My mom used to make these on the weekends and the whole house smelled delicious. Great for kids, and I usually serve them with applesauce.

- Preheat oven to 400 degrees F (200 degrees C).
- Grease 12 muffin cups.
- Whisk eggs, brown sugar, vegetable oil, and milk together in a bowl until smooth.
- Stir flour, oatmeal, baking powder, baking soda, and salt into wet ingredients to form a batter. Fill the prepared muffin cups with batter.
- Bake in preheated oven until tops are golden brown and an inserted toothpick comes out clean, about 20 minutes.

- Preheat oven to 400 degrees. Line a 12-cup muffin pan with 10 paper liners.
- In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps. Stir in 1 3/4 cups oats and raisins. Add oil, eggs, milk, carrots, and banana, and stir until blended, being careful to not overmix.
- Fill each muffin cup with 3/4 cup batter. Sprinkle remaining 1/4 cup oats over muffins. Bake until a toothpick inserted in center of muffin comes out clean, about 25 minutes. Serve muffins warm or at room temperature.

- preheat oven to 425 degrees F and line muffin tin with paper liners.
- in a small bowl combine milk and oats; let soak for 15 minutes.
- in a seperate bowl, beat together egg and applesauce, stir in oatmeal mixture.
- In another bowl sift together baking mix, splenda, cinnamon, allspice, cloves and rasins.
- stir flour mixture into wet ingredients just until combined.
- spoon batter into prepared muffin cups about 2/3 full.
- sprinkle tops with your favorite grannola for an added crunch.
- bake for about 20 mins.

- In mixing bowl, combine all dry ingredients; mix well.
- In large bowl, combine all wet ingredients; blend well.

- Spoon batter into prepared muffin cups, filling 2/3 full.
- Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
