Ramsay's Spiced Apple Cake image

Steps:

  • Peel, core, and slice the cooking apples, then place in a wide pan with the sugar and butter. Cook over high heat for 10 to 15 minutes until the apples have broken down to a pulp and an excess water has cooked off. Transfer to a bowl and cool completely (you should have about 1 lb of puree).
  • Heat the oven to 325°F Line and lightly grease a 9-inch cake pan with a removable bottom. Peel, core, and finely slice the Braeburn apples, using a mandoline or sharp knife. Place in a bowl and pour over most of the lemon juice and a splash of water, then set aside.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt, sugar, and ground spices. Make a well in the center and add the egg, olive oil, and apple puree. Fold into dry ingredients until just combined.
  • Transfer the mixture to the prepared cake pan and gently level the top with a spatula. Bake the cake for 30 minutes until it feels just firm to the touch in the center.
  • Working quickly, overlap the sliced apples in concentric circles on rop, leaving a margin around the edge. Brush the slices with a little lemon juice and return to the oven for anoher 30 - 35 minutes until a skewer inserted in the middle comes out clean.
  • Let the cake cool slightly before unmolding onto a rack. Warm the apricot jelly with the water, stirring until smooth. Brush over the top of the cake to glaze and serve warm.

2 lbs cooking apples (about 5 or 6)
1/4 cup superfine sugar
2 tablespoons butter (plus extra to grease)
2 ripe braeburn apples
1 lemon, juice of
1 1/3 cups whole wheat flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg (fresh grated if possible)
1/2 teaspoon ground cloves
1 large egg, beaten
1/4 cup light olive oil
2 tablespoons apricot jam (to glaze)
1 -2 tablespoon water

SPICED APPLE CAKE

A simple spice cake laden with fresh apples, this dessert can be made in no time. If guava jam is not easily found in your area, feel free to substitute plum, cherry or any preserves you have on hand. It's also a terrific brunch cake that begs for a great cup of coffee.

Steps:

  • Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip eggs until frothy, about 3 to 4 minutes then add oil and orange juice and mix thoroughly. Add dry ingredients and beat with whip at low speed until thoroughly combined.
  • Fold in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or until firm on top. Cover with aluminum foil if top gets too brown. Cool on rack 5 minutes, then invert onto rack and cool completely. Serve with guava cream cheese topping spread over the top.
  • Mash all ingredients in a bowl with a fork until light and fluffy.

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
  • Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
  • For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
  • Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.

  • Mix sugar and apples in a large bowl and leave to sit for a few minutes.
  • Blend melted butter and egg into apple and sugar.
  • Sift in dry ingredients, along with sultanas and walnuts.

Steps:

  • Place all the raisins in a small bowl with the rum and let sit overnight or at least 4 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking pan.
  • In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time; mix in applesauce.
  • In another bowl, stir together the flours, cornstarch, baking soda, cinnamon, nutmeg, salt, and cocoa. Gradually add flour into the batter, mixing until fully incorporated. Stir in the raisins, along with any rum that was not absorbed, and the walnuts. Turn batter into the prepared pan.
  • Bake in preheated oven until a tester inserted in the middle of the cake comes out clean, about 25 minutes. Cool on wire rack.

Mum's Easy Spiced Apple Cake image

Steps:

  • Make the topping first by placing all the topping ingredients into the food processor bowl and process with the metal chopping blade until the butter is chopped into small pieces. Do not over process or the rolled oats will be chopped too fine.
  • Tip topping out of the bowl.
  • Cake:.
  • Without washing the bowl add in the apples which have been cored and cut into about 12 pieces. There is no need to peel them first.
  • Process with metal blade until cut into fine pieces.
  • Add the remaining cake ingredients. It is not necessary to sift the dry ingredients first but make sure the baking soda is not lumpy.
  • Line the base of a 9"/23cm tin with baking paper & butter or spray the sides.
  • Pour batter into prepared tin.
  • Sprinkle over the topping mix.
  • Bake at 350'F/180'C for approx 40-45 minutes or until the sides of cake shrink from the edge of the tin and the centre springs back when pressed lightly.
  • Serve hot, warm, reheated or cold with whipped cream and/or custard as a dessert or cold in lunchbox.
