BAKED ZITI
For an Italian classic, try this Baked Ziti recipe from Food Network Kitchen. Tossed in a zesty tomato sauce and oozing with mozzarella, it couldn't be easier.

- Preheat the oven to 400 degrees F.
- Bring a large pot of water to a boil, salt generously and boil the pasta until al dente (tender but still slightly firm). Drain.
- Toss the cooked pasta with the quick tomato sauce, cubed mozzarella, half the Parmesan, all of the black pepper and crushed red pepper in a large bowl. Transfer the pasta to the prepared baking dish. Cover the top of the pasta with the sliced mozzarella and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.
- Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
- Remove and discard the herb sprigs. Stir in 2 teaspoons salt and season with pepper. Use now or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

- Cook pasta as directed on package, decreasing cooking time by 4 min.; drain.
- Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add onions and garlic; cook and stir until onions are tender. Stir in pasta, pasta sauce, ricotta cheese and 1-1/2 cups of the mozzarella cheese; cover. Reduce heat to medium-low; simmer 10 min., stirring occasionally.
- Sprinkle with remaining mozzarella cheese. Remove from heat; cover. Let stand 5 min. or until cheese is melted.

- Preheat oven to 425°F. Heat oil in a large oven-proof skillet over medium-high. Add sausage and cook, breaking up with the back of a spoon, until browned in places and cooked through, about 8 minutes.
- Stir in marinara sauce and 1 cup water. Season with salt and pepper; simmer 10 minutes.
- Meanwhile, cook 12 ounces ziti or rigatoni in a pot of salted boiling water until al dente, about 2 minutes less than package instructions. Reserve 1/2 cup pasta water; drain. Add pasta, reserved pasta water, basil, and 3/4 cup chopped mozzarella to skillet; toss to combine. Season to taste.
- In a bowl, whisk together ricotta and heavy cream; season. Spoon mixture evenly over top of pasta. Sprinkle with remaining 3/4 cup chopped mozzarella and Parmigiano. Transfer skillet to oven and bake until ziti is browned and bubbly and edges begin to crisp, about 20 minutes. Let cool 15 minutes before serving.

- Preheat the oven to 450° and bring a large pot of salted water to a boil. Add the ziti to the pot and boil until just al dente. Drain and return the ziti to the pot.
- Meanwhile, in a large, deep skillet, heat the olive oil. Add the onion and garlic, cover and cook until just softened, about 2 minutes. Add the ground sirloin, crushed red pepper and paprika and season with salt. Cook over high heat, stirring to break up the meat with a spoon, until the meat is no longer pink, about 3 minutes. Add the marinara sauce and bring to a boil. Cover partially and cook over moderate heat for 5 minutes.
- Add the sauce to the ziti in the pot and stir to coat it thoroughly. Add the ricotta in large dollops and stir gently, leaving it in large clumps. Pour half of the ziti into a 9-by-13-inch baking dish and top with half of the mozzarella and Parmigiano. Repeat with the remaining ziti and cheeses.
- Bake the ziti on the top rack of the oven for about 15 minutes, until it is bubbling and browned. Let the ziti rest for 10 minutes before serving.
