COUNTRY FRIED STEAK

This country fried steak recipe was originally my grandmother's, but I thought it was really bland so I added seasoning to it. Serve it with country gravy and mashed potatoes.

Steps:

  • Whisk together the egg and milk in a shallow bowl; set aside.
  • Whisk together the flour, crushed saltines, seasoned salt, onion powder, garlic powder, and steak seasoning. Dip the steaks in the egg mixture, then press each steak in the flour mixture. Pat the flour mixture into the steaks to coat them completely.
  • Heat oil in a large skillet over medium-high heat, and fry the steaks until they are golden brown, firm, hot in the center, and just turning from pink to grey, about 4 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

Deep Fried Pork Steak image

Steps:

  • Heat oil in a deep fat fryer to 375 degrees F (190 degrees C).
  • In a large resealable plastic bag, combine the flour, garlic powder, seasoned salt, chili powder, cinnamon, coriander, basil, cumin, ground turmeric, paprika, and salt. Place pork steaks in the bag one at a time; seal, and shake to coat.
  • One at a time, place pork steak into hot oil, and cook until it turns deep brown and floats. Remove to paper towels. Repeat process with remaining pork steaks.

Pork Tenderloin Steaks with Mustard Cider Sauce image

Steps:

  • Cut the pork tenderloin into 1-inch-thick steaks on a long bias. Season the steaks all over with salt and black pepper, then toss in the flour to coat.
  • Melt 2 tablespoons of the butter in a large skillet over medium-high heat until the foam subsides. Shake the excess flour off the meat and add it to the skillet. Cook, flipping once, until cooked to medium and an instant-read thermometer inserted into the center registers about 150 degrees F, about 4 minutes per side. Remove the pork steaks to a platter and lower the heat under the skillet to medium.
  • Add the remaining 1 tablespoon butter and the shallots. Cook, stirring, until softened, about 2 minutes. Add the cider, mustard, parsley, chives and a sprinkle of salt and black pepper. Simmer, scraping up any brown bits, until reduced by about half, about 2 minutes. Top the steaks with the sauce and serve.

Hoosier Pork-Tenderloin Sandwich image

Steps:

  • Cut the pork crosswise into 4 equal pieces. Put each piece flat on a cutting board and slice horizontally almost in half (stop about 1 inch from the other side). Open like a book. Sprinkle each piece with water, place between 2 pieces of heavy-duty plastic wrap and pound to 1/4 inch thick with a mallet or heavy skillet.
  • Whisk the eggs, buttermilk, garlic, 1 teaspoon each salt and black pepper, and the cayenne in a shallow bowl. Add the pork, cover and refrigerate at least 4 hours or overnight.
  • Pulse the crackers into coarse crumbs in a food processor, then transfer to a shallow dish. Put the flour in another dish. Remove each piece of pork from the marinade, letting the excess drip off. Dredge both sides in the flour, dip in the buttermilk marinade again, then coat with the cracker crumbs.
  • Heat 1/4 to 1/2 inch peanut oil in a large heavy-bottomed skillet over medium-high heat until a deep-fry thermometer registers 360. Fry the pork in batches until golden and cooked through, about 3 minutes per side. Drain on paper towels.
  • Spread both halves of each bun with mayonnaise and mustard. Layer the lettuce, tomatoes and onion on the bottom halves. Add a piece of pork and a few pickle slices. Cover with the bun tops.

  • Cut pork tenderloin into 1/2 inch slices.
  • Pound to about 1/4 inches.
  • thickness.
  • Should be about 12 slices.
  • In a pie plate,or medium bowl,beat egg with 4 tsps.
  • of water,salt,rosemary,and pepper.
  • Place bread crumbs on wax paper.
  • With tongs (or fingers,like me) dip meat into egg mixture to coat both sides,then dip in crumbs.

  • 1. Combine eggs and water mix well together. Place in shallow dish.
  • 2. Place flour in shallow dish.
  • 3. Place ground crackers in shallow dish.
  • 4. Heat oil in deep frier to 375. When ready dredge pork in flour then egg wash then cracker coating. Place in deep frier. (or pan fry in 1 inch grease) Cook till light brown then turn over. Will cook quickly. Take out place on rack to drain. Salt immediately, then continue to next tenderloin.

Feel free to adjust the seasonings to your own tastes. I served this with mashed potatoes and green beans. The nutrition amounts include the total amounts of flour and milk mixture--you might not use all of the flour mixture to bread the meat and you might not use all the gravy. Cajun Style Country Fried Pork Steaks image

Steps:

  • In a shallow bowl combine one cup flour and all seasonings.
  • In another bowl combine buttermilk and evaporated milk. Set aside 1 3/4 cups of milk mixture for gravy.
  • Dip meat into flour mixture, then in milk mixture, and then back into flour.
  • Repeat step 3 for the rest of meat.
  • Heat oil in skillet until hot but not smoking.
  • Cook meat until lightly browned on each side, about 5 to 7 minutes.
  • Remove steaks and keep warm.
  • Drain oil from pan, saving about 1/3. Stir in remaining flour until smooth. Cook over medium heat until golden brown. Whip in remaining buttermilk mixture.
  • Bring to a boil and cook for 2 minutes.
  • Serve over meat.
