- In a medium bowl, combine the butter, coconut, flour, pecans and sugar. Spread into an ungreased 15x10x1-in. baking pan. Bake at 325° for 30 minutes or until lightly browned, stirring occasionally. Cool. , Meanwhile, in a large bowl, beat pudding mix and milk on low speed for 2 minutes. Chill for 5 minutes. Fold in the whipped topping. Place half of the pecan mixture in a 13x9-in. dish. Spread pudding mixture over pecan mixture. Top with remaining pecan mixture. Chill until serving.

PECAN PUDDING CAKE

- Preheat the oven to 350 degrees. Grease and flour a 13 x 9 x 2-inch pan. In a bowl, combine the cake mix, milk, eggs, oil, and pecans, and blend just until moistened; then beat at medium speed for two minutes. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a wooden pick comes out clean.
- While the cake is baking, make the topping: Stir together the milk and the pudding, then beat in the cream cheese, a few small pieces at a time; set aside. Whip the cream with the sugar until stiff.
- When the cake is done, prick the top with a fork. Pour the pineapple and juice over the hot cake. Spread the cream cheese mixture over the pineapple, then cover the cake with the whipped cream. Garnish the cake with the pecans and coconut. Refrigerate for a while. The longer the cake is refrigerated the better it tastes. This cake freezes well.

- First make the topping. Put the butter, double cream and maple syrup together in a small pan and stir over a low heat until well mixed. Bring to the boil, simmer for 1 min, then pour into the base of a buttered 900ml pudding basin.
- Sift the flour into a bowl with the cinnamon and nutmeg. In a separate bowl, beat the butter with the sugar and maple syrup until light and fluffy. Beat in the egg a little at a time. Fold the dry ingredients into the creamed butter and egg mixture, adding the milk to give a soft dropping consistency. Stir in nuts and raisins.
- Spoon the mixture into the basin, then cover with greased greaseproof paper and foil, making a pleat in the centre of both. Tie securely with string.
- Steam the pudding for 1½ hrs, checking regularly to make sure that the pan doesn't boil dry. Turn out and serve with extra warmed maple syrup and a generous helping of double cream.

- Combine brown sugar and 1 tablespoon flour in a small bowl.
- Lightly spoon 1-1/4 cups flour into dry measuring cups; level with a knife.
- Combine with granulated sugar, 1/3 cup pecans, baking powder, and salt in a medium bowl; make a well in center of mixture.
- Combine milk, butter, and vanilla in a bowl; add to flour mixture.
- Stir just until moist.
- Spread batter into an 8-inch square baking pan; sprinkle with brown sugar mixture.
- Pour boiling water over batter (do not stir).
- Bake at 350' for 35 minutes or until pudding is bubbly and cake springs back when touched lightly in center.
- Serve warm with whipped topping.

- In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 375°F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; press with times of fork or flute if desired.
- In another medium bowl, beat all filling ingredients except pecans with wire whisk or hand beater until well blended. Stir in pecans. Pour into pastry-lined pie plate.
- Cover edge of pastry with 2- to 3-inch-wide strip of foil to prevent excessive browning. Bake 40 to 50 minutes or until center is set, removing foil for last 15 minutes of baking. Refrigerate at least 2 hours until chilled before serving. Store in refrigerator.
