PUMPKIN CLAM CHOWDER

When autumn arrives, I'm eager to celebrate with warm and cozy comfort food like this pumpkin clam chowder. Use fresh clams if they are available. -Renee Murby, Johnston, Rhode Island

Pumpkin Clam Chowder image

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir chopped fennel and onion in bacon drippings over medium heat until tender, 8-10 minutes. Add chardonnay to pan; increase heat to medium-high. Cook 1-2 minutes, stirring to loosen browned bits from pan., Add 4-1/2 cups clam juice, pumpkin and potatoes. Bring to a boil; reduce heat. Simmer, uncovered, until pumpkin and potatoes are tender, 15-20 minutes, stirring occasionally., Whisk flour and remaining 1/2 cup clam juice; stir into pan. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in clams, cream, tarragon, salt and pepper; heat through (do not boil). To serve, top soup with reserved chopped fennel fronds and cooked bacon.

4 cups cubed fresh pumpkin or butternut squash (1/2-inch cubes)
2 medium potatoes, peeled and cut into 1/2-inch cubes
1/3 cup all-purpose flour
2 cans (10 ounces each) whole baby clams, drained
1-1/2 cups heavy whipping cream
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • 1. Cut up bacon (scissors are easiest). Fry in a large soup pot until crispy. Remove bacon from pan, but leave oil.
  • 2. Chop onion and fry in bacon oil until soft.
  • 3. Precook potato in microwave or stove top.
  • 4. Add pumpkin, potato, corn, milk and mushroom soup to pot and heat through. Add more milk if you like thinner soup.
  • 5. Serve and sprinkle bowls with fried bacon.

This is a slightly sweet soup and is wonderful on a cold night with a grilled swiss cheese sandwhich. I think that it is good as is, or you can play with it a little! Enjoy! Note: If you want to add some tang to the soup, you can substitute up to 1 cup of milk with yoghert.

  • Mix all of the ingredients together (not garnish and reserving a little of the bacon for garnish) and heat over medium.
  • Ladle into soup bowls and top each cup with 1 tsp of sliced green onion and the remainder of the bacon to serve.

Steps:

  • Combine broth, corn and onion in saucepan and bring to boil over medium-high heat. Reduce heat, cover and simmer 15-20 minutes until onion in tender.
  • Return heat to medium-high and stir in pumpkin, blending well until mixture begins to boil.
  • Reduce heat, cover and simmer another 5 minutes.
  • Add milk, pepper and cayenne and continue stirring until heated through.

2 (14 1/2 ounce) cans fat-free chicken broth (if making Vegetarian, use vegetable broth)
1 (15 1/4 ounce) can sweet corn, drained
1 (8 1/4 ounce) can cream-style corn
1/8 cup onion, finely chopped
1 (16 ounce) can pumpkin
1/2 cup skim milk
1/4 teaspoon fresh ground pepper
1/8 teaspoon cayenne pepper (optional)

  • Preheat the oven to 400º. Oil the inside of the pumpkin halves and season each with salt. Place the pumpkin halves cut side down on a baking sheet and bake in the oven for 30 minutes, or until the pumpkin meat is fork-tender. Remove from the oven. When it’s cool enough to handle, use a spoon to scoop out the roasted pumpkin and set aside.
  • In a large pot, sauté the bacon over moderate heat, until it’s crispy on all sides. Move the bacon pieces to a paper towel and set aside. To the bacon fat, add onion, garlic, thyme, sugar, pepper, cinnamon, nutmeg and cayenne pepper and cook for 3 minutes. Add the roasted pumpkin and broth, stirring to incorporate, then season with salt, and bring the soup to a boil. Reduce the heat to low and simmer for 20 minutes. Stir in the cream and let cool for 10 minutes.
  • Transfer the soup to a blender (or use an immersion blender in the pot) and puree until smooth. If needed, add additional water or broth to reach the desired consistency. Return the mixture to the saucepan and warm. Serve and garnish with roasted pumpkin seeds.
