APPLE RAISIN FRENCH TOAST STRATA
A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.

Steps:
- Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
- In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
- Preheat oven to 325 degrees F (165 degrees C).
- Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

Steps:
- 1. Butter a casserole dish. In a bowl whisk the milk, vanilla, sugar, eggs, maple Syrup, and 1/2 tsp cinnamon together. Set aside.
- 2. Rip bread in to pieces like you would for stuffing. Toss in egg mixture with the apples and raisins. Coat evenly.
- 3. Pour in to a casserole dish. Drizzle melted butter over it. Mix 2 TB sugar with a 1/2 tsp cinnamon. Sprinkle over casserole. Dot with pieces of cream cheese. Cover with saran and put in fridge at least 3 hours or over night .
- 4. Bake at 350 for 35-45 minutes, or until lightly browned. I drizzle a little more butter over it before serving. Serve right away after removing from oven. Dust with powdered sugar, or serve with syrup.
CINNAMON (RAISIN) CREAM CHEESE STRATA
I like to make this when we have overnight guests. They can enjoy their morning coffee and maybe some fruit while it bakes.

- 1. Preheat oven to 350 degrees. Butter a 2 1/2 quart casserole or 9x13 Pyrex pan.
- 2. In a large bowl, combine lightly beaten eggs, milk cinnamon and 1/4 cup maple syrup.
- 3. Place a layer of buttered bread in the bottom of prepared baking dish. Sprinkle with 1/2 cream cheese. Repeat with another layer of bread. The shape of your pan decides how many layers you will make.
- 4. Slowly pour egg mixture over top and sprinkle with remaining cream cheese cubes. Let stand one hour or cover and refrigerate up to 24 hours.
- 5. Set baking sheet on lowest rack of over to catch any drippings. Bake strata, uncovered, on middle shelf until top is nicely browned and bubbly. About 1 hour.
- 6. Serve with warm maple syrup.
RAISIN CINNAMON STRATA
We make for Christmas morning. Serve with warm maple syrup and breakfast sausage!! Make the day before and bake while you open presents!!

- In small bowl, combine butter and cinnamon; spread over one side of each slice of raisin bread.
- Place 4 slices, buttered side up, in a greased 8-in. square baking dish and sprinkle with 2 T. brown sugar.
- Repeat with remaining raisin bread and brown sugar.
- Whisk eggs, milk, syrup, and vanilla in a large bowl; pour over bread.
- Cover and refrigerate overnight.
- Remove from refrigerator about 30 minute before baking.
- Bake, uncovered, at 350 degrees for 40-50 minute or until puffed and golden. Serve with maple syrup.

CINNAMON RAISIN BREAD
This bread is good right out of the oven or stored for several days and used for toast.

- In the bowl of an electric mixer, combine 1/4 cup warm water and yeast. Let sit until yeast is foamy, about 10 minutes. Add flour, powdered milk, sugar, salt, 3 tablespoons melted butter, and 1 3/4 cups warm water. Mix, using the paddle attachment, on low speed for 1 minute. Change to dough hook, and mix on medium-low speed for 7 minutes. Or knead by hand, 15 or 20 minutes. Add raisins, and mix on medium-low speed until dough is firm but not dry, 3 minutes.
- Transfer to a lightly floured surface, and knead by hand into a ball. Place dough, smooth side up, in a large, lightly oiled bowl. Cover with plastic wrap; let rise in a warm place until doubled in bulk, about 1 1/2 hours.
- Butter two 9-by-5-inch loaf pans generously, and set aside. In a small bowl, combine sugar and cinnamon, and set aside. Transfer dough to a lightly floured surface, and cut in half. Cover one piece of dough loosely with lightly oiled plastic wrap.
- Press the other piece of dough into a 10-by-12-inch rectangle. Brush with half of the beaten egg, sprinkle with half the cinnamon sugar, and drizzle with half the melted butter. Rub the surface with the back of a spoon to blend butter and cinnamon sugar. Starting at a short end, roll up dough tightly, and pinch together along crease. Roll the dough back and forth to make it cylindrical, and pinch the ends together. Transfer to a loaf pan, seam side down, and cover loosely with lightly oiled plastic wrap. Repeat process with second piece of dough. Let loaves rise in a warm place, 45 minutes to 1 hour. Thirty minutes before this final rise is completed, place a baking stone, if using, in the lower third of oven. Heat oven to 425 degrees.
- Brush tops of loaves with egg white, and sprinkle each loaf with 1 1/2 teaspoons sugar. Bake 15 minutes; lower oven to 400 degrees, and bake 15 minutes more. Remove from oven; cool on a wire rack for at least 30 minutes before slicing.
