MY SWEET AND SOUR CHICKEN (POLLO AL AGRIDULCE)
This is my version of Sweet and Sour Chicken. I love Chinese food I decided to make this dish one day. I love to put a lot of fresh crispy vegetables in my chicken dish. I serve along with fluffy white rice. Enjoy

Steps:
- 1. Cut chicken breasts in strips then cut strips in half. Put into a bowl and pour soy sauce over chicken mix well so all the chicken gets coated with soy sauce. Next coat chicken with the corn starch you may need a little more then half a cup. Set aside
- 2. Next heat up a wok or a large skillet, make sure it is very hot. add about 1/4 cup oil and begin to fry your chicken pieces in batches. Fry until they are golden on all sides. Do all of your chicken like this. Remove to a seperate pan platter
- 3. In your wok or fry pan add a little oil and begin stir frying your veggies, first the carrots,then remove, add a little oil then the peppers, then remove, add a little more oil then the onions, then remove. add a little more oil and stir fry the snow peas and baby corn. Making sure to fry each veggie about two minutes each excet the carrots. I stir fry them a total of 3 minutes. You want your veggies crispy fried not limp. Each time removing to a seperate pan with the other veggies; until you have all the vegetables stir fried and all in a pan together. Next add a little more oil and fry your garlic until fragarant and add your pinapple and lightly stir fry about one minute, now put all the vegetables back into the wok together or fry pan and give a little stir fry again mixing all the vegetables together. At this time I add a sprinkle of garlic powder because we love garlic and just a little salt. Fry one about one minute more. remove all the vegetables to a seperate pan.
- 4. Sweet & Sour sauce, in a sauce pan or your wok pour the reserved pinapple juice and mandarin juice, add the sugar, vinegar, lemon juice and four dashes of red food coloring with a wisk mix everything until the sugar has melted. Mix your corn starch with the 1/4 cup cold water and make a slurry, por into the pinapple juice and wisk until nice and thick. I like to add a little soy sauce to this sweet and sour sauce but that is optional.
- 5. Now mix your fried chicken pieces with the vegetables and pour the sweet and sour sauce over everything mix well season with a little salt and serve with white rice. Enjoy.

Steps:
- Spray a 5 quart slow cooker with vegetable oil, and arrange chicken pieces in bottom of cooker.
- Combine chili sauce, brown sugar, dry onion soup mix, cayenne pepper, barbecue sauce, peanut oil, and 1/4 cup of water in a large bowl, and spoon over chicken.
- Cover and cook on low for 6-7 hours.
- Serve over hot, cooked rice.

This is my favorite dish from Bar Italia in St. Louis. I have been looking for this recipe forever and finally found it in a local newspaper.

Steps:
- Mix cloves, zest, 1/2 cup vinegar, mint, 1/4 cup oil, salt, pepper in a bowl.
- Add chicken to bowl and marinate in refrigerator 3 hours or overnight.
- Drain chicken and discard marinade Heat a large skillet over medium-high heat and add remaining oil and butter.
- When butter melts, add onion, peppers, and mushrooms.
- Saute until vegetables start to brown (about 4 min).
- Using tongs or a slotted spoon, transfer vegetables to a bowl; keep warm.
- Add chicken to skillet, with what was the skin side down; sear lightly.
- Turn chicken, add raisins and pine nuts, and cook 1-2 minutes, until pine nuts begin to brown.
- Add remaining 6 Tbsp of vinegar and vermouth; bring to a simmer.
- Season lightly with salt, then reduce heat to medium.
- Cook until chicken is just done and sauce is reduced to the consistency of a light syrup.
- If sauce is thick when chicken is done, add small ladlefuls of chicken stock.
- If the sauce is too thin when the chicken is done, remove chicken and continue to reduce sauce.
- When the sauce is the correct consistency, stir in vegetables and add salt if needed.
- Turn chicken pieces over to coat with sauce, then arrange on plate and spoon vegetables and sauce over chicken.

CHICKEN IN GARLIC SAUCE - POLLO AL AJILLO
Steps:
- Wash the chicken thighs and pat them dry with paper towels. Season the chicken generously with salt and pepper. Heat the oil in a large heavy skillet over medium-high heat. Add as many of the chicken thighs, skin side down, as will fit without touching.
- Cook until the skin is golden brown, about 10 minutes. Flip the chicken pieces and cook until the other side is golden brown, about 5 minutes more.
- Remove the pan from the heat and spoon off all but about 2 tablespoons of the fat, leaving all the lovely brown bits behind. Return the pan to low heat, stir in the garlic and thyme and cook until the garlic starts to turn golden, about 1 to 2 minutes. Pour in the sherry, increase the heat to medium and bring to a boil. Let it boil a minute or 2, then return the chicken to the pan skin side up. Reduce the heat to low, pour in the chicken stock and bring to a simmer. Cover the pan tightly and cook 20 minutes. Flip the chicken pieces (or rotate them top to bottom if using a smaller pan) and cook until the chicken is very tender, about 20 minutes. Serve hot.
- Note: If you like a mix of white and dark meat, substitute a 4-pound chicken cut into 10 pieces. Let the thighs, drumsticks, and wings cook in the sauce for 15 minutes before adding the browned breast pieces. If you'd like to use all white meat, cut the breasts in half crosswise, brown them as described above, but let the sauce cook down 10 to 15 minutes before adding the chicken breasts.
POLLO DIABLO (GARLICKY, SPICY, DEEP-FRIED CHICKEN)
Steps:
- In a Dutch oven or deep-fryer heat oil to 375 degrees F.
- In a medium bowl, beat the egg whites with a handheld mixer until frothy. Place the chicken pieces into the egg whites, mixing until each piece is covered. Sprinkle with a pinch each of garlic salt and freshly ground black pepper and stir to distribute.
- Dredge the chicken pieces in cornstarch, draining most of the egg white from chicken by picking up a handful and allowing the egg white to drain while moving to the cornstarch. Cover the pieces completely by turning in corn starch.
- Pick up the chicken in handfuls and transfer from hand to hand to shake off most of the starch. If using a deep-fryer place the pieces into a fry basket. Lower into hot fry oil and shake basket after 10 to 15 seconds to make sure the pieces separate as they cook. Fry until the pieces float on top of the oil and are light brown, approximately 4 to 5 minutes. The chicken should appear somewhat dry, not oily, when the basket is lifted. If frying in a Dutch oven place pieces of chicken in hot oil and fry until light brown, about 5 to 7 minutes.
- For the garlic mixture:
- In a small bowl, add all the garlic mixture ingredients and toss to thoroughly combine.
- Place 1 tablespoon of hot chili oil and 1 teaspoon of sesame oil into a hot wok or saute pan over medium to high heat. Immediately put 4 tablespoons of the garlic mixture and 1/3 cup chopped green onions into the oil, stirring with a spoon to lightly cook the garlic mixture, being careful not to brown. Add approximately 2 cups of the fried chicken and toss to cover with the sauce. Finish them with a pinch of garlic salt. Toss once more and serve. Repeat with the remaining chicken.
SWEET & SPICY CHICKEN
This recipes comes from me trying to "fix" another recipe on the site but it ended up being a whole new recipe. I think it turned out very well, and It's something we really enjoy. Make it as sweet or spicy as you like by messing with the amounts of brown sugar (not the molasses!) and chili flakes. Enjoy! This recipe includes sauce for rice but be careful, if you cook it too long the chicken will soak up the sauce fast, if your looking for more of a sticky glaze, cook it a little longer and leave the lid off during most of the cooking. I have only made it sticky without the vegetables added, so if your worried about overcooking, wait to add or cook them separately. I would also suggest chopping into pieces when raw and pan frying the chicken to help seal it some so it doesn't break down as much when cooking. I would be wary reducing the amount of water to reduce cooking time, as it changes the flavor, and not for the better IMHO.

- Place all sauce ingredients in a large chefs pan or anything large with a lid.
- Cook on medium heat, stirring constantly, until slightly bubbly and combined.
- Add chicken and vegetables, if desired, Stir to coat.
- Cook on medium/high heat, covered, for 20-30 minutes (stirring every 10 minutes, more if its a pan that sticks) or until desired thickness is achieved and chicken (and veggies) are heated through.
- I like it served over rice.
EASY SWEET AND SPICY CHICKEN FEET

Preparation is really quick and simple, but you just have to wait a bit for the chicken feet to soften up.

- Add the chicken feet.

SWEET AND SOUR CHICKEN: POLLO IN AGRODOLCE
Steps:
- Remove all the skin and trim the fat from the chicken. Cut the chicken into 8 small pieces, using both the breast and the thighs, season with salt and pepper. In a Dutch oven, heat 1 tablespoon of the oil over medium-high heat. When the oil starts to shimmer, add the chicken pieces and cook until golden brown, about 10 minutes on each side. Using a slotted spoon, remove the chicken pieces from the pan and set them aside. Add the onions and celery and let cook, stirring constantly, until soft and slightly golden, about 5 minutes. Return the chicken pieces to the pot. Add the currants, sugar, vinegar, olives, capers and half the olives. Season, to taste, with salt and pepper. Turn the heat to high and cook, turning the chicken constantly, until the vinegar evaporates, about 3 to 5 minutes. Turn the heat to medium-low, cover the saucepan and allow the chicken to cook through, about 20 to 25 minutes. Serve family style, garnished with the remaining almonds, fennel fronds, juice from orange wedges and pepperoncini.
