

  • Spread peanut butter on 2 bread slices; sprinkle with cayenne. Top with bacon and drizzle with honey. Top with remaining bread.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat peanut butter, 1/2 cup white sugar, and brown sugar together in the bowl of a stand mixer until well combined. Add egg and baking soda; beat until smooth, 1 minute. Fold in bacon. Form dough into walnut-sized balls.
  • Pour 2 tablespoons white sugar into a bowl; roll balls in the sugar until coated. Arrange coated balls on a baking sheet.
  • Bake in the preheated oven until lightly browned, about 10 minutes. Cool on the baking sheet for 5 minutes before removing to cool completely on a wire rack.

Air-Fryer Bacon-Peanut Butter Cornbread Muffins image

Steps:

  • Preheat air fryer to 375°. Grease six 6-oz. ramekins with 2 tablespoons butter. For topping, in a small bowl combine 2 tablespoons butter, peanuts, 3 tablespoons bacon and brown sugar; set aside., In a large bowl, beat muffin mix, buttermilk and eggs. Microwave peanut butter and remaining 2 tablespoons butter until melted; stir into batter. Fold in peanut butter chips and remaining 2/3 cup bacon. Pour into prepared ramekins; sprinkle with topping., Place ramekins on tray in air-fryer basket; cook until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from ramekins to a wire rack. Serve warm. If desired, drizzle with caramel ice cream topping.

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper. Place bacon on cookie sheet. Bake 15 to 20 minutes or until cooked completely. Transfer to paper towel to drain. Crumble. Reduce oven temperature to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In medium bowl, place Bisquick mix. In 2-cup measuring cup, beat buttermilk, eggs, 2 tablespoons syrup and the vanilla with whisk. Pour over Bisquick mix. Add up to 2 more tablespoons maple syrup if more maple flavor is desired. Stir in one-third of the crumbled bacon. Divide batter among muffin cups. Sprinkle with additional bacon, reserving some for garnish.
  • Bake at 350°F about 20 minutes or until skewer inserted in center comes out clean. Cool completely.
  • In medium bowl, beat Frosting ingredients until smooth. Place frosting in decorating bag fitted with tip. Pipe frosting onto cooled cupcakes. Sprinkle with remaining bacon.

  • Add the butter and peanut butter to the bowl of an electric mixer and beat until creamy. Gradually add in the powdered sugar and mix until a frosting forms, increasing the speed from low to high. Add in the vanilla extract and beat the frosting for 2 to 3 minutes on medium-high speed. If the frosting is too thick, add in milk 1 tablespoon at a time. Beat for another 1 to 2 minutes after each addition. When ready to frost, scoop the frosting onto a spatula or into a pastry bag and frost the cooled cupcakes. Stick the bacon pieces on top of the frosting.
  • Add the ingredients to a small saucepan over medium-high heat and bring to a boil. Stir constantly until the sugar dissolves and cook for 1 to 2 minutes once boiling. Reduce the heat to a simmer and cook for another 3 to 4 minutes. Remove the pan and let the syrup sit and cool to room temperature, where it will thicken. It won’t be super thick, but just slightly syrupy.
