MAUBY
Mauby (also called mavi, mabi or maubi) is a tree bark-based beverage widely consumed in the Caribbean. Its flavor is initially sweet, somewhat like root beer, but changes to a prolonged, but not astringent bitter aftertaste. It derives its name from the central ingredient, the bark of the mauby tree, a buckthorn commonly referred to as "soldierwood" or "naked wood". Strips of the bark are steeped in boiling water, to which a hefty amount of cane sugar and a variety of spices have been added. On many islands, a portion of a previous batch is used as a starter, and the whole is left to ferment for several days. Fermented or not, it's drunk ice-cold. In folk medicine, mauby is variously ascribed the ability to lower cholesterol, counteract arthritis, reduce high blood pressure, act as an aphrodisiac, relieve dysentery, lower diabetics' blood sugar, and to be an excellent thirst-slaking "cooling" beverage. - Boil the first five ingredients in one cup of the water until all the flavors are fully infused, about ten minutes.
- Cool; add water and sugar, to taste.
- Strain and refrigerate until ready to drink.
- Covered, it will last about two weeks in the refrigerator.

- toast spices and seeds in hot oil.
- add onions stirfry until par cooked.
- add remaining veggies.
- stir in veggie stock powder, mango achar, soy sauce and peanut butter.
- add water and simmer until sweet potato is soft,
- adding more water if required.
- stir occasionally to prevent sticking to pot.
- add salt to taste.
- serve on a bed of basmati with fruit chutney as a condiment.

Postum was a grain-based beverage made by Kraft. It has now been discontinued. This is supposed to be a good substitute. Use more or less per cup depending on how strong you like it. This recipe is from Cooks.com and I have not tried it.

- Combine all ingredients and rub them between the palms of your hands until they are evenly mixed.
- Spread mixture into shallow baking pans.
- Roast until well-browned, about 5 hours, stirring every 15 minutes to ensure even browning.
- Cool and store in a sealed jar or canister.
- To use, add 2 tablespoons mix to 1 1/2 cups water.
- Boil or brew in a coffee maker.

Steps:
- In large skillet on medium-high heat, stir beef with garlic until browned (about 5 minutes).
- Stir in tomato sauce, tomatoes, apple, onions, raisins, water, olives, jalapeno, vinegar, sugar, celery seeds, cinnamon, cumin, salt, pepper and cloves,turn heat to medium-low, cover and simmer 20 to 30 minutes.
- Before serving, stir in almonds or sprinkle them over top.
