PHILLY CREAM CHEESE BRUNCH QUICHE

We had this at a morning meeting, and it's quite tasty! Feel free to substitute or add ingredients (i.e., bacon, swiss cheese, spinach, etc ).

Philly Cream Cheese Brunch Quiche image

Steps:

  • On a lightly-floured surface, roll pastry to a 12" circle. Place in 10" pie plate.
  • Turn under edge and flute. Prick bottom and sides of pastry with fork and bake at 400 for 12 to 15 minutes or until pastry is lightly browned.
  • Combine cream cheese and milk in saucepan. Stir over low heat until smooth.
  • Gradually add cream cheese mixture to eggs, mixing until well blended.
  • Saute onions in butter.
  • Add onions and remaining ingredients to cream cheese mixture and mix well.
  • Pour into pastry shell and bake at 350 for 35 to 40 minutes or until set.
  • Garnish with ham slices and fresh dill, if desired.

1 (10 inch) pastry dough, for 10 inch pie
6 ounces cream cheese, cubed
1 cup milk
4 eggs, beaten
1/4 cup chopped onion
1 tablespoon butter
1 cup finely chopped ham
1/4 cup chopped pimiento
1/4 teaspoon dill weed
1 dash pepper

PHILLY CHEESESTEAK QUICHE

This is my own recipe that won First Place in a Quiche Bake-Off that we held in my department today. I used a blend of mild and extra sharp cheddar cheeses. But use any cheese that suits your concept of "Philly Cheesesteak." This recipe fills a 9-inch foil pie pan.

Philly Cheesesteak Quiche image

Steps:

  • 1. Prepare the unbaked pie shell. Preheat the oven to 375F. Preheat a 10-12" skillet on medium heat.
  • 2. Grease the skillet with oil/butter (your choice, but I prefer butter) and add the sliced onion and green pepper. Cook the onions and peppers until they are tender (not mushy) - about 10 minutes.
  • 3. While the skillet is busy, beat the eggs and milk together, and blend in the nutmeg, 1/2 tsp. salt and some ground black pepper.
  • 4. Add the deli roast beef, worchestshire sauce and garlic to the skillet and stir while continuing to cook another 3-5 minutes. (Taste the filling and check the seasoning!) Remove the filling from the skillet when finished and allow to cool for 5 minutes before adding to the custard mixture.
  • 5. Add to the custard mixture the meat/veggie filling and grated cheese. Mix well and pour into the pie shell.
  • 6. Bake the quiche for 45 minutes at 375F. Use a clean sharp knife to test for doneness (poke the center and see if it comes out clean). The center should not jiggle. (If not done - continue cooking another 5-10 minutes.)

BASIC CUSTARD
3 eggs (large-ish), beaten
1 1/2 c whole milk
1 pinch freshly grated nutmeg
freshly ground black pepper
1/2 tsp salt
FILLING - TO BE COOKED IN A 10-12" SKILLET
1/2 large onion, thinly sliced
1 green bell pepper, quartered, seeded & thinly sliced
4 oz deli roast beef, cut into thin strips
1 Tbsp worcestershire sauce
1 tsp minced garlic
oil or butter for cooking
salt & pepper to taste
REMAINING INGREDIENTS
1 unbaked pie shell
1 c grated cheddar cheese

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.
