NADIA'S EASY PUMPKIN CORNBREAD MUFFINS
Super-easy, fun recipe to whip up in minutes for an October or November breakfast. Love serving this with chili for dinner too. I like spraying the muffin liners so that the muffins don't stick. Just a tiny spray will do!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray 21 muffin cups with cooking spray.
- Stir cornbread mix, baking powder, and pumpkin pie spice together in a large bowl. Add pumpkin puree and water to cornbread mixture; stir until batter is just-combined. Divide batter between prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.

- In a large bowl add the cornmeal, flour, baking powder, cinnamon, and salt. Whisk to combine. In a small bowl add the pumpkin puree, egg, milk, honey, and melted butter. Whisk to combine. Add the wet ingredient to the dry ingredient and stir until the mixture just starts to come together. Don’t over mix.
- Divide the batter evenly between the 12 muffin tins. Bake until the muffins are golden brown and a toothpick inserted into the center comes out clean, 15-18 minutes. Let the muffins cool for 5 minutes in the pan before removing. Serve warm with additional honey or honey butter.

- In a large mixing bowl, whisk the first 8 ingredients together (pumpkin through salt.) Make sure everything gets well incorporated.
- Whisk in the baking powder, corn meal, and flour, mixing until just combined, but don't over beat this. I usually switch to a silicone spoon at the end.
- Use a standard ice cream scoop to fill 10-12 muffin cups fairly full. My muffin tin is on the large size so I got 10 muffins from my batter.
