Individual Meat Loaves image

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

Grilled Personal Pizzas image

Steps:

  • Preheat a gas grill to medium, or light a charcoal grill and allow it to come to the white ash stage.
  • Open the pizza dough package. Unroll and divide into 4 equal parts. Using your hands shape each into a 6 to 8-inch circle and set on a grill safe baking sheet or pizza pan.
  • For the margarita pizza, arrange 1 oz of mozzarella cheese, 2 slices of tomatoes and half of the basil on one crust.
  • For the veggie pizza, arrange the yellow pepper slices, mushrooms, on a second crust.
  • For the breakfast pizza, arrange the prosciutto, on a third crust. Crack the egg in the middle of the crust and sprinkle with chopped parsley.
  • For the favorite cheese pizza, cover the fourth crust with tomato sauce and sprinkle it with the provolone.
  • Sprinkle the parmesan cheese evenly over all four personal pizzas then drizzle olive oil over them all.
  • Place the baking sheet on the grill, close the lid, and bake for about 10 to 15 minutes, or until the dough is nicely browned and the toppings are melted. Serve right away.

Meat Lovers' Pizza-Stuffed Shells image

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook to al dente according to the package instructions. Drain the pasta and rinse under cold water; set aside.
  • Meanwhile, combine the ricotta, Parmesan, parsley, egg, 1/2 cup of the mozzarella, a large pinch of salt and a few grinds of pepper in a large bowl. Fold to combine; set aside.
  • Preheat the oven to 450 degrees F.
  • Heat a 12-inch ovenproof skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until crisp and brown, about 3 minutes. Remove with a slotted spoon to a paper towel-lined plate and reserve.
  • Add the sausage to the skillet and cook, breaking it up with a wooden spoon into large chunks, until brown, about 5 minutes. Remove half the sausage from the skillet with a slotted spoon to a plate and reserve.
  • Add the ground beef and onion to the skillet and cook until the beef is brown and the onion is translucent, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute more. Add the marinara sauce and season with 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, reduce the heat to low and continue to simmer while you stuff the shells.
  • Divide the ricotta filling among the shells. Arrange the shells filling-side up in the skillet on top of the sauce. Top with the remaining mozzarella, the pepperoni and reserved sausage and bacon. Bake until the cheese is melted and the toppings are browned, 20 to 25 minutes. Sprinkle with Parmesan, oregano and red pepper flakes before serving.

Little Mozzarella-Stuffed Meatloaves image

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
  • Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
  • Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
  • Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine beef, tomatoes, mushrooms, eggs, bread crumbs, pepper, Italian seasoning, and garlic in a large bowl. Set aside a few teaspoons of olives for the topping; add remaining olives to the bowl. Knead with your hands until fully mixed.
  • Divide 1/2 of the beef mixture between two 8-1/2x4-1/2-inch metal or glass loaf pans, filling each halfway. Use your fingers to create a canoe shape lengthwise down the middle of each loaf.   • Split the English muffin in half, using the table knife. Toast both halves in the toaster.

  • Heat oven to 450°F. Grease rectangular baking dish,13x9x2 inches. Cook sausage and ground beef in 10-inch skillet over medium heat, stirring occasionally, until brown. Drain; set aside.
