QUICHE
One of my all time favorites! My mother got this recipe from her friend Betty, It's a make ahead recipe, to be frozen and used later. My mother used to make mass quantities and take them out whenever she needed for an easy meal or hors d'oeuvre. She also made it with the light cream instead of milk.

Steps:
- In medium bowl, toss 4 teaspoons flour with the grated cheese. Sprinkle mixture into the pie shell. On top of cheese, sprinkle 1/2 cup of diced ham.
- In medium bowl, combine eggs, milk or cream, and then add salt and mustard powder. Beat until smooth and pour over cheese and ham.
- Put piece of plastic wrap large enough to overlap sides over top of quiche, then a piece of foil, and seal well around the edges. (plastic keeps the foil from sticking to the food). Place prepared quiche in freezer.
- When ready to prepare, preheat oven to 400 degrees F (200 degrees C.) Remove foil and plastic wrap. Put foil around edge of crust to protect it.
- Bake in the preheated oven for 60 minutes, or until filling is set and crust is golden brown. Garnish with parsley and pimiento if desired

O'BRIEN QUICHE
Substituting potatoes for a crust makes this quiche deliciously different! Serve it with cantaloupe slices in summer and quartered oranges in winter. Add real or imitation bacon bits for variety.

- Preheat oven to 400 degrees.
- Place frozen potatoes in microwave and cook on High for 30 seconds.
- Spread potatoes evenly in 9-inch glass pie plate that has been sprayed with nonstick cooking spray.
- Sprinkle potatoes with salt and pepper to taste.
- Spread cheese evenly over potatoes.
- Spread broccoli evenly over cheese.
- Beat eggs well with water.
- Pour carefully over broccoli.
- Bake for 30-35 minutes, or until center is set and top is golden brown.
- Serves 4.
- NOTE: This recipe tested at high altitude (over 3,500 feet).
- Your cooking time may be shorter.
QUICHE DE BRIAN
I've been using this recipe from an aunt's coworker for 3 years, now. Pretty much fool proof. I do add seasoning to the custard mixture, though.

Steps:
- Preheat oven to 400 degrees.
- Thaw and pierce Deep Dish Pie Crusts with a fork.
- Sprinkle some salt and pepper on the pie crusts.
- Bake at 400 degrees for approximately 9 minutes.
- Add the meat to cover the bottom of the pie crusts.
- Top with chives.
- Fill the remainder of the pie with shredded cheese of your choice (I prefer mixed shredded cheese) - takes approximately one bag for each unless you buy a big bag from Costco or Sams - you will have plenty left over.
- Mix heavy whipping cream with eggs and slowly pour the mixture into the pie shells. The pies should be really full and therefore I recommend placing them on a cookie sheet to prevent any overflowing.
- Bake the pies in the oven for approximately 40 to 45 minutes at 400 degrees. Upon testing at center, the tester should come out clean.
- Let the pie set/cool for at least 15 minutes before serving.
- NOTE: Can be made a day ahead of time and warmed them when needed. They are just as good - if not better the second day.

- Preheat the oven to 400°F and set a rack in the middle position. Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. (If there are any cracks in the crust, see note below on how to patch them up.) Prick the bottom and sides all over with a fork. Place the crust on a baking sheet (this makes it easy to move in and out of the oven). Bake on until lightly golden, 10 to 15 minutes. Keep an eye on it; if it puffs up while cooking, gently prick it with a fork so it will deflate. Set aside and turn the oven down to 325°F.
- In a medium nonstick sauté pan over medium heat, cook the bacon, stirring occasionally, until crisp, about 10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Pour off all but one tablespoon of fat from the pan. Add the shallots and cook over medium-low heat until soft and translucent, 3 to 4 minutes. Do not brown. Set aside.
- In a medium bowl, whisk the eggs. Add the heavy cream, salt, cayenne pepper, and nutmeg; whisk until evenly combined.
- Spread the shallots evenly over the bottom of the cooked crust. Top with half of the bacon, all of the Gruyère, and then the remaining bacon. Pour the egg/cream mixture over top.

- Prepare the homemade pie crust and chill, or use store-bought pie crust. Roll out 1 pie crust to 12" on a lightly floured surface or between two pieces of parchment paper, then transfer to the tart pan*. Press the pastry dough into the pan with your fingers to mold to the pan. Freeze for about 30 minutes, meanwhile, preheat the oven to 350˚F with the rack in the middle.
- If using a store-bought crust, follow the package instructions for pre-baking. Otherwise, remove the prepared pastry tart from the freezer and blind bake it by first poking the bottom with a fork about every inch or so. Next, line the tart with parchment paper or foil allowing the ends to stick out a couple of inches above the tart edges.
- While pie is pre-baking, preheat a large skillet over medium heat and add chopped bacon. Cook, stirring often until the fat is rendered and the bacon is crisp. Remove bacon with a slotted spoon to a separate dish. Add the diced onions to the bacon fat and cook stirring often until the onions are golden. Remove with a slotted spoon to the dish with the bacon.
- Bake the quiche Lorraine in a preheated 350˚F oven for about 50 minutes, or until a knife inserted into the middle comes out clean and the center jiggles slightly. The quiche will continue cooking after it is removed from the oven. Cool slightly before serving and garnish with parsley if desired.
