CUCUMBER AND RAISIN RELISH WITH MUSTARD SEEDS

A quick homemade pickle relish with cucumbers, onions, and golden raisins.

Cucumber and Raisin Relish with Mustard Seeds image

Steps:

  • Bring vinegar, brown sugar, salt, mustard powder, and 1/2 cup water to a boil in a medium pot over high heat, stirring occasionally, until sugar and salt dissolve, about 5 minutes.
  • Place cucumber, onion, raisins, and mustard seeds in a heatproof resealable container. Pour hot brining liquid over cucumber mixture; stir to combine. Let cool to room temperature, then cover and chill at least 2 hours before serving. Serve cool or at room temperature.

1/2 cup apple cider vinegar
2 tablespoons light brown sugar
2 teaspoons kosher salt
2 teaspoons mustard powder
1 medium cucumber (about 1/2 pound), cut into 1/4 inch pieces
1/3 cup finely chopped onion
2 ounces golden raisins (about 1/3 cup)
2 teaspoons mustard seeds

Steps:

  • In large saucepan over medium heat, bring raisins, orange juice, sugar & vinegar to boil, stirring frequently.
  • Reduce heat & simmer, uncovered, 10 minutes.
  • Add cranberries, zest & ginger, & heat to boiling over high heat.
  • Reduce heat & simmer, uncovered, another 10 minutes.
  • Remove from heat & stir in walnuts.
  • Cool, cover & refrigerate. Serve cold.

  • Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened.   • In a small saucepan cook onions in butter with sugar, covered, over low heat, stirring occasionally, for 30 minutes.
