Steps:

  • Preheat a sous vide machine in a water bath to 140 degrees F.
  • Sprinkle the pork tenderloin with salt and pepper. Combine the fennel seeds, garlic, pepperoncini peppers, rosemary and 1/4 cup olive oil in a blender and blend until smooth. Rub the marinade over the pork, then place the pork into a sous vide or food-safe freezer bag. Remove the air from the bag and seal. Place the pork in the sous vide bath and cook for 1 hour 30 minutes. Remove the pork from the bag and allow the pork to rest for 10 minutes.
  • Heat a grill, large saute pan or grill pan over high heat. Add the pork and sear on all sides until browned, 5 to 6 minutes total. Set aside.
  • Combine the apricot jam, brown mustard and pickle juice in a bowl. Season with salt and pepper and set aside.
  • Slice the baguette in half lengthwise. Brush the cut side of the baguette with the remaining 3 tablespoons olive oil and sprinkle with salt and pepper. Grill until
  • lightly toasted, 2 to 3 minutes. Spread the mustard mixture over the inside of the baguette. Slice the pork into thin slices and arrange on the bottom half of the baguette. Top with the red onions and arugula, followed by the top half of the baguette. Slice into sandwich-size pieces, 3 to 4 inches long.

Steps:

  • Heat the toaster oven (or conventional oven) to 400°.
  • Place the pork tenderloin in a shallow ovenproof dish.
  • Cut 6 (1-inch) slits evenly spaced across the top, insert the garlic pieces, and season well with salt and freshly ground black pepper.
  • Let sit at room temperature for 20 minutes while the oven is heating.
  • In a small bowl, mix together the apricot preserves, lemon juice, red pepper flakes, and cumin. (If the preserves are still thick, add more lemon juice; don't add too much, though, because the mixture should remain dense, not be runny.)
  • Season with salt and freshly ground black pepper.
  • Set aside.
  • Coat the tenderloin with olive oil and roast for 20 minutes.
  • Remove from the oven and spread evenly with the apricot mixture.
  • Return the pork to the oven and roast for another 5 to 10 minutes, or until the internal temperature reaches 160°F.
  • Remove from the oven and let rest 5 to 10 minutes before slicing and serving.

1 (1 lb) pork tenderloin, trimmed
1 garlic clove, sliced into 6 thin pieces
1/2 cup apricot preserves (preferably with whole fruit)
1/2 medium lemon, juice of
1/8 teaspoon red pepper flakes

SPICY AIR FRYER PORK CHOPS WITH APRICOT GLAZE

A combination of chili powder and other herbs and spices make a spicy rub for pork chops. Brush with a spicy-sweet glaze in the last 2 minutes of cooking, and take the extra glaze to the table for even more goodness. We enjoyed these chops with simple sauteed zucchini and steamed white rice.

Steps:

  • Combine water, salt, and sugar in a bowl and stir until the crystals are dissolved. Add pork chops, cover, and refrigerate for at least 2 hours, or up to 4 hours.
  • Remove pork chops from the brine and shake off excess. Discard the remaining brine. Pat chops dry with paper towels and place on a plate or cutting board.
  • Combine chili powder, onion powder, salt, and white pepper in a small bowl. Distribute 1/2 of the rub mixture among the 4 chops and rub to coat the entire surface. Turn the chops and repeat. Allow chops to come to room temperature, about 30 minutes.
  • Meanwhile, combine apricot all-fruit spread, hoisin sauce, ginger, garlic, chili-garlic sauce, and lime juice for the glaze in a medium, microwave-safe bowl.
  • Microwave mixture on high for 3 minutes, stirring halfway through. Carefully remove glaze and set aside.
