LEMON-RASPBERRY FRENCH TOAST STRATA

Steps:
- Arrange rack in center of the oven and preheat to 350°F.
- Lightly butter 9- by 13-inch glass baking dish or 14-inch oval gratin dish. Pour in maple syrup; scatter bread cubes and raspberries in dish.
- In large bowl, whisk together eggs, milk, lemon zest, and salt; pour over bread cubes.
- Bake strata until puffed and golden brown, about 45 minutes. Transfer to rack to cool 5 minutes, then serve warm with additional maple syrup.

- Preheat oven to 325 degrees F. Lightly grease a 9- by 13-inch baking dish with cooking spray. Arrange half the bread in dish, overlapping and wedging pieces to cover the bottom.
- In a large bowl, whisk together 5 eggs, then add milk, cream, 2 tablespoons. sugar, vanilla, nutmeg, and salt and whisk again. Pour half of custard over bread in dish, letting it soak in thoroughly. Set remaining custard aside.
- To make filling, use a handheld or stand mixer to beat together goat cheese, cream cheese, butter, remaining egg, and remaining 2 tablespoons sugar in a large bowl until soft and fluffy, about 1 minute. Drop half of filling over bread in large spoonfuls, gently spreading it out with the back of the spoon. Repeat process with half of jam. Arrange remaining bread in a layer, then repeat process with custard, goat cheese filling, and jam. Swirl a butter knife through the top layers of cheese and jam to create a decorative design. (At this point, the strata can be baked immediately or covered and refrigerated overnight.).
- Bake for about 50 minutes, or until the strata is puffed, firmly set, and golden brown. Set aside to cool for 10 minutes, then dust with confectioners' sugar, cut into squares, and serve.

SALMON GOAT CHEESE BREAKFAST STRATA
When we grill out, we always end up with too much salmon! This is a tasty way to use up a leftover fillet (and any bits of baked potato), and makes for a nice change from eggs at breakfast.

Steps:
- Saute' onion in butter until soft; set aside.
- Place bread slices in single layer in 9" x 9" baking dish.
- Spread goat cheese on bread.
- Crumble salmon onto bread, top with chopped cooked potato and onion.
- Beat eggs and cream together, add seasonings.
- Pour egg mixture over all, cover, and put in refrigerator overnight (or at least 2 hours).
- Bake at 350 until puffed and browned, about 30 minutes.

PROSCIUTTO AND GOAT CHEESE STRATA

- Line bottom of 13x9x2-inch glass baking dish completely with 1 layer of bread, cutting some slices to fit. Arrange half of prosciutto evenly over bread. Sprinkle half of goat cheese and half of provolone over. Sprinkle with half of green onions and half of basil. Top with second layer of bread. Layer remaining prosciutto, goat cheese, provolone, green onions, and basil atop bread. Cut remaining bread into 1/4-inch cubes. Sprinkle over top.
- Whisk eggs, milk, mustard, and salt in bowl. Season with pepper. Pour egg mixture over strata; press down on bread with spatula. Drizzle melted butter over strata. Cover and refrigerate overnight.
- Preheat oven to 350°F. Uncover strata and let stand at room temperature 30 minutes. Bake until center is set, about 1 hour. Remove from oven. Preheat broiler. Place strata under broiler until top is golden, about 30 seconds. Cut into large squares and serve.
GREEN STRATA WITH GOAT CHEESE AND HERBS
This herb-infused savory bread pudding makes an excellent brunch dish or a light dinner. It gets its hue from a copious amount of braising greens pureed into the custard - baby kale, mustard greens, chard. Use all of one or a combination. The bread cubes can soak for up to 24 hours before baking, so plan on assembling this in advance. But don't bake it until just before serving. You want the eggs on top to still have their bright yellow, runny yolks. If you're not a goat cheese fan, substitute dollops of fresh ricotta instead.

- In a medium pot, bring milk and cream to a simmer.
- Meanwhile, place greens, herbs, cheese, salt and pepper in a food processor fitted with the blade attachment. Once the hot milk mixture comes to a simmer, pour over greens and purée until smooth. Pour into a bowl and let cool completely. Once cool, whisk in 6 eggs.
- Lightly oil a 9-by-13-inch baking pan. Scatter bread cubes over bottom of pan. Pour custard over bread and press down so the bread absorbs the custard. Cover with plastic wrap and refrigerate for at least 4 hours. If you can, stir bread cubes after an hour or so to encourage an even distribution of custard.
- When you are ready to bake the strata, heat oven to 350 degrees. Tuck the goat cheese rounds into and on top of the strata. Transfer pan to oven and bake until top is beginning to firm up but is still slightly wet underneath, about 25 minutes.
- Remove pan from oven and use a spoon to make 6 evenly spaced indentations on the surface of the strata. Crack an egg into each hole and season with salt and pepper. Return pan to oven and continue to bake until strata is cooked through and eggs are just set, 20 to 25 minutes more. Sprinkle with Aleppo or Turkish pepper if desired.

BREAKFAST STRATA
This is the only breakfast casserole I make. It's worth the effort. You could probably throw some breakfast sausage in here instead of the ham and bacon. This one has to sit overnight in the refrigerator before baking in the morning.

Steps:
- In a skillet, cook bacon until done.
- Remove bacon from skillet, leaving drippings in the pan.
- Add ham and onion to skillet.
- Cook and stir until onion is tender.
- Drain grease from ham and onion.
- In a bowl, combine bacon, ham, and onion.
- In a greased 13x9x2 baking dish, layer half the bread cubes, potatoes, and cheese, in that order.
- Top with all of the bacon mixture.
- Repeat another layer of bread, potatoes, and cheese.
- In a bowl, beat the eggs.
- Add milk, Worcestershire sauce, mustard, salt, and pepper to the eggs.
- Pour over all in the baking dish.
- Cover and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking.
- Bake, uncovered, at 325 degrees for 65-70 minutes or until a knife inserted near the center comes out clean.

I got this recipe off of Recipe Link posted by Gladys - and it is SO good and perfect for holiday or anytime! It was so nice to prepare this the night before and be able to just throw it in the oven Christmas morning! Everyone LOVED it!

- The NIGHT BEFORE:.
- In large skillet, cook bacon until crisp.
- Drain off excess bacon fat, but keep a little in skillet in order to cook onion.
- Add onion, ham and chopped bacon to skillet and cook until onion is tender and transparent.
- Butter a large baking dish - I used a glass lasagna dish.
- Layer the bread to cover bottom of dish - will use probably 5-6 slices or half the amount of bread cubed.
- Add half of potatoes and cheese.
- Top with bacon, onion and ham mixture.
- Add remaining pieces of bread, potatoes and cheese.
- In large bowl, beat eggs, milk, Worcestershire sauce, mustard, salt and pepper.
- Pour this mixture evenly over the ingredients in baking dish.
- Cover and chill OVERNIGHT in the refrigerator.
- The NEXT MORNING:.
- Remove strata from the refrigerator and bring to room temp (about 30 minutes prior to baking).
- Preheat oven to 325°F.
- Bake uncovered for 1 hour or when knife is inserted near center and comes out clean.
