- Preheat oven to 400°. Grease bottoms and sides of four 8-oz. ramekins with 1 tablespoon butter (do not butter rims). Place on a baking sheet., In a small bowl, mix sugar, cornflake crumbs, brown sugar and ginger. In a large bowl, toss pears with orange juice. Add crumb mixture and toss to combine. Divide mixture among ramekins; dot with remaining butter., Unfold pastry; cut into 1/2-inch strips. Arrange over ramekins in a lattice pattern, trimming to fit. Gently press ends onto ramekin rims. Brush lattices with egg., Bake until filling is bubbly and pastry is golden brown, 25-30 minutes. Serve warm with ice cream.

INDIVIDUAL CHICKEN POT PIES

- Preheat your oven to 375 degrees F.
- In a large saucepan heat chicken broth and bouillon cube over medium heat until hot.
- In a Dutch oven, melt butter over medium heat. Add onions, carrots, celery, chives and garlic, and saute until tender. Season with salt and pepper. Add the flour and stir together until it becomes pasty and lump-free, about 2 minutes. Stir in the hot broth, heavy cream, sherry, chicken and frozen onions and peas. Bring to a boil then reduce to a simmer.
- With a ladle, fill 6ovenproof ramekins or bowls with the filling. Place on baking sheet.
- Sprinkle flour on countertop. Roll out dough an extra inch. Using a biscuit round or mold, cut out dough to cover the tops of your oven-proof bowls, with about 1/2-inch hangover, depending on their size. Crimp the dough over the edge of the ramekin. Brush with the egg wash and make 4 small slits on the top. Sprinkle with kosher salt and place on a baking sheet. Bake for 35 minutes. Remove from the oven and serve.

- Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
- Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
- Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
- Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.
- Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until crust is golden brown and filling is bubbly, 35 to 40 minutes longer. Allow to cool several hours before serving.

- Make Dough: Combine flour, sugar, and salt in food processor. Pulse to combine. Add butter and shortening; pulse 10 times or until butter resembles small pebbles. Add 6 tablespoons ice water and pulse 5 times until dough clumps. If dough hasn’t clumped, add remaining tablespoon water and pulse. Press dough into a 1-inch-thick disk, cover in plastic wrap, and refrigerate for at least 1 hour.
- Make Filling: Combine all ingredients in a large pot, stirring well to coat the pear pieces. Place over medium-high heat, stirring occasionally, until mixture begins to boil. Reduce heat to medium, stir occasionally, and cook until the liquid thickens into a thick syrup, 25 to 30 minutes. Remove the star anise and set Filling aside to cool.
- Line two baking sheets with parchment paper. Preheat oven to 375°F. On a well floured surface, roll Dough into a large 1/8-inch-thick circle. Use a 3 1/2-inch round cutter to cut out 24 circles, rerolling scraps as needed. Brush permitter of a circle of Dough with egg wash, scoop about 1 tablespoon Pear Filling into the center of the circle, fold one side of the circle to the other side. Press the edges of dough together and use the tines of a fork to crimp and seal the edge. Place on a prepared baking sheet and repeat with remaining Dough and Filling.
- Brush all prepared pies with egg wash and cover with a sprinkling of raw sugar. Transfer to the freezer for 10 minutes. Bake until the pastry is well browned, 20 to 25 minutes. Allow to cool slightly before serving.
