QUINCE ORANGE MARMALADE

Quince sweetens this marmalade as it simmers and fills the house with its distinctive autumn aroma. It's great on toast or bagels for breakfast in the morning! Thanks to our Test Kitchen for the recipe.

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 1-1/2 to 1-3/4 hours or until mixture is reduced to 3 cups, stirring frequently., Cool slightly; carefully mash. Fill all containers to within 1/2 in. of tops. Wipe off top edges of containers. Cool to room temperature. Refrigerate up to 3 weeks or freeze up to 1 year. Thaw frozen marmalade in refrigerator before serving.

5 cups chopped peeled quince (about 4 medium)
1-1/2 cups water
1-1/3 cups sugar
1 cup orange juice
1 tablespoon grated orange zest

QUINCE JAM

Quince makes beautiful jam thanks to its deep pink color once cooked. It's also naturally high in pectin, so it thickens nicely without having to use thickeners. It goes very well with meats and cheeses. Store in the refrigerator for up to 2 weeks.

Steps:

  • Wash quince under running water, removing the fuzzy outer layer with a soft sponge or fruit brush.
  • Heat water and lemon juice to a simmer in a saucepan. Add quince. Bring to a boil and add sugar and cinnamon stick. Reduce heat to a simmer and cook until fruit is soft, about 45 minutes.
  • Remove saucepan from heat; discard cinnamon stick. Mix in lemon zest. Pass hot mixture through a sieve into a bowl to create a semi-smooth consistency. Allow to cool and thicken before pouring into sealable jars.

Steps:

  • Wipe the quince with a tower to remove their fuzz. Rinse them in cold water, peel them, and remove the stem, any remaining blossoms, and hard parts. Cut them into quarters, remove the core and seeds, and cut the quarters into julienne. (Use the cores, skin and sees to make quince juice). In a preserving pan, combine the julienned quince with sugar, orange blossom honey, orange zest, lemon juice and the quince juice. Bring to a simmer and pour into a ceramic bowl. Cover with a sheet of parchment paper and refrigerate overnight. Next day, bring this preparation to a boil in a preserving pan. Skim and keep cooking on high heat for about 10 minutes, stirring gently. Skim if need be and return to a boil. Check the set. Put the jam into jars an seal.

3 lbs quince
1 1/3 cup quince juice or water
2 3/4 cups granulated sugar

Serve this rose-coloured quince jelly as part of a cheeseboard, or alongside pork or game dishes. It's a great way to use up a glut of the fruit

Steps:

  • Put the quince and lemon peel and juice in a large, deep saucepan. Cover with water (you'll need about 3.2 litres) and bring to the boil. Reduce to a simmer and cook for 1 hr 30 mins until the quince is very soft.
  • Line a colander with muslin cloth, and put over a very large saucepan or heatproof bowl. Tip the quince into the lined colander, cover with a clean tea towel and leave to strain for 4-8 hrs until all the juice has dripped out. Discard the pulp, then measure out the strained juice and transfer to a large, deep saucepan (the jelly will bubble up high as it cooks). Add 500g sugar for every 600ml juice.
  • Bring to the boil over a low heat, stirring to dissolve the sugar. Bring to a rapid bubble and cook until the temperature reaches 105C on a sugar thermometer. Remove from the heat and stir in the orange blossom water, if using. Ladle into hot sterilised jars and seal. Will keep in a cool, dark place for up to a year.

  • Peel, core and chop the quince as you would an apple. Simmer them in a bit of water until they turn a rosy color and fall apart (about 30 to 45 minutes). Add water as necessary to prevent the pan from running dry.
  • Stir the quince to help break them up a bit, then add lemon juice and sugar. I like a low sugar recipe, with 2 cups of sugar. The "standard" recipe is 3 cups, so adjust to your own tastes.
  • Pour into prepared canning jars leaving 1/4 inch headspace and either store in the refrigerator for immediate use or process in a water bath canner for 5 minutes.

  • Start by preparing the syrup. Add the water and the sugar to a pot and boil until the liquid becomes thicker. Boil for approximately 15 min on medium fire. Add the lemon juice and zest (from 1 lemon) as well as the quince seeds/peeps. Cut the other lemon into slices (halves or quarters) and add to the syrup too. Reduce the fire to a mnimum.
  • Wash the quince and cut big chunks around the core. Chop or grate the fruit and add to the syrup as you cut or grate the fruit. You can add to a bowl but you will need to be pretty swift as they do oxidate fairly fast getting a brownish flesh.
  • Increase the heat or put the heat back on set to medium and boil the jam for 15-20 min stirring often to make sure it does not stick to the bottom. This also helps to have a feel and know when the syrup consistency is right. If you are not sure, take some syrup out on a super cool (ideally kept in the freezer) plate. Give it a few minutes to cool completely and draw a line in the middle of the syrup patch. If the patch remains separated, your jam is ready. If it reunites - it will have to boil the jam for longer.
