Petes Garlic Oil Essential When Cooking Italian Recipes

PETE'S GARLIC OIL, ESSENTIAL WHEN COOKING ITALIAN

Can be used as the main ingredient in Linguine Aglio Et Olio, a great addition to pastas with pesto, and roasted vegetables dishes like Brussels sprouts with bacon, broccoli rabbi and sausages. Cloves can be coarsely mashed and placed in a puddle of the garlic infused oil and sprinkled with Tuscany seasoning for a tangy garlic dip for crusty bread with dinner. It can also be used as the base for Bagna Cauda, the famous anchovy vegetable dip and sauce from the Piedmont region of Italy. Early in a day of entertaining, I usually start by preparing a pot of Pete's Garlic Oil early .

Pete's Garlic Oil, Essential when Cooking Italian image

Steps:

  • • Remove rough end of garlic cloves and slice each in half lengthwise. Do not remove skin, they contribute favor and removed later. Place them in a narrow stainless steel butter melting pot (please see photo above). Add the rest of the ingredients. If the olive oil doesn't cover the garlic, add more.
  • • Place on medium heat until the olive oil begins to lightly sizzle. Reduce heat to a low simmer. It will take several hours before garlic richly tans and becomes soft and sweet. You can hasten the process with slightly higher heat but be careful not to burn the garlic.
  • • Remove the garlic skins from the pot when they are released from the cloves.
  • Substitute Pete's Garlic Oil and pan roasted garlic when ever plain olive oil and garlic is required.

5 fresh sage leaves
2 inches sprigs fresh rosemary
1/2 teaspoon kosher salt
1 pinch red pepper flakes

Steps:

  • In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low, and cook for 5 minutes, until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook.
  • Remove the garlic cloves from the oil and slice them. Place them in a bowl and pour the oil over them.

Spaghetti with Oil, Garlic and Spices image

Steps:

  • Bring a large pot of salted water to a boil for the spaghetti. Cook the pasta according to the directions on the box.
  • Meanwhile, in a large saute pan, heat the oil. Just before the smoking point, add the minced garlic, basil, fresh and dried oregano, parsley, black pepper, and red chile pepper flakes. Immediately turn off the heat.
  • Drain pasta well and add spaghetti to the sauce. Toss well to coat the spaghetti. Plate the pasta into warmed pasta bowls. Sprinkle with Parmesan.

Water, for boiling pasta
1 pound spaghetti
1/2 cup extra virgin olive oil
4 cloves garlic, minced
1 teaspoon dried basil
1 1/2 teaspoons fresh oregano
2 teaspoons dried oregano
2 tablespoons dried parsley
1 teaspoon freshly ground black pepper
1 teaspoon red chile pepper flakes
Parmesan, to taste

This is the kind of quick, simple dish Italians often throw together after an all-night party or when spirits are flagging and an infusion of food is called for. Other types of long, thin pasta, like vermicelli, linguine or taglierini, may be substituted. If anchovies are omitted, adjust the salt in the sauce.

Spaghetti With Garlic, Oil and Hot Red Peppers image

Steps:

  • Bring 5 to 6 quarts water to rolling boil.
  • Peel garlic cloves, removing green sprout at center, if necessary, and chop coarsely. In pan large enough to hold all the drained pasta, cook garlic in oil very gently over medium-low heat. Cook just until garlic softens and starts to turn golden. Do not brown.
  • Add at least 2 tablespoons salt to vigorously boiling water. Add spaghetti, stirring.
  • If using anchovies, add them to oil and garlic. Cook briefly, mashing anchovy pieces into oil with fork. Stir in chili pepper and half of the parsley, and carefully add a ladleful of the pasta cooking water. Let simmer, and reduce slightly while pasta finishes cooking.
  • Start testing pasta after it has cooked for 4 minutes. When it is still a little chewy in the center, drain and add it to pan with sauce. Turn heat up slightly, and cook, mixing pasta and sauce together well for 1 to 2 minutes, or until pasta is done to taste. Turn pasta into preheated serving bowl, sprinkle with remaining minced parsley, and serve immediately.
