THE BEST POT ROAST

The secret to a flavorful pot roast is browning the meat and onions before roasting, which adds a rich meaty flavor and caramelized sweetness. This step is what separates our recipe from many others that use a slow cooker. And also unlike a slow cooker recipe, our sauce is simmered to reduce a little which concentrates the flavors. What you'll end up with is a roast that's fall-apart tender with a velvety sauce and delicious vegetables.

Steps:

  • Sprinkle the roast with 3 tablespoons of the salt, rubbing into the grain and covering all sides. Wrap tightly in plastic wrap and refrigerate at least 3 hours and up to 3 days.
  • Arrange a rack in the lower third of the oven and preheat to 275 degrees F.
  • Heat 2 tablespoons of the oil in a large heavy pot or Dutch oven over high heat. Cook the meat, turning occasionally, until browned on all sides, 10 to 12 minutes. Transfer to a plate.
  • Reduce the heat to medium-high and heat the remaining 4 tablespoons oil in the pot. Cook the onions and the remaining 1 tablespoon salt, stirring occasionally, until browned but not completely cooked through, 6 to 8 minutes (it's ok if the onion wedges break apart). Add the garlic and tomato paste and cook, stirring occasionally, until the paste is brick red and the garlic is fragrant, about 1 minute. Add the wine and bay leaves and cook, stirring occasionally and scraping the bottom of the pot, until slightly reduced and you can no longer smell the alcohol, about 4 minutes. Add the flour, stir to coat the onions and cook for 1 minute. Stir in the broth and pepper and bring to a boil.
  • Nestle the meat and any accumulated juices into the onions. Arrange the carrots, celery and potatoes around the roast, pushing them into the onions and surrounding the beef. Cover and transfer to the oven. Cook until the meat is very tender but still holds its shape and is not falling apart, 3 to 3 1/2 hours. Let rest, covered, at least 45 minutes before serving.
  • Transfer the roast to a cutting board and remove the twine with scissors, if necessary. Slice against the grain.
  • Divide the vegetables among plates and arrange the sliced beef over top. Spoon sauce over the top garnish with parsley and chives.

Steps:

  • 1. Grind the ham in a food processor until it's coarsely chopped--some larger pieces are ok. Set aside 1 cup of the ground ham and stir the olives and reciaito into the remaining 2 cups. Take a look at the rump roast. You will be able to see the "grain" of the meat--fibers that run in one direction. You will slice the finished pot roast against the grain, so you want to make pockets of stuffing more or less diagonal to the grain, so some of the stuffing shows in each slice. Make deep cuts about 1 inch apart and diagonally against the grain with a boning knife. To make the holes large enough to fill easily, wiggle a finger around in each cut. Fill each hole to about 1/2 inch from the opening. Don't overstuff or when the meat shrinks it will squeeze out all the stuffing. If a little stuffing does get squeezed out during cooking that's fine; it flavors the sauce. Season the outside of the roast generously with salt and pepper. 2. Heat the achiote oil in a Dutch oven large enough to hold the meat and potatoes comfortably--a 5-quart Dutch oven works well--over medium heat. Add the roast and cook, turning it occasionally, until well-browned on all sides, about 10 minutes. (A sturdy pair of tongs comes in handy here.) The achiote oil will make the meat brown quickly--so keep an eye on it, lowering the heat if the oil begins to discolor. Lift the beef out to a plate and carefully pour or spoon off all but about a tablespoon of the fat from the pan. Add the red peppers and the remaining ham and stir until the little bits that are stuck to the bottom of the pot are loosened and the peppers start to soften, about 4 minutes. Stir in the tomato paste and cook, stirring so it doesn't stick and burn, for a minute or two. Stir in the vinegar, bring it to a boil and cook until the liquid is syrupy, about 4 minutes. 3. Return the meat to the Dutch oven, stir in the liquid of your choice, the tomato sauce, and the bay leaves. Bring to a boil and boil for 15 minutes, skimming the foam and fat from the surface. Adjust the heat so the liquid is at a happy simmer. Cover and cook until the meat is tender, about 2 hours. 4. Remove the meat to a carving board and cover it loosely with aluminum foil to keep it warm while cooking the potatoes. 5. Bring the sauce to a boil. Let it boil while you peel and cut the potatoes into ½-inch slices. Add the potatoes and cook over low heat until tender, about 20 minutes. 6. Carve the meat against the grain into slices about ¼-inch thick--thick enough so the filling stays in place. Transfer the potatoes to a platter with a slotted spoon. Lay the slices of beef over the potatoes and spoon enough of the sauce over the meat to moisten it. Spoon the remaining sauce into a boat and pass it separately. Sprinkle the chopped parsley over the top.

to 8 have a lot of wiggle room when it comes to the ham. You can use leftover ham from a roast, a piece of a packaged ham steak or even sliced ham from the deli. Makes 8 servings, with leftovers

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Sprinkle the beef evenly with the salt, pepper and granulated garlic. Truss the roast with butcher's twine into a uniform shape. This will help the roast keep a uniform shape while it braises and make for more even slices.
  • Place the porcini mushrooms into a bowl and cover with 2 cups simmering water. Set aside and allow the mushrooms to steep and absorb the water for 20 minutes.
  • In a large Dutch oven over high heat, add the butter and oil. When the butter foams, add the trussed beef and sear for 5 to 6 minutes per side, including the ends. Remove to a plate. In the same pot over medium high-heat, add the onions and shallots and cook until just starting to caramelize, about 15 minutes, stirring occasionally. Add the garlic, celery and carrots and cook until the celery just begins to soften, about 5 minutes longer.
  • Stir in the tomato paste and combine. Deglaze with the beef stock and wine, scraping up any browned bits from the bottom. Bring to a simmer and cook for 5 minutes to burn off the alcohol from the wine. Add the savory and thyme. Strain the porcini mushrooms and add to the pot along with 1 cup of the porcini liquid. Add the beef and any juices from the beef back to the pot on top of the vegetables. Cover the pan with a tight fitting lid and place in the oven. Cook for 45 minutes, baste with pan juices, replace the cover and cook for an additional 90 minutes.
  • Remove the beef and tent lightly with aluminum foil. Discard the thyme bundle. With an immersion blender, blend the vegetables until smooth. Adjust the seasoning with additional salt and pepper, to taste.
  • Remove the trussing string, slice across the grain into 2-inch pieces and serve immediately with the vegetable gravy.

3 1/2 pounds beef chuck, trimmed of excess fat
2 teaspoons kosher salt, plus more for seasoning
2 teaspoons fresh cracked black pepper, plus more for seasoning
1 teaspoon granulated garlic
1/2 ounce dried porcini mushrooms
2 tablespoons butter
1 tablespoon grapeseed oil or olive oil
6 cups sliced onions, 1/4-inch thick
1/2 cup sliced shallots, 1/4-inch thick
1/4 cup peeled garlic cloves, smashed
1 1/2 cups sliced celery, 1-inch pieces
1 1/2 cups sliced carrots, 1-inch coins
1 1/2 tablespoons tomato paste
1 1/2 cups beef stock
2/3 cup red wine, zinfandel preferred
2 tablespoons dried savory
6 sprigs fresh thyme (see Cook's Note)
