FAVORITE POTATO SALAD

Every home cook should have one go-to classic potato salad recipe on hand. It's the perfect dish to bring to summer picnics, serve at grillouts and take along to potluck suppers. And don't just limit this simple potato salad to warm-weather months-potato salad is great all year round.

Favorite Potato Salad image

Steps:

  • Scrub potatoes. Leaves skins on if desired, or peel thinly and remove eyes.
  • Heat 1 inch water (salted if desired) to boiling; add potatoes. Cover and heat to boiling; reduce heat. Cook 30 to 35 minutes or until potatoes are tender; drain. Cool slightly; cut into cubes (about 6 cups).
  • Mix mayonnaise, vinegar, mustard, salt and pepper in 4-quart glass or plastic bowl. Add potatoes, celery and onion; toss. Stir in eggs. Cover and refrigerate at least 4 hours.

4 hard cooked eggs, chopped

Old Kentucky Favorite Potato Salad image

Steps:

  • In large bowl, mix potatoes and the 4 diced eggs.
  • Add celery, onion,and relish.
  • In small bowl mix mayo, sugar, vinegar, milk, celery seed and garlic salt.
  • Slice remaining egg over potato salad and sprinkle with paprika.

6 large potatoes (cooked,peeled and diced)
5 hardboiled egg, dice 4 of them
1 cup diced celery
1/2 cup chopped onion
3 tablespoons sweet relish
1 1/2 cups mayonnaise
3 tablespoons sugar
2 tablespoons cider vinegar
2 tablespoons milk
1 tablespoon celery seed
1/2 teaspoon garlic salt
paprika

This is one of the best potato salads. It's always my go to recipe, when asked to make for parties. It has an egg based, cooked dressing...so delicious. Enjoy!

Steps:

  • 1. Dressing: Whisk eggs in small saucepan. Whisk in vinegar and 2 tablespoons water. Bring to boil over medium high heat. Boil for 3-4 minutes or until thickened, stirring constantly. Pour into medium bowl, whisk in mayonnaise, mustard, salt and pepper. Cover and refrigerate until well chilled.
  • 2. Cook potatoes in large pot of boiling water for about 20 minutes or until just tender. Drain and cool. Cut into 1 inch pieces. In large serving bowl,( I use my trifle bowl ) gently toss potatoes,pickles if using, celery, red onion, eggs, peppers if using, green onions with the dressing. You can garnish with some extra green onions. Chill until serving.
  • 3. I sometimes add about 1/2 tsp of prepared horse radish also..gives it a bit of zing... Double the dressing recipe for a larger crowd. I usually make a 5 pound bag of potatoes when making this. Enjoy!

2 eggs
1/2 c sugar
1/4 c white wine vinegar
1 - 1 1/2 c mayonnaise
1 Tbsp yellow mustard
1 tsp salt
pepper to taste
2 - 2 1/2 lb red skinned potatoes - or white, peeled, cut in half
2 c celery, thinly sliced
1/2 c red onion, chopped
5 - 6 hard cooked eggs, cut into wedges, or chopped
1/2 c green onions - sliced
1/2 c diced red pepper ( optional )
pickles, minced ( optional )

  • Scrub your potatoes, peel them and chop them into approximately 1/2″ – 1″ cubes. Keep the pieces similar in size so they will cook at the same speed.
  • Add potatoes to a large pot of salted water and bring to a boil. Continue boiling until potatoes are fork tender. You don’t want them hard, but you also don’t want them too soft. Otherwise they’ll fall apart and you’ll have mashed potato salad.
  • My egg boiling trick (that I think came from Rachael Ray) – Add your eggs to a pot of salted water. Bring up to a boil then turn off heat and cover with a lid. Remove from the heat and let stand for 10 minutes in the water. After 10 minutes, drain and spray the eggs with cold water. You’ll have perfectly yellow yolks – no green!
