AMAZING BREAKFAST PIZZA
I used to make this when I worked for a gas station/pizza place so I could sell it by the slice to the early morning rush. I would end up selling more for breakfast than lunch at times!

- This recipe is a lot quicker if you precook your Bacon and Sausage the night before and store them in your refrigerator as I do -- the prep time will be based on this.
- Preheat your oven to 400°F
- For the Pizza Dough, if you can find it frozen, uncooked, and preshaped. it's a huge time saver. If not, just prepare it as you would normally on a large pizza pan (I make the crust about 1/4 thick). Excluding the 1 1/2 of the outer crust, make little indentations with your fingertips in the dough. This helps the egg settle and cook more evenly.
- Beat the eggs with the milk, and pour over the center of the crust. Use your fingers, or a pastry brush to evenly disperse the egg.
- Evenly cover the egg with the strips of ham.
- Scatter the sausages, and if you want to have them, add the onion. Salt and pepper it lightly.
- Add a blanket of the Mozzarella cheese, then the Cheddar.
- Sprinkle the crumbled bacon.
- Put this wonderful pie in the oven on the center rack and check it after 15 minutes. It's hard for me to give an approximate cooking time as I used a ride through oven for 7 minutes at 475°F at my work. If it looks done, then it is. The egg layer is thin enough to cook in 10 minutes or so, so it's really just about the crust and how you like it.
- Once you've deemed it to be done, take it out of your oven and garnish it with some chopped chives. Slice, and enjoy! It's great on the go, and is wonderful hot or cold. I'm hoping this recipe will make your household as happy as it made my customers :).
BREAKFAST PIZZA
A crust made from dinner roll dough with sausage, hash browns and cheese on top.

- Preheat oven to 375 degrees F (190 degrees C).
- Brown breakfast sausage in a large skillet until no longer pink and the meat is crumbly, about 10 minutes. Drain excess grease and set sausage aside.
- Separate crescent roll dough into triangles and place into a 12-inch pizza pan with a rim, points toward the inside. Press the triangles together to join; pinch a 1 1/2-inch rim up the side of the pizza pan.
- Spoon cooked sausage into the bottom of the crust. Spread hash browns over the sausage and sprinkle with Cheddar cheese. Whisk eggs, milk, salt, and black pepper in a bowl until smooth and pour the egg mixture over the cheese layer. Sprinkle pizza evenly with Parmesan cheese.
- Bake in the preheated oven until eggs are set and crust is lightly browned, 25 to 30 minutes.

- Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. pan. Prick thoroughly with a fork; brush with 1 tablespoon oil. Bake until lightly browned, 7-8 minutes., Meanwhile, whisk together eggs and water. In a nonstick skillet, heat remaining oil over medium heat. EGG BREAKFAST PIZZA
This recipe will make two pizzas. I came up with it by accident by throwing a bunch of ingredients together. We make it on the weekends at the lake for breakfast/brunch. You can modify toppings. I usually make one sausage and one bacon. Each pizza will serve 3 to 4 people.

- Preheat oven to 400 degrees F (200 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
- Beat eggs, milk, salt and pepper. Scramble eggs until firm.
- Remove crusts from oven, turn right side up, spread 1/2 can of cream of celery soup on top of each crust. Spread 1/2 of egg mixture on each crust. Sprinkle bacon bits on one pizza and cooked sausage on the other. Cover each with onions and peppers. Top each pizza with 2 cups of cheese.
- Bake in preheated oven, for 25 to 30 minutes, until cheese is golden brown.

- Preheat oven to 425 degrees F.
- In an oven-safe skillet (I recommend cast-iron for a great, crispy crust), re-heat pizza for about 10 minutes or until cheese bubbles and the pizza is heated through.
- Set aside.
- Heat olive oil in skillet on medium.
- Fry the egg sunny side up or overeasy, just make sure the yolk is still runny (unless you don't like runny yolks, then whatever).
- Salt the egg to taste.
- Slide the egg on top of your pizza slice, and as you eat it the yolk will run all over the pizza and is just out of this world!

PIZZA FOR BREAKFAST!
Pizza for breakfast is one of those guilty pleasures adults are supposed to grow out of when we leave college and start being responsible for families. But with this easy-to-make quiche you can enjoy that beloved flavor responsibly, with vegetables even. ;) Freezes well for OAMC. Don't be put off by the long prep time. Most of it is draining the spinach and tomatoes.

- Grease 9x9 pan lightly and preheat oven to 350°F.
- Thaw frozen spinach and squeeze ALL the juice out of it.
- Drain the tomatoes and squeeze out as much juice as possible. (This is critical. Wet tomatoes will result in soggy eggs).
- Chop pepperoni, reserving 9 slices OR chop sausage and reserve 1/4 of the chopped meat.
- Mix flour with baking powder. Add melted butter and work in well.
- Add the 3/4 cup milk and mix to make a soft dough.
- Flour your fingers then pat crust into the pan in an even layer that extends about an inch up the side.
- Spread spinach, tomatoes, shallots, chopped meat, and sun-dried tomatoes in layers over the crust.
- Put all the egg mix ingredients into a bowl and beat together.
- Pour egg mix evenly over the veggie and meat layers.
- Top with shredded mozzarella, the reserved pepperoni slices or reserved chopped sausage, and the optional sliced mushrooms.
- Bake for 45 minutes or until eggs are set in the center and cheese is browned.
- Any leftovers are good cold or briefly reheated in the microwave.
- Note: Prep goes more smoothly on a sleepy, weekend morning if you drain the spinach and tomatoes and assemble all dry ingredients the night before. Then you need only mix and assemble before baking.
- Note: If your family is larger or if you do OAMC the recipe can be doubled and made in a 13x9 pan or a deep-dish pizza pan if you increase cooking time appropriately.
- FOR OAMC - Freeze in individually wrapped squares. Thaw 60-90 seconds on half-power. Heat 45-60 seconds on full power, turn, and repeat. Heat an additional 20-30 seconds if necessary.
- Note: This is a forgiving recipe. If you prefer broccoli over spinach or you'd like to add a little anchovy or some green pepper go ahead. I'm not sure about the ham and pineapple though - it would be hard to drain the pineapple well enough to not get the eggs soggy.
- Note: Yes, you can use fresh spinach and tomatoes. Deseed the tomatoes to remove the excess juice.
- Note: if you save the juice from the tomatoes and the spinach along with the remaining tomatoes from the can you have the start of a nice soup later on.
