PINEAPPLE CREAM ANGEL FOOD CAKE

Found this on another recipe site, just made a few changes to accomodate my family. The kids love this cake. I love that it has fewer calories and taste great! You could always top with blueberries and strawberries, or even raspberries. Hope you enjoy it.

Pineapple Cream Angel Food Cake image

Steps:

  • 1. Mix pineapple and dry pudding mix in medium bowl with whisk until well blended. Stir in Cool Whip.
  • 2. Cut cake horizontally into 3 layers.
  • 3. Stack cake layers on plate, filling layers and topping with pudding mixture.
  • 4. Refrigerate for at least 1 hour. Top with berries just befor serving.

1 can(s) 20oz crushed pineapple in juice, undrained
1 pkg 1.5oz fat free sugar free instant vanilla pudding
1 c cool whip free or cool whip lite
1 pkg 10oz angel food cake ~round~you can make or use store bought
10 fresh strawberrie

Sauteed Pineapple Crepe Filling image

Steps:

  • Peel pineapple; cut into quarters lengthwise. Cut out core; cut each quarter in half lengthwise. Cut each piece crosswise into 1/4-inch-thick slices; set aside.
  • Heat butter in a large skillet over medium heat. Add pineapple; toss to coat with butter. Sprinkle with brown sugar; toss to coat. Cook, stirring occasionally, until pineapple is lightly browned, about 8 minutes. Transfer to a bowl; keep warm until ready to serve.

1 pineapple
4 tablespoons unsalted butter
1/4 cup packed light-brown sugar

  • In the bowl of a blender, add crepe ingredients in the order they are listed: 1/2 cup warm water, 1 cup milk, 4 eggs, 4 Tbsp melted butter, 1 cup flour, 2 Tbsp sugar and a pinch of salt. Blend until well combined, scraping down the blender with spatula if needed.
  • In the bowl of a stand mixer fitted with whisk, beat butter and condensed milk on high speed 7 min. It should look whipped and lightened in color.
  • Place first crepe layer onto serving platter and spread about 3 Tbsp or 1 ice cream scoop of frosting between each crepe layer, totaling 15 layers of crepes and 15 layers of cream.
