POWER MUFFINS

Super healthy, low fat, and whole wheat muffins with plenty of nuts, grains, and good things to keep you full for the morning while still being delicious. I've made these with pumpkin instead of the banana (then minus the coca nibs and plus some ginger and more cinnamon) with great results.

Power Muffins image

Steps:

  • Preheat oven to 350 and grease a muffin tin.
  • Mix together the dry and wet ingredients separately, then mix the wet into the dry, being careful not to overmix.
  • Bake muffins in oven for 20-30 mins, or until done.
  • I freeze the leftovers and dethaw a muffin in the fridge overnight for the next morning. I eat them with margarine and honey on top.

2 ripe bananas
3 tablespoons melted coconut oil
2 lightly beaten eggs
1/2 cup melted honey
1/2 brown sugar
1/2 cup buckwheat groats
1 cup oats
1 cup whole wheat flour (I used white whole wheat to make it lighter)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
2 teaspoons cinnamon
1/3 cup cocoa nibs (or to taste, can sub dark chocolate chips)
1/3 cup chopped walnuts (or to taste)
1/3 cup chopped pitted dates (or to taste)

Steps:

  • 1.Heat oven to 350°. 2.Coat muffin tin with cooking spray or liners. 3.Combine flour, sugar, oats, baking powder, baking soda and salt in a bowl. 4.Combine yogurt, eggs, butter, and vanilla in a second bowl. 5.Fold yogurt mixture into dry mixture; stir to combine completely. 6.Gently fold in blueberries. 7.Spoon into muffin tins. 8.Bake until top is golden and springs back when you gently touch it, 20-25 minutes.

1 cup oats-quick or regular oats, plain
2/3 cup sugar
1 teaspoon baking powder

1/2 teaspoon salt
12 ounces honey nonfat greek yogurt or 1 1/2 cups (Chobani)

POWER MUFFINS

The basic recipe came from bob's red mill, but i have substituted several things to boost it up even higher in nutrition. there is no oil or sugar and is such healthy loaded muffins and more than that, taste good. YOU CAN ADJUST THE NUTMEG AND CINNAMON IF YOU LIKE.

Steps:

  • Mix all the dry ingredients together, then add wet ingredients, stir well and put in greased muffin pans.
  • SPRINKLE WITH CINNAMON AND BAKE AT 400 FOR FIFTEEN MINUTES.

HIGH FIBER POWERHOUSE MUFFINS

My aunt brought me these muffins along with the recipe and said that she felt she had to include the recipe so I'd 'understand' how healthy they were and that would explain the taste. Ha!! My dh and I loved the taste and the healthfulness of them and I have made them many times since. They are a heavier muffin (but moist) and very dark. And they do definitely have a healthier taste to them. Just the way we like it.

High Fiber Powerhouse Muffins image

Steps:

  • Mix the bran mixture together in a bowl and set aside.
  • Mix the flour mixture in a bowl an set aside.
  • Mix the liquid mixture.
  • Add the liquid mixture to the bran mixture and beat well.
  • Add the flour mixture and mix until just mixed (do not over mix).
  • Stir in the raisins and sunflower seeds.
  • Spoon into greasedmuffin tins filling 3/4 full.
  • Bake 20 minutes at 350°F.
  • Batter keeps in fridge.

  • To make the quinoa, bring just over 1 cup of water to a boil in a pot and add 1/4 teaspoon of salt. Add the quinoa, mix well, and reduce to a simmer. Cook for 20 minutes with the lid off the pot, you may need to add a splash more water at the end if the quinoa is not thoroughly cooked. Turn the heat off, fluff the quinoa with a large fork, and let it cool down to room temperature.
  • To make the quinoa muffins, pre-heat oven to 350 degrees F. In a large bowl, add the flour and next 3 ingredients, mix well. Measure 1 cup of cooked quinoa and at that to the bowl along with the remaining dry ingredients, mix very well so everything is equally coated in flour, set aside.
  • In another large bowl, lightly beat the egg and add the next 3 ingredients. Add the baking soda and mix well for 30 seconds. The mixture will bubble and grow as the soda reacts with the yogurt. Add the wet ingredients on top of the dry ingredients and mix until everything is thoroughly combined, about 20-30 seconds.
  • If your muffin tin is not non-stick, spray it with non-stick spray and dust a little bit of flour inside. Scoop enough batter to make 6 muffins, filling the tins all the way to the top. Bake in the oven for 25-30 minutes, you will know they are ready when a toothpick inserted in the middle of the muffin comes out clean. Remove from oven, let sit in tin for 5 minutes, then move muffins to a clean plate and allow to cool completely. Enjoy!
