Steps:

  • Generously season fish with salt and pepper. Transfer to a straight-sided skillet, saucepan, or shallow pot slightly larger than fish, skin-side down. Scatter leek, celery, bay leaf, lemon rounds, and peppercorns around fish. Add wine and enough water to submerge fish by 1 inch. Attach a deep-fry thermometer to skillet.
  • Heat over medium until liquid reaches 150 degrees. Reduce heat to low to maintain temperature (remove skillet from heat briefly if it climbs above 150 degrees). Cook until fish turns opaque and is just cooked through, 6 to 10 minutes, depending on thickness. With a fish spatula, transfer to a plate, skin-side up. Let cool slightly; remove skin. Serve warm, room temperature, or chilled, with lemon wedges.

1 1/4 pounds skin-on salmon fillet, preferably wild Alaskan
Kosher salt and freshly ground pepper
1 small leek, trimmed, halved lengthwise, cut into 3-inch pieces, and well washed
1 celery stalk, cut into 3-inch pieces
1 fresh bay leaf
1/2 lemon, thinly sliced into rounds, plus wedges for serving
1 tablespoon whole black peppercorns
1/2 cup dry white wine, such as Sauvignon Blanc

Cover and refrigerate at least 2 hours but no longer than 24 hours. Discard liquid in skillet.
  • In small bowl, mix lemon juice, honey, mustard and oil until well blended. In another small bowl, mix chopped parsley, red onion, capers and lemon peel.
  • To serve, carefully remove skin from salmon; place salmon on serving plate. Sprinkle with 1/4 teaspoon salt. Drizzle honey-mustard sauce over salmon; sprinkle with parsley mixture. Serve with bread slices.

  • Place the fish skin side down in a deep skillet with a lid. Add water to just cover the fish. Add the salt.
  • Cover the pot and bring to a rapid simmer over high heat. As soon as the water is bubbling, remove the pot from the heat (or turn off the heat if you have a gas stove), and let the salmon sit for 10 minutes. Lift the lid and check to see that it is cooked to your liking; you can add another few minutes if more well done salmon is desired.
  • Remove the salmon from the pan with a slotted fish spatula, or a regular spatula is just fine. Remove the skin carefully if you plan to serve it warm, if not, you can remove the skin when the salmon has cooled to your serving temperature.
  • Place on a plate and either serve warm, or cool to room temperature. Or, when the salmon has cooled a bit, transfer it to an airtight container and refrigerate until completely cooled, then serve chilled. You can keep the poached salmon the fridge for up to 2 days before serving.
