- To make the filling: Combine the cabbage and salt in a bowl and toss lightly; let rest for 30 minutes. Squeeze the water out of the cabbage and place it in a large bowl. Add the remaining ingredients, stir until well mixed, and drain off any excess liquid. To wrap the dumplings: Keep the round wrappers covered in plastic while you work, so they don't dry out. Have a small bowl of water handy. Holding one wrapper in your palm, place about 2 teaspoons of filling in the center. Dip your finger in the water and trace a wet arc along the edge of the wrapper. Fold the wrapper in half over the filling, fitting the dry edge to the wet, and seal with your fingertips. You now have a dumpling in the shape of a half-circle. Dip your finger in the water again and dampen the edge of the half-circle. Make a series of 6 or 7 small pleats in the edge, pinching them together with your fingertips. If freezing dumplings, do it now, before cooking. To fry the dumplings: Heat 1 tablespoon of oil in a heavy skillet over medium heat until shimmering but not smoking. Add one layer of dumplings, making sure the edges don't touch. When the first side is golden-brown, flip and brown the other side. Add 1/3 cup of water, cover and steam for 2 minutes. When the wrappers are just translucent, uncover, raise the heat. Remember to boil off all the remaining water: Soggy dumplings are nobody's friend. And a good spatula is a big help if the potstickers are living up to their name. It's also possible to boil or steam dumplings. Serve with red rice vinegar, soy sauce and sesame oil, minced garlic and rice vinegar, chili sauce or black vinegar dipping sauce . Black vinegar dipping sauce In a small bowl combine the ginger and scallions. Add the sugar, vinegars and sesame oil. Crush the mixture lightly with a fork or chopsticks to help release the flavors. Let it rest for at least 5-10 minutes. Add the soy sauce gradually to taste. Less soy sauce makes for a thick, pungent sauce; more makes for a milder dressing.
PORK-AND-CHIVE DUMPLINGS
This recipe for pork-and-chive dumplings comes from the chef Helen You, who learned to make dumplings from her mother in Tianjin, China. She serves these classic boiled dumplings, along with 100 other varieties, at her restaurant, Dumpling Galaxy, in Flushing, Queens. The filling is a simple mix of ground pork, seasoned with grated ginger, soy and garlic chives, and it works best with slightly fatty ground meat (about 30 percent fat, if your butcher asks). It's traditional to splash the meat with shaoxing, the Chinese rice wine, but You prefers to use sherry.

- To begin the dough, put the flour and salt in a large bowl. Use your fingers to stir in the water and egg white, until the dough comes together as a shaggy ball. Move the dough to a flour-dusted work surface, and knead it, dusting with more flour to keep it from sticking, until it is smooth to the touch, with no cracks or pockets of flour. Cover the dough, and let it rest at room temperature for 20 to 30 minutes.
- Knead the dough about 10 times, or until it forms a firm ball as smooth as satin. Use a dough scraper or a flour-dusted knife to cut it into 4 equal pieces. Roll each piece into a log, and cut it into 6 equal pieces (for a total of 24 small pieces). Flatten the pieces with your hands, and roll each one into a 3-to-4-inch round wrapper. As you work, cover the dough with a lightly moistened towel to keep it from drying out.
- To prepare the filling, place the ingredients in a mixing bowl, and use your hands to combine them until they are well blended. Place a rounded tablespoon of the filling at the center of each wrapper, and gently squeeze the edges shut. As you work, push out any air bubbles and fix any tears. When ready to eat, bring a large pot of water to boil. Boil the dumplings 6 at a time, for 6 to 8 minutes, or until they float to the surface and the wrappers turn puffy and translucent. Use a slotted spoon to transfer to a plate and serve immediately.

The first time Molly Yeh tried soup dumplings, she was 10 years old and convinced that they were magic. "I was so mystified by how soup got stuffed into a dumpling," says the Spring Baking Championship host. Years later, she discovered the secret: The soup starts out as gelatin that melts down as the dumplings cook. Soon she had her own recipe in the works, a riff on her family's go-to potstickers. Molly makes them in big batches: "I sit at a table and fold a million of them at a time, usually with the TV on in the background. They're like pancakes: The first few are ugly, but after that they're not bad!"

- Make the wrappers: Combine the flour and 1 1/2 teaspoons salt in a large bowl and create a well in the middle. Add 1/2 cup boiling water and mix it in with a spatula, then incorporate with your hands until you have a mealy, shaggy mixture. Mix in 1/2 cup cold water and bring everything together into a dough, then turn it out onto a work surface and knead, adding more flour if it gets too sticky to work with, until you have a smooth and slightly sticky dough, 7 to 10 minutes. Cover with plastic wrap or a damp towel and set aside for 30 minutes while you make the filling.
- Make the soup gelatin: Heat the chicken stock in a saucepan until hot, then add the soy sauce and gelatin powder. Whisk to combine. Pour into a shallow dish and chill until set, about 1 hour. Break up the gelatin by fluffing it with a fork. Set aside.
- Make the filling: Put the pork in a large bowl and sprinkle with 1/2 teaspoon salt. Add the soy sauce, ginger, sambal oelek, sesame oil, rice vinegar and scallions. Mix with your hands (don't overmix), then set up your dumpling folding station.
- Line a sheet pan with parchment paper and dust with flour. To assemble the dumplings, divide the dough into 32 balls (keep them covered when you're not working with them). Roll out the balls into 3 1/2- to 4-inch circles, flouring the surface as needed. Put a wrapper in your non-dominant hand and make a cup. Place 1/2 tablespoon pork filling in the center and top with 1/2 tablespoon soup gelatin. Begin gathering and pleating the dumpling wrapper using your thumb and pointer finger. Work your way around the edge of the wrapper until you've gathered all the dough; your thumb stays in the same place - it's the pointer finger doing all the work. Twist it at the end, pinching everything in the center. Repeat with the remaining wrappers, filling and soup gelatin and place the dumplings on the sheet pan. (You can freeze the dumplings at this point and steam them directly from the freezer.)
- To steam the dumplings, line a bamboo steamer with cabbage leaves or parchment paper with a few holes cut out. Place a single layer of dumplings in the steamer, leaving a bit of room between them, then set the steamer over a pot of boiling water. Steam in batches until cooked through, 8 to 10 minutes. (Alternately, line a plate with cabbage or parchment. Place in a pot of boiling water, making sure the water doesn't cover the plate; cook 8 to 10 minutes.)
- Let the dumplings cool slightly, then enjoy with a sauce of equal parts vinegar and soy sauce with sambal oelek to taste.

- Combine the salt, garlic powder and pepper; rub over roast. Place roast fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 1-1/2 to 1-3/4 hours or until a thermometer reads 160°., Meanwhile, in a large bowl, combine rolls and milk. Cover and refrigerate for 1 hour. , Stir 1 cup flour and eggs into roll mixture. Shape into 2-in. balls. In a soup kettle or Dutch oven, bring 3 qts. of water to a boil. Add dumplings. Boil, uncovered, for 15-20 minutes or until a thermometer inserted into a dumpling reads 160°. Remove to a serving dish with a slotted spoon; keep warm., Remove roast to a serving platter; keep warm. Strain pan drippings. Add enough broth to drippings to measure 1-3/4 cups. Pour into a small saucepan. Place remaining flour in a bowl; stir in cold water until smooth. Gradually stir into broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast and dumplings.

- Combine soy sauce, rice vinegar, sesame oil, and chili sauce in a small mixing bowl for dipping sauce. Set aside.
- Combine pork, leeks, mushrooms, garlic, rice wine, soy sauce, ginger, sesame oil, salt, and pepper in a large bowl. Mix well to form a uniform mixture.
- Take one round dumpling wrapper and put 2 tablespoons of the pork mixture on 1/2 of the wrapper. Leave approximately 1/8 inch space from the end of the dumpling. Using a brush or your finger, apply a thin coat of water all along the open space. Fold the wrapper over and push down, so the two sides get "glued" together and form a half moon. Use a fork to pinch down on the edges of the half moon to seal. Repeat to make remaining dumplings.
- Heat 1 tablespoon of oil in a large nonstick pan over medium heat. Place the dumplings into the pan in one layer; do not overcrowd. Cook the dumplings for 3 to 4 minutes.
- Without flipping the dumplings, pour about 4 tablespoons of water into the pan and cover immediately. Allow the dumplings to steam until the water has evaporated and the meat inside has cooked, 3 to 4 minutes.
- Remove the lid and pour remaining tablespoon of oil into the pan and let the dumplings crisp up from the bottom; do not flip-gyoza should only be crisp on one side and steamed on the other. Place the dumplings browned-side up on a plate. Repeat with remaining dumplings and more oil as necessary. Serve with the dipping sauce.
