PORK WALNUT STUFFING WITH SQUASH AND SAGE
When we opted to cut out grains from our diet, one of the hardest things to give up was, strangely enough, stuffing-the kind you eat with Thanksgiving dinner. Most stuffing is made with bread crumbs, and that just wouldn't do. So Ryan put a lot of effort into developing and testing more nutritious alternatives, and eventually came up with this-a delicious and more-than-satisfying substitute. When they taste it for the first time, many people want to know his secret. They're shocked when he tells them it's omitting the bread crumbs. But there's no denying this dish tastes like the real deal, and it's more filling (so it involves less actual stuffing of the face!). It pairs nicely with any poultry, so there's no need to wait until Thanksgiving to make it. Try it with our Sweet Cherry Sauce for an extra decadent side.

Steps:
- Preheat the oven to 400°F.
- Rub the flesh of the squash with 1 tablespoon of the ghee or oil and season with a couple of pinches of sea salt and black pepper. On a baking sheet, place the squash halves, flesh side down, and add the broth to the sheet. Cover with aluminum foil and bake for 40 to 50 minutes, until the squash is knife-tender.
- While the pumpkin cooks, clean the seeds. Toss with the remaining 1 tablespoon ghee or oil and a pinch of sea salt and bake for 10 to 12 minutes, until browned, remove from the oven and process in the food processor until finely ground.
- In a cast-iron skillet or sauté pan, combine the carrots, onion, garlic, and a pinch of sea salt. Sweat the veggies, stirring occasionally, until the onions are translucent. Transfer to a large mixing bowl.
- When the squash is done, remove it from the oven and reserve the cooking broth from squash in a small saucepan; scrape the flesh from the squash skin. Place the saucepan of the reserved cooking broth over medium heat and reduce by three quarters. Transfer the squash flesh to the bowl with the pork and vegetables. Add the almond flour, walnuts, squash seeds, herbs, eggs, and reduced cooking broth and mix thoroughly to combine.
- Spread the stuffing out on a baking sheet and bake for 25 minutes, or until the pork is fully cooked through. Remove from the oven and serve immediately.
- Store any leftovers, refrigerated, for up to 1 week.
SAUSAGE, APPLE, AND WALNUT STUFFING
Steps:
- Coat a large saute pan, over medium heat, with olive oil and add the onions and celery. Season with salt and cook until the veggies start to become soft and are very aromatic. Add the garlic and cook for another 1 to 2 minutes. Add the sausage and cook until the sausage browns. Stir in the apples and apple cider and cook until the apples start to soften, about 3 to 4 minutes. Sprinkle in the sage leaves and the walnuts and turn off the heat.
- Preheat the oven to 350 degrees F.
- Add the diced bread and toss together. Pour in the chicken stock and knead with your hands until the bread is very moist, actually wet. Taste to check for seasoning and season with salt, if needed, (it does). Transfer to a large deep ovenproof dish (roughly 9 by 11 inches) and bake until it is hot all the way through and crusty on top.
- Remove from the oven and serve.

SQUASAGE (SAUSAGE-STUFFED SQUASH)
This was a favorite recipe in my family when I was growing up and now that I'm married, it's one of my husband's favorite dishes. A great way to use squash, that abundant, reasonably-priced, and tasty fall veggie!

- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet or line with aluminum foil.
- Place squash, cut sides down, on the prepared baking sheet.
- Bake in the preheated oven until tender, about 1 hour. Flip squash halves over and set aside to cool.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add celery, mushrooms, and onion; cook and stir until celery is softened, 5 to 10 minutes. Remove skillet from heat.
- Beat egg in a large bowl; stir in sour cream and Parmesan cheese. Stir cheese mixture into sausage mixture. Fill squash halves with sausage filling.
- Bake in the preheated oven until filling is cooked through, about 20 minutes.

ACORN SQUASH WITH LEFTOVER STUFFING

Steps:
- Cut squash in half; discard seeds. Place cut side down in a 15x10x1-in. baking pan; add 1/2 in. hot water. Bake, uncovered, at 400° until tender, about 30 minutes. , When squash is cool enough to handle, scoop out flesh, leaving a 1/4-in. shell (flesh will measure about 3 cups). Drain water from pan; place squash shells cut side up in pan and set aside. , In a large bowl, combine the flesh, egg, salt and pepper. Dissolve bouillon in boiling water; add to squash mixture. Add stuffing; spoon into squash shells. If desired, top with cheese. Sprinkle with paprika. Bake, uncovered, at 400° until heated through, 20-25 minutes. If desired, top with chopped parsley.
