Quinoa Salad image

Steps:

  • Combine quinoa and stock in small pot and bring to a boil. Reduce to simmer and cover. Cook 10 to 15 minutes or until liquid has been absorbed. Let cool completely.
  • In a large mixing bowl, combine cooled quinoa with remaining ingredients. Toss to mix thoroughly.
  • Serve chilled on a bed of greens tossed with a little dressing.

1 cup quinoa
2 cups chicken or vegetable stock
1 hothouse cucumber, diced
2 scallions
1/2 cup roasted red pepper, diced
1/4 cup flat leaf parsley, finely chopped
1 tablespoon fines herbs (recommended: Spice Island)
1/4 cup crumbled feta cheese
3 tablespoons slivered almonds
9 cups spring salad mix
1/4 cup light roasted garlic and balsamic salad dressing

Steps:

  • In a medium saucepan of boiling water, cook the quinoa just until tender, about 10 minutes. Drain well and spread out on a baking sheet to cool. In a large bowl, whisk the olive oil with the vinegar and honey. Season with salt and pepper. Add the escarole, apple, hazelnuts and quinoa and toss to coat. Season with salt and pepper and serve.

1/4 cup red quinoa, rinsed and drained
1/4 cup plus 2 tablespoons extra-virgin olive oil
3 tablespoons apple cider vinegar
1 tablespoon plus 1 teaspoon honey
Fine sea salt
Pepper
1 head of escarole, chopped into bite-size pieces
1 Granny Smith apple-halved, cored and thinly sliced on a mandoline
1/2 cup toasted hazelnuts, chopped
