SPICY CANNED TUNA FISH CAKES
A simple and yummy recipe to use up the canned tuna you have in your pantry along with other simple ingredients. Serve with Sriracha-mayo, and freshly cut limes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine tuna, scallions, bread crumbs, egg, mustard, garlic powder, Sriracha, salt, and pepper in a bowl. Mix until the mixture sticks together. Divide into 6 equal portions and shape into patties.
- Heat olive oil in a skillet over medium heat. Pan-fry the patties until deeply browned and crispy, about 3 minutes on each side. Transfer to a small baking tray.
- Bake in the preheated oven until the center of the fish cakes are firm, 5 to 7 minutes.

Steps:
- Place the potato into a small pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash the potato with a potato masher or fork in a large bowl.
- Mix the tuna, egg, onion, Dijon mustard, bread crumbs, garlic powder, Italian seasoning, cayenne pepper, salt, and pepper into the mashed potato until well-blended. Divide the tuna mixture into 8 equal portions and shape into patties.
- Heat the olive oil in a skillet over medium heat. Pan fry the tuna patties until browned and crisp, about 3 minutes on each side.

- In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
- Divide mixture into eight portions; shape into 2-inch balls.
- Roll balls in remaining bread crumbs.
- Flatten to 1/2 inch thickness.
- In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.

Steps:
- Preheat oven to 350°F.
- Grease a 13-by-9-inch baking pan and set aside.
- In a large mixing bowl, using a wooden spoon (do not use a mixer), combine oil and sugar until blended.
- Add eggs, one at a time, mixing well after each addition, and vanilla. Gradually add dry ingredients, stirring until well blended.
- Add shredded carrots, chopped nuts, pineapple and coconut and mix just until combined.
- Bake for 50 minutes or until top of cake springs back when lightly touched.
- After cake has cooled, top with cream cheese frosting or serve plain.
- Cream Cheese Frosting:.
- Cream together the cream cheese and butter.
- Add confectioners' sugar, milk, vanilla and most of the toasted coconut. Let cake cool completely and spread frosting on top. Decorate top with toasted coconut, if desired. Variation: Substituting 1 teaspoon of lemon zest for the vanilla and 1/2 teaspoon of fresh lemon juice for the milk will produce a nice lemony frosting.
POLYNESIAN TUNA CAKES
I got this off a cultural website on Tahiti. I haven't made it yet, but it sounds delicious. If you don't have papaya, I read several ways to substitute. One was with a mango, the other was using carrots and radishes. Cooking with ginger, I'd use the mango.

Steps:
- GINGER SAUCE preparation.
- In a small bowl, whisk together the yogart, lime juice, ginger, mustard, oil, and cumin. Set aside.
- PAPAYA SALSA preparation.
- In a small bowl, mix the papaya, sweet red pepper, chopped cilantro, lime juice, honey, and ground red pepper. Set aside.
- TUNA CAKES preparation.
- In a large bowl, combine egg substitute, tuna, scallions, 2/3 of bread crumbs, and 1/4 cup of the ginger sauce and mix well.
- Shape into four 1/2 inch thick patties.
- Coat with remaining 1/3 cup bread crumbs.
- Heat oil in large non-stick fry pan over medium heat.
- Add tuna patties and saute for 3 minutes per side, or until golden brown.
- Transfer to individual plates.
- Drizzle with remaining ginger sauce.
- Serve with the salsa and garnish with the cilantro.
