SPINACH AND CHEESE STUFFED CHICKEN BREAST #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. I love creating my own recipes and menus for people. I have been doing this since I was about 12 years old. I put together a birthday party with lots of freshly prepared food and cake that I prepared for my mom. I had help from my cousins and friends who were my assistants and servers. The party was a great success and I have been doing this ever since. I made this chicken dish 8 years ago and it was the only thing different my mom would eat so I made sure I perfected the dish just for her and of course others. I usually brine my chicken in a mixture of salt, brown sugar and water for at least 45 minutes

Steps:
- Butterfly chicken breast and drizzle with olive oil.
- Sprinkle chicken breast with Hidden Valley Seasoning and Dressing Mix and set aside.
- In a saute' pan cook spinach until spinach has started to cook down. Remove spinach from heat and add to a medium bowl with Parmesan cheese, half of the mozzarella cheese, bread crumbs and beaten egg and olives. Mix all ingredients until well incorporated.
- Place a large spoonful of spinach mixture in the middle of each chicken breast and fold over, covering the spinach mixture completely.
- Sprinkle with remaining cheese and place on baking sheet and bake on 350 degrees for 20-25 minutes or until thermometer reaches 165 degrees when chicken is tested.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheet with vegetable oil.
- Put bread crumbs and ranch dressing into separate bowls.
- Dip chicken into ranch dressing and press into bread crumbs to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange onto prepared baking sheet.
- Bake in preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

RANCH MOZZARELLA CHICKEN #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. This is a lovely makeover of a tried-and-true recipe I've used for all of my married life (almost 10 years). With the ranch flavoring, it dresses it up and makes it a great recipe for weekends or a special company meal. I love it because the prep time is very low. I can pop it in the oven and pull out a meal that looks and tastes like it took me hours to prepare. Over a bed of rice with a side salad or green vegetable, it makes an attractive display.

- Set oven for 350 degrees Fahrenheit.
- Mix together bread crumbs, parmesan cheese and Ranch mix in a small bowl.
- In another small bowl, beat two eggs with a fork.
- Dip the chicken breasts first in the beaten eggs, and then in the bread crumb mixture. Lay them in a casserole dish.
- Scatter the shallots over the chicken breasts.
- Place the mozzarella slices over the shallots, completely covering all the chicken in the dish.
- Spread Ranch dressing from the bottle over the mozzarella. Use a knife to smooth it out so that a thin layer of the dressing covers all the cheese.
- Put the chicken in the oven and bake it for 1 hour but check it at 45 minutes. The cheese should be golden brown and the chicken tender and delicious.

RANCH PRETZEL CHICKEN #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. Chicken breast strips breaded with a ranch pretzel mixture makes for great dipping! I've seen versions of this recipe but I like my version better because it uses the Hidden Valley Ranch dip mix for a more concentrated Ranch flavor along with a brightness from the lemon, a crunch from the pretzels, and it's finished off with cheese.

- 1. In a food processor combine the pretzels, Ranch Dip packet, Parmesan cheese, lemon zest, black pepper, and paprika. Pulse until the pretzels become crumbs.
- 2. Place the pretzel mixture in a shallow dish. In a separate dish combine the Greek yogurt and Ranch Dressing.
- 3. Heat the olive oil in a large skillet over medium heat.
- 4. Dip the chicken into the yogurt mixture and then place in the pretzel mixture. Press down on the mixture to make it stick to the chicken. Place in the pan and saute for 4-6 minutes per side or until the internal temperature of the chicken reads 170 degrees.
- 5. Remove and place on a paper towel to drain. Serve with dipping sauces.

I once orderd a chicken breast similar to this at a quaint, local Italian restaurant and was surprised how wonderful it was. As it was not on the regular menu I had to figure out how to make it at home. Hope you like it as much as I do. It is also wonderful as a cold leftover or sandwich the next day.

- Preheat oven to 350 degrees.
- Mix softened cream cheese with Hidden Valley Ranch Seasoning Mix, grated carrots, chopped walnuts and green onions and set aside.
- Melt butter and spread about 1 tbs into the bottom of a glass casserole dish.
- Mix bread crumbs and parmesan cheese together and set aside.
- Pound chicken breasts between plastic wrap to very thin (as flat as a coin.) Even if they start to fall apart a little you can still roll them.
- With a butter knife thinly spread equal amounts of cream cheese mixture on one side of each flattened chicken breast being sure to cover all the way to the edges. Now roll them up tightly gathering the edges as you go to be sure and make a tight roll.
- Dip each chicken roll in the remaining melted butter being sure to cover all over and then roll in bread crumb parmesan mixture. Set in the glass casserole dish.
- Drizzle any remaining butter evenly over the chicken rolls.
- Bake in 350 degree oven for 18 minutes (15 if using smaller chicken breasts.) Remove and let stand for about 5 minutes before cutting into slices like pinwheels.
- Serve with a lovely salad or veggie and more Ranch Dressing for dipping.
