PALACINKY

This great Slovak dish makes a good breakfast dish and is filling. Sprinkle with powdered sugar and/or your favorite topping or syrup and enjoy!

Palacinky image

Steps:

  • Beat milk, eggs, flour, sugar, and vanilla extract together in a large mixing bowl until the batter is thin and without lumps.
  • Heat a large skillet over medium heat and grease with 1 tablespoon canola oil. Ladle enough batter into the skillet to cover the cooking surface in a thin layer. Cook until bubbles appear on the surface, 2 to 3 minutes. Flip with a large turner and cook until browned on the other side, about 2 minutes more.
  • Remove cooked palacinky to a plate and roll into a log.

I got this recipe a long time ago and used to use it often. These can be served with fruit, maple syrup, powdered sugar, chocolate, etc. This is a fun recipe to get creative with.

French Pancakes (Crepes) image

Steps:

  • Mix together flour, powdered sugar, and salt.
  • Add milk and eggs.
  • Mix well until smooth.
  • Heat oil in frying pan on medium/high until pan is hot (you may not need oil if you have a nonstick pan).
  • Pour about 1/4 of the mixture in the pan and turn off heat.
  • Cook until dry and then flip. Remove immediately and place on plate or serving dish.
  • Repeat.

1/2 cup flour
3 tablespoons powdered sugar
1/4 teaspoon salt
1/2 cup milk (I use soy milk)
1 egg
vegetable oil

PALACINKY (SLOVAK CREPES SUZETTES)

My mother would always make these for us on the weekends. I still make them and love them just as much. We always fill them with either jelly or jam. I made these once for a breakfast get together and also used flavored fruit syrup and whipped cream to go over the rolled palacinki.

Palacinky (Slovak Crepes Suzettes) image

Steps:

  • Combine sifted flour, sugar, and salt in a mixing bowl.
  • Add the whole eggs, one at a time.
  • Beat well after each addition.
  • Add enough milk to make a thin batter.
  • Beat until smooth.
  • Stir in melted butter.
  • Pour about 1/2 cup batter into a heated, lightly greased skillet.
  • Swirl around skillet to coat bottom of pan.
  • When brown on the underside, turn and brown on other side.
  • Spread with jam, jelly, preserve or marmalade.
  • Roll.
  • Serve.
  • Can sprinkle with powdered sugar, fruit syrups or whipped cream, if desired.

My husband makes this all the time. We love eating with just butter and pure maple syrup. Since it's a crepe, you can add fruit or whatever toppings you like. I think my favorite part of eating this, is its' texture.

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 13x9"pan.
  • Cream together butter and brown sugar.
  • Beat in eggs until well mixed, and then beat in the maple syrup until blended.
  • Beat in flour and baking powder.
  • Mix in ground walnuts. ( Note: I don't like to grind the walnuts to powder - leave a few little nuggets for texture.).
  • Spread batter evenly in pan.
  • Bake at 350 degrees for 30 min., or until a wooden pick inserted in center comes out clean.
  • Cool and cut into squares. (How many depends on the size you cut them).

Sweet Corn Pancakes image

Steps:

  • combine 1 cup milk, butter, and corn in small saucepan over medium heat. When the butter has melted, remove the pan from the heat and let the mixture cool to lukewarm.
  • Sift dry ingredients onto waxed paper.
  • In large bowl, beat the eggs until they are well mixed. Add the milk mixture, then gently stir the flour mixture, mixing until it is moistened and thoroughly combined.
  • Add remaining milk if the batter is thicker than cake batter.
  • Brush large heavy skillet or griddle with the oil, and place it over medium-high heat.
  • When a drop of water sizzles in the pan, pour the batter, 1/4 cup for each pancake into the skillet.
  • Cook the cakes until bubbles cover the surface and begin to burst, 2 to 3 minutes.
  • Flip the cakes and cook for about 30 seconds on the other side.
