Quick Grilled Pork Ribs Recipe - (4.7/5) image

Steps:

  • Preheat oven to 250°F. Line a baking sheet tightly with foil. For the ribs, trim the ribs by removing excess fat and pulling off the sinewy membrane using a paper towel; "dock" the meat between the bones. Place ribs on prepared baking sheet. Combine salt, pepper, chili powder, cumin, paprika, oregano, and thyme. Apply rub to ribs; cover with foil. Roast ribs, covered, until meat pulls away from the bones, 2-3 hours. For the sauce, cook bacon in a saucepan until crisp; transfer to a paper-towel-lined plate. Add onion to same pan and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Deglaze pan with bourbon and cook until reduced by half. Add ketchup, tomato paste, sugar, vinegar, Dijon, and Worcestershire; simmer until thickened, about 20 minutes. Season sauce with salt and pepper. Preheat grill to medium-high. Brush grill grate with oil. Brush barbecue sauce on both sides of roasted ribs. Grill ribs 15 minutes total, turning over and slathering with sauce at least twice so that the ribs become well-glazed and nicely charred. Remove ribs from grill and tent with foil 5 minutes. To cut, hold racks upright on a cutting board and slice between ribs; serve with remaining sauce.

2 racks St. Louis-style pork spareribs about 7 pounds
COMBINE:
2 tablespoons kosher salt
2 tablespoons black pepper
2 tablespoons hot chili powder
1 tablespoon ground cumin
1 tablespoon smoked paprika
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
SAUCE:
2 strips bacon, diced
1/2 cup white onion, minced
2 tablespoons garlic, minced
1/2 cup bourbon
1 cup ketchup
2 tablespoons tomato paste
1/2 cup packed brown sugar
2 tablespoons cider vinegar
2 tablespoons dijon mustard
2 tablespoons Worcestershire sauce

QUICK BABY BACK RIBS

This is an easy recipe for ribs which won't be tough, like smoked ribs, or fall off the bone, like braised ribs. These ribs are done the right way, and I've never had better ribs than this.

Steps:

  • Prepare an outdoor grill for indirect heat - a pile of charcoal on one side, nothing under the food. Once it is going, throw some soaked mesquite woodchips on it.
  • Remove the membrane from the ribs if the butcher has not already. Combine the salt, pepper, paprika, chile powder and thyme; rub onto the ribs. Cut the slab of ribs in half.
  • Place the ribs over indirect heat, and close the lid. Cook for 20 minutes, then brush with barbeque sauce. Cover, and continue cooking for an additional 30 minutes.

We think of ribs as an all-day affair, the meat cooked in smoke and low heat until it begins to pull from the bone. But baby backs are quicker and can be grilled as well, and the result is delicious. This recipe benefits from a basting technique used by the chef and barbecue madman Adam Perry Lang, who thins out his barbecue sauce with water, then paints it onto the meat he's cooking in coat after coat, allowing it to reduce and intensify rather than seize up and burn.

Grilled Baby Back Ribs image

Steps:

  • Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium.)
  • Meanwhile, combine barbecue sauce with 1 cup water and stir to combine. Set aside.
  • Sprinkle the ribs generously with salt and pepper, put them on the grill directly over the coals and cook for 25 to 30 minutes, turning once every 5 minutes or so, and basting with the thinned barbecue sauce, until a peek inside shows that the meat no longer has any pink at the center.
  • Take the racks of ribs off the grill, cut them into individual ribs and serve.

EASY GRILLED STICKY RIBS

I'm showing you my favorite way to grill ribs, which of course, is not the same as barbecued ribs. Those are cooked low and slow in a smoker and served as-is, with BBQ sauce on the side. Whereas, these are cooked first, then sliced, and then each rib is glazed with our beautiful sticky sauce on the grill.

Easy Grilled Sticky Ribs image

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Mix salt, sugar, black pepper, paprika, and garlic powder for dry rub together in a small bowl. Set aside.
  • Line a large sheet pan with heavy-duty aluminum foil. Place rack of ribs on the prepared pan, bone side down. Poke all over with a sharp knife. Make shallow slits across at an angle, and then repeat the opposite way; this allows the dry rub to penetrate. Coat on both sides with rub; flip back over, ensuring the bone side is down. Wrap tightly with foil.
  • Transfer to the center of the preheated oven and bake for 2 hours. Remove from the oven and let cool to room temperature. Refrigerate until cold and firm, at least 2 hours, up to overnight.
  • Preheat a charcoal grill until coals are very ashy and hot.
  • Remove from the refrigerator, unwrap, and brush off excess fat. Slice between the bones to separate each rib.
  • Combine ketchup, brown sugar, soy sauce, vinegar, oil, and cayenne with a spoon in a bowl for glaze.
  • Place ribs on the preheated grill and cook for 2 minutes; flip and brush over glaze. Flip and repeat process until ribs are as caramelized as you prefer, about 10 minutes more.
  • Remove to a plate and brush over one more application of glaze. Serve.
