MAMA'S SWEET POTATOES
Again, trying to capture all the old family recipes of cooks passed on. This one is easy, nothing fancy, not anything actually home made. But oh, what memories!

Steps:
- 1. In saucepan, cook sweet potatoes, liquid, and brown sugar over low heat about 20-30 minutes, until syrup forms and cooks down nice and thick. Stir occasionally to prevent sticking. You might want to cut some of the larger potato pieces into smaller chunks, but leave them chunky. My mother never mashed her sweet potatoes.
- 2. Place cooked sweet potatoes into a greased casserole to fit - usually about a 2-quart dish. Top evenly with the marshmallows. They should be nice and thick and cover the potatoes well. Use more than half the bag if you need to.
- 3. Bake at 350 degrees about 20-25 minutes, until marshmallows are puffed and browned. May serve hot, or allow to cool to room temperature (that's usually how we had them, because they would have to sit out while the dressing and other dishes were in the oven).

- Place potatoes, onions, and pineapples into shallow rectangular roasting pan, ensuring that they make a single layer.
- Drizzle oil and balsamic vinegar over potato medley and toss until well coated.
- Sprinkle rosemary, salt and pepper evenly and toss once more.
- Roast in preheated oven at 450 degrees F. for 40-50 minutes or until potatoes start to brown. Turn occasionally while cooking to brown evenly.
MAMA'S FAMOUS SWEET POTATO PIE

Steps:
- Puree all ingredients in a blender.
- I have to do this in 2 batches to fit all the ingredients.
- Pour each batch into a large container with a pouring spout (I use a plastic juice pitcher).
- Pour filling into a uncooked pie crust.(This recipe will make 2 deep dish pies).
- Bake in a 350 degree oven that has been preheated for approximately 1 hour.
- I cover the edges of the crust with foil to prevent over browning. I remove it after 30 minutes and rotate the pies so they cook evenly.
- Allow to cool completely before slicing. Enjoy!

JO MAMA'S SWEET POTATO PIE
I have been on a quest to find the best (at least my family's favorite) sweet potato pie. This has been the reigning champion to all since 1992. At Thanksgiving, I cook it and a new contender each year. I am adding strong contenders to my cookbook as well.

- Blend sweet potatoes with butter.
- Add eggs, sugar, nutmeg, vanilla and cinnamon; stir in milk.
- Turn into pastry shell and bake at 350 degrees for 1 1/2 hours.
MAMA'S CANDIED SWEET POTATOES
The combination of orange juice with sweet potatoes is outstandingly delicious! My mother was a great cook. Her dishes always had plenty of exciting flavors. I'm passing on one of her favorites which we enjoyed.

Steps:
- Boil sweet potatoes for 30 minutes. Let potatoes cool and then peel. Cut into quarters.
- Place in a large saucepan and add butter, orange juice, syrup and sugar.
- On top of stove cook at low heat for about 1 3/4 hours to glaze potatoes. Tilt saucepan often to coat all potatoes. Place oranges slices in pot 30 minutes before serving. (She never used a crock pot, but I bet it would work as well.) Freezes well -- just reheat and serve.
