LEMON POPOVERS WITH PECAN HONEY BUTTER

My mom passed this recipe down to me many years ago. We love the delicate lemon flavor with the pecan honey butter. The popovers are a nice addition to any dinner, but they're especially delicious at breakfast with a bowl of fruit and yogurt. -Joan Hallford, North Richland Hills, Texas

Lemon Popovers with Pecan Honey Butter image

Steps:

  • Preheat oven to 450°. In a large bowl, whisk eggs and milk until blended. Whisk in flour and salt until smooth (do not overbeat). Stir in 3 tablespoons pecans, lemon zest and lemon juice., Generously grease a 6-cup popover pan with nonstick spray; fill cups half full with batter. Bake 15 minutes. Reduce oven setting to 350° (do not open oven door). Bake until deep golden brown, 10-15 minutes longer (do not underbake)., Meanwhile, combine butter, honey and remaining 2 tablespoons pecans. Immediately remove popovers from pan to a wire rack. Pierce side of each popover with a sharp knife to let steam escape. Serve immediately with pecan honey butter.

This recipe uses milk and a hefty helping of baking powder to create these small light fried balls of dough that are drizzled with honey and sprinkled with nuts. These are loved by all Greeks and are a traditional Greek Jewish sweet at Hanukkah.

Loukoumathes: Honey Puffs image

Steps:

  • Sift the flour with the baking powder into a bowl.
  • Add sugar, oil (or butter or margarine), milk, and the egg, and mix with a wooden spoon until smooth.
  • Heat 1-2 inches of oil in a saucepan or deep frying pan to just below the smoke point (medium to medium-high on most stoves).
  • When the oil is hot, drop the batter by the small teaspoonful into the oil and fry until golden on all sides.
  • Drain on paper toweling.
  • Get enough dough on your spoon to equal the size of a unshelled almond.
  • Keep a small bowl of cold water next to the workspace and dip finger before pushing batter into the oil (to keep batter from sticking).
  • Place on serving platter and drizzle with honey.
  • Dust with walnuts and cinnamon, and serve.

1 1/2 cups all-purpose flour
3 teaspoons baking powder
4 tablespoons sugar
4 tablespoons melted butter or 4 tablespoons margarine
3/4 cup milk
1 egg

Puff Pastry Apple Tarts Glazed with Honey image

Steps:

  • Line 2 baking sheets with parchment paper. Roll out pastry sheet on lightly floured surface to very thin 18x14-inch rectangle. Using small plate as guide, cut out four 7-inch rounds. Transfer 2 rounds to each prepared sheet; cover and refrigerate at least 30 minutes and up to 1 day.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Overlap slices from 1/2 apple on each pastry round, leaving 1/4-inch plain border. Sprinkle apple on each tart with 2 1/4 teaspoons sugar, then drizzle with 2 1/4 teaspoons butter.
  • Bake tarts until pastry is golden and apples are tender, about 25 minutes. Drizzle each tart with 1 teaspoon honey. Transfer tarts to racks; cool 10 minutes. Serve warm or at room temperature.

Golden Puffs With Honey-Butter Dip image

Steps:

  • Beat eggs on high until well mixed (when they turn about lemon colored), 3 minutes, give or take. Add yogurt and butter, mixing on low.
  • Once yogurt and butter are well mixed, keep the mixer on low, and *Slowly* add the dry goods--flour, baking powder, baking soda, nutmeg and salt.
  • Heat 2-3 inches of oil to 360 degrees F/186 degrees C in a heavy frying pan, 3-quart pot, or electric deep fryer.
  • Drop dough by the teaspoonful (level, if you can) into the oil, and fry till light golden brown, about 2 minutes; drain well.
  • Serve warm with honey-butter dip (see below).
  • Honey-Butter Dip: Beat 1/4 cup softened butter and 1/4 cup honey together on medium-low speed until light and fluffy.

  • To prepare this delicious Greek honey puffs recipe, start by dissolving the yeast in the water. Cover with plastic wrap and allow to rise for about 5 minutes, until it starts bubbling.
  • In a separate bowl add the flour, corn starch and salt and blend to combine. Add the flour mixture in the yeast mixture and pour in the honey. Whisk all the ingredients together, until the batter is smooth. Cover the bowl with plastic wrap and let the dough rise for about 30 minutes.
  • Into a medium sized frying pan pour enough vegetable oil to deep fry the loukoumades. Heat the oil to high heat until hot. Test if the oil is hot enough by dipping in some of the dough. If it sizzles the oil is ready or check its temperature. It should read 160C or 320F.
  • Take a handful of the dough in your palm and squeeze it out, between your thumb and index finger, onto a tablespoon dipped in water. Then drop it in the oil and fry until golden. Repeat this procedure until the surface off the pan is comfortably filled. It is important to dip the spoon in a glass of water every time, so that the batter doesn’t stick on it. You want the spoon to be covered in water but not filled with it.
