QUICK BAKED TILAPIA WITH GRAPEFRUIT DILL BUTTER

This literally takes minutes in the oven. Tilapia (an inexpensive fish, but you can add some great flavor to it), fresh grapefruit and dill make this dish absolutely wonderful. Serve this with some oven fries or fingerling potatoes and some fresh oven roasted zucchini planks, just with olive oil and fresh herbs is perfect. A light fresh dinner. For those who love the light tart taste of grapefruit this is for you. I prefer a nice ruby red grapefruit for this, but a white grapefruit will work fine, it will just be a bit more tart.

Quick Baked Tilapia With Grapefruit Dill Butter image

Steps:

  • Butter -- mix the grapefruit juice, butter, dill, salt and pepper.
  • After a recent review, I realized that I use ruby red grapefruits for everything, but it reminded me that not everyone has ruby reds. And for me, I love grapefruit but for those who don't, the option of adding a teaspoon of honey to the juice, butter and dill will give a bit of sweetness to the dish. I did that once for some friends who were a bit more "less" of a grapefruit fan.
  • Fish -- Spray a parchment lined or foil lined pan with pam. Then add your fish fillets and brush well with the grapefruit butter. Cook on the middle rack 400 degrees for 12-15 minutes. I baste with the butter 2 times during the baking process.
  • That's it. Easy simple and big flavor. You can serve a little dollop on top right at the end of cooking if you want along with the baked grapefruit slice.

3 tablespoons fresh ruby red grapefruit juice (I just buy a small grapefruit ... eat one half for breakfast and squeeze the other, a white grapefru)
4 tablespoons unsalted butter
1 teaspoon fresh dill, chopped
1 teaspoon honey (optional)
1/4 teaspoon ground black pepper
1/4 teaspoon kosher salt
4 grapefruits, slices (add them to the oven as you bake the fish, a slice on each fillet adds a nice presentation)

  • Preheat the oven to 425°F Cut out four 12-by-15-inch pieces of parchment. In a bowl, combine the corn, sugar snap peas and lemon peel; season with salt and pepper. Divide the mixture among the parchment pieces and top with the fish. Season the fish with the Old Bay seasoning, then the olive oil and lemon juice.
  • Bring together the long sides of the parchment and fold over twice, then tuck the short side under to form a pouch. Transfer the pouches to a baking sheet and bake until the fish is just opaque, about 10 minutes. Transfer to a plate.

  • Over medium heat in a small sauce pan, melt butter.
  • Add garlic, simmer for 2-3 minutes.
  • Add dill, mix well, let cook another 2 minutes.
  • Meanwhile, preheat oven to 375F.
  • Rince tilapia under cold water, pat dry with a paper towel.
  • Place tilapia in a deep baking dish.
  • Pour dill butter mixture over filets.
  • Cook for 15-20 minutes, or until fish flakes easily.
