Steps:
- In a large saucepan over medium, heat oil. Add onion, bell pepper, garlic, cumin, salt, and black pepper. Cook, stirring occasionally until onion has softened about 5 to 7 minutes. Slowly whisk in the milk, tomato paste, and vinegar, until well combined; allow to steep for 20 minutes.
- In a large heatproof bowl, combine grated cheeses, tomatillo salsa, lime juice and oregano. Place a fine mesh strainer over the bowl containing the cheese. Strain milk mixture into the bowl. Discard solids from strainer.
- Using a wooden spoon stir cheese mixture until smooth and saucy. If cheese doesn't melt completely, set bowl over a pot of simmering water and stir until cheese melts and mixture comes together. Transfer to a bowl and serve immediately.

QUESO BLANCO CON CHIPOTLE
I made a batch of queso blanco, and decided it needed something to give it some zing. If you cannot find the Crema Mexicana, substitute 1 1/2 cups heavy whipping cream for the crema and half-and-half. For a change of pace, divide the batch of queso before you add the chipotle, so you have a mild queso and a zippy queso.

Steps:
- Mince the chipotles and place in pot.
- Place all the remaining ingredients in a pot over medium heat, stirring to make sure it doesn't burn.
- Cook it until it is melted and ingredients are well blended.
- Serve with tortilla chips or Frito Scoops.
- This is best served in some sort of a fondue pot, or microwave safe bowl, so you can reheat it if necessary.

- Pour in the evaporated milk, chipotle powder and whisk in the corn starch. Bring to a simmer, stirring often to make sure corn starch doesn’t clump on the bottom until thickens. If you find that it is not getting thick after a few minutes, add a little more corn starch (1 teaspoon at at time) until it is the right consistency. Remove the pan from the heat and stir in the grated cheese in small batches until melted. Taste to test for salt, add if needed. The queso will also thicken more after turning off the the heat. Serve warm.
