PRUNES POACHED IN RED WINE
I know what you're thinking: stewed prunes? But this is not that. This is prunes poached in wine, a classic French dessert that you still see on dessert trolleys in bistros all over Paris. Some recipes for it have you soak the prunes in water for up to 12 hours to plump them before poaching, others have you soak them in black tea. Here you let them steep for only five minutes in just-boiled water, which means you don't lose the essence of the prunes to the liquid. Then you poach them in sweetened wine spiced up with a cinnamon stick and vanilla bean, and let them steep again for two hours. The prunes retain their intense flavor, and the wine is both spicy and just sweet enough. Serve the prunes cold or warm; you can also keep them in wine in the refrigerator for a week or two, dipping into them to spoon over ice cream or into yogurt, or just enjoying them on their own.

- Place prunes in a bowl and cover with boiling water. Let sit for 5 minutes, then drain.
- Meanwhile, combine wine and honey in a medium saucepan. Using the tip of a paring knife, scrape seeds from the vanilla bean halves into wine and add pods. Add cinnamon stick and bring to a boil. Reduce heat, cover and simmer 5 minutes.
- Add prunes to wine and bring back to a simmer. Cover and simmer 10 minutes. Remove from heat and add zest. Remove cinnamon stick.
- Cover and let sit for at least 2 hours before serving. Serve warm, room temperature or chilled. Prunes will keep for 1 to 2 weeks in the refrigerator.

- Cut the plums in half, cutting around the sides of the pits. You will remove the pits after the plums have simmered.
- Combine the plums with the honey, vanilla extract, cinnamon stick, nutmeg, orange zest, rose geranium, wine and 1/2 cup of the orange juice in a heavy, medium saucepan. Bring to a boil, reduce the heat, cover and simmer for 30 minutes. Remove from the heat. Remove the cinnamon stick, rose geranium sprig and orange zest.
- Allow to cool, then remove the pits from the plums and transfer to a food mill fitted with the medium blade. Press the plums through the food mill into a bowl. Whisk the mixture to amalgamate. Cover and chill for at least an hour and for up to a day.
- Just before serving, whisk in the remaining orange juice. Ladle into bowls. Garnish with thin slices of lighter-fleshed plums and serve.

BROWN SUGAR MERINGUES WITH RED WINE PLUMS

- Heat oven to 140C/fan 120C/gas 1. Line a large baking sheet with baking paper. Blend together the cornflour, vinegar and vanilla to make a paste. Whisk the egg whites until they are stiff and glossy, then whisk in the sugar in three goes, adding a little paste and whisking back to firm peaks each time. Keep whisking until the meringue is thick and heavy.
- Spoon six meringue heaps onto the baking sheet, spaced apart, then shape into nests by making dips in the centres with the back of a spoon. Bake for 1 hr, then turn off the oven and leave to cool in the oven for a further hr.
- Put the wine, sugar and cinnamon stick in a medium pan and bring to the boil, stirring to dissolve the sugar. Add the plums, then poach gently for 4-5 mins until just tender. Remove the plums with a slotted spoon, peel off the skins, then set aside.
- Increase the heat under the sauce and boil hard until reduced to a thick syrup, about 5 mins. Pour into a jug; leave to cool.
- To serve, set the meringue nests on serving plates and spoon the crème fraîche into the centres. Place three plum halves on each and drizzle over the sauce. Serve without delay.

- Heat a sauté pan over medium heat. Add butter and let it melt, slightly brown. Whisk in brown sugar and add plums, cut side down. Let bubble and cook for 4-6 minutes, until slightly softened (you can move the plums around a bit if needed to prevent sticking).
- Remove the plums and set aside on a plate. Deglaze the pan with the red wine, whisking together to combine. Let slowly simmer for 2 minutes until reduced slightly. Remove from heat. The sauce will thicken slightly the longer it rests.
- Add plums to individual bowls, and top with desired amount of ice cream (I like at least 2 scoops per bowl!). Pour the red wine sauce on top of each bowl, distributing evenly. Garnish with crushed shortbread cookies, if desired.

- Place the cloves and peppercorns in the center of a 4-inch-square piece of cheesecloth and tie the cloth in a bundle with a piece of kitchen twine. Combine the bundle, the cinnamon stick, red wine and sugar in a medium saucepan and bring to a simmer. Cook until the sugar is completely dissolved, about 2 to 3 minutes.
- Add the plums and cook, keeping the wine at a bare simmer, until the plums are just tender. Depending on the ripeness of the plums and the size of the pieces, this will take between 5 and 10 minutes.
- Drain the plums, discarding the cheesecloth bundle and the cinnamon stick, and transferring the syrup into a smaller saucepan. Return the syrup to the heat, and cook at a bare simmer until it has reduced by half, about 15 minutes. Remove from the heat and return the plums to the syrup. Set aside until ready to serve.
