BACON-WRAPPED PRUNES
Also known as Devils on Horseback, these sinful bacon-wrapped bites are perfect for a Halloween party hors d'oeuvre. With just two ingredients and about five minutes of prep work, they couldn't be easier to prepare either. They're best served warm, so pop them in the oven right before your guests arrive.

- Preheat oven to 400 degrees. Line a large rimmed baking sheet with foil. Wrap bacon pieces around prunes and secure with toothpicks. Bake on sheet until bacon is browned, about 15 minutes, flipping halfway through. Serve warm.
GRILLED SAUSAGES WITH PRUNES AND BACON
My husband's grandmother gave me this recipe. The combo of sweet prunes, salty bacon and meaty sausages is delicious. This recipe is great with any fresh, large sausage (just not the wee breakfast-style sausages). Sometimes I use sweet Italian, sometimes spiced Italian, sometimes bratwurst, sometimes knockwurst, and sometimes just local pork sausage. Serve in buns with all the usual fixin's (sauerkraut, mustard, relish, etc.).

Steps:
- Prick the casing of each sausage in a few places to prevent them from bursting. Place the sausages in a pot, cover with water, and bring to a boil over medium-high heat. Reduce heat to medium; simmer 8 minutes. Remove from pot and let cool.
- Place toothpicks in a small bowl of water and soak 10 minutes to prevent burning on the grill.
- Slice sausages halfway through on the long side. Stuff 3 prunes into the opening. Wrap a bacon slice around the sausage in a spiral and secure with two toothpicks. Repeat with all 6 sausages.
- Preheat an outdoor grill for medium-high heat.
- Place sausages onto preheated grill and cook, turning once, until desired doneness, or until bacon is browned. Serve on buns topped with desired condiments.

ALMOND-STUFFED BACON-WRAPPED PRUNES

- Heat the oven to 450 degrees F/230 degrees C.
- Stuff the prunes with the almonds. Cut the bacon in half and wrap a piece around each prune. Set on a baking sheet and broil until the bacon is crisp, about 10 minutes, turning once. Serve hot with cocktail picks for spearing.
BACON, PRUNE AND CHESTNUT STUFFING

- Preheat the oven to 350 degrees F. Melt 4 tablespoons butter in a large deep skillet over medium heat. Add the bacon and cook, stirring, until browned, 10 to 12 minutes. Add the celery, onions, prunes, chestnuts, rosemary, 1 tablespoon salt and a few grinds of pepper. Cook, stirring occasionally, until the mixture softens and starts browning, 6 to 8 minutes. Stir in the chicken broth and bring to a simmer.
- Combine the bread and broth mixture in a large bowl and gently mix until all the bread is moistened. Stir in the beaten eggs.
- Butter a 3-quart baking dish. Add the stuffing and dot with the remaining 4 tablespoons butter. Cover with foil and bake 30 minutes. Uncover and continue to bake until golden brown, about 20 more minutes.
BACON-ROASTED PORK WITH PRUNES

- Preheat the oven to 350 degrees. Run a skewer lengthwise through the center of one of the pork halves. Remove the skewer and insert a fork handle into one end of the pork, in the hole created by the skewer. Twist the fork around to enlarge the hole enough to insert the prunes. Repeat at the other end. Push half of the prunes into the hole until a line of prunes runs the length of the pork. Repeat with other pork half.
- Rub the mustard all over the pork and season generously with pepper. Wrap the bacon around the pork and place in a large roasting pan. Roast until the pork reaches an internal temperature of 160 degrees, about 1 1/2 hours. Let stand for 10 minutes before carving. Serve warm or at room temperature.

- 1. Partially cook bacon slices in microwave for 1-1/2 minutes on full power. This renders the fat and begins to shrivel the bacon. Cool.
- 2. Blend cream cheese, ricotta, tabasco and sage in a food processor until smooth and well blended. Using a small spoon or butter knife stuff cheese mixture into the prune openings. Round cheese on top of the prune opening.
- 3. Cut bacon slices in half lengthwise and wrap each slice around a cheese stuffed prune.
- 4. Refrigerate until ready to serve. Preheat oven to 450 degrees. Place prunes on a baking sheet and bake for approx. 7 minutes or until bacon is crisp. Allow to cool for at least 5 minutes before serving (they will be extremely hot directly from the oven and can burn tongues!)
- 5. Prunes can be prepared a couple of days in advance and refrigerated. Delicious!!
