THE BEST HAM GLAZE

A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

Steps:

  • Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
  • Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
  • Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
  • Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
  • Let the ham cool for 15 minutes before thinly slicing.

One 8- to 10-pound fully-cooked bone-in ham
3/4 cup packed dark brown sugar
3/4 cup pure maple syrup
1/4 cup low-sodium soy sauce
Zest and juice of 1 navel orange
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon onion powder
Freshly ground black pepper

Recipe came from Food Network Magazine 04/12 - pp 142-143. It inspired me for the Easter holiday because it was a bit different than the typical pineapple glaze ham. It was quick and easy to prepare and it came out so juicy!!! I used a Marionberry Jam - you can use any jam/marmalade of your choice.

Steps:

  • Preheat the oven to 375.
  • Dry the ham and bring to room temperature.
  • Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deepand1inch apart.
  • Put the ham flat-side down on a rack or in the pan itself; add 1 cup of water.
  • Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry.
  • Meanwhile, make the glaze; whisk the jam, sugar, mustard, vinegar and worcestershire.
  • Brush the ham with HALF of the glaze; cover loosely with foil and bake 45 more minutes.
  • Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 minutes.
  • Let rest 15 minutes before carving. This is when I baked the cornbread in the oven.

HONEY GLAZED HAM

This ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

Honey Glazed Ham image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

  • Best ham for Glazed Ham. My economical pick for 2019: $9/kg ($4.50/lb) Smoked Half Leg of Ham from Woolworths (Australia) is excellent value. I’ve used it twice already this year, and I’ve used it many times in previous years – always a winner!
  • How much ham to buy. How much ham to buy: With at least one other main dish plus sides – 6 to 8 people per 1 kg / 2 lb ham (bone in weight). So a 5 kg / 10 lb ham = 30 – 40 people, about 100 – 130g / 3.4 – 4 oz per person.
  • How to peel the rind (skin) off ham. Top Tip: Just remove the rind and leave as much of the fat on as you can. Fat = sticky glaze! This part is easy – the skin WANTS to come off!
  • Score fat. TIP: Just score lightly about 75% of the way through the fat. If you cut all the way through to the ham meat, some of the diamonds might loosen and fall off.
  • Make ham glaze. Make your ham glaze – it’s dead easy, just mix! Here are my two favourites: Maple Ham Glaze – my favourite, simple but extra special from the maple!

  • How to avoid burnt bits. One problem that many people run into is uneven caramelisation of the ham. Some parts brown faster than others, so you end up with burnt bits or under caramelised bits.
  • What sauce to serve with ham. The glaze is everybody’s favourite part…. and there’s just not enough to go around! So some years ago, I started using the pan drippings as the sauce to serve with the ham – and it’s been a huge hit!
