RASPBERRY PEAR CRISP

I made this easy and delicious dessert for a family dinner. Everyone loved it, even my 21 year old brother, and if he had something good to say about his sisters cooking it must really be amazing! He who only knows how to cook kraft dinner asked for the recipe. Next time I'll have to make a double batch! PSST! I found it in the Taste of Home 2005 Annual Recipes.

SPRING DELIGHT OATMEAL (RASPBERRY PEAR)

My mom and I came up with the idea for this yummy spring time oatmeal one day while we strolling through the grocery store and spotted cartons of fresh raspberries just in for spring. You are more than welcome to try adjusting any ingredients to your preferences- this is just how I think it tastes best! Quick tip: Make sure to soak any materials that come in contact with cooked oats. Otherwise, they dry to to the surface and are nearly impossible to clean off! For the pears, one of the Dole, or Del Monte fruit cups works great!

Steps:

  • Drain the pears, reserving the juice separately.
  • Bring 3/4 cup water (less for thicker oatmeal, more for thinner), pear juice, and salt to a boil.
  • Meanwhile, microwave the pears uncovered for about 10-20 seconds, or until they've begun to soften.
  • Add the raspberries to the pears and sprinkle the sugar over them. Stir together.
  • Add oats to the boiling mixture. Stir occasionally for 2 minutes over medium heat.
  • Put the fruit mixture in the oats and stir occasionally for another 2 minutes.
  • Put about 2 tablespoons of raspberry yogurt into the mix and stir well. Cook for about 1 more minute.
  • Take off the heat. Oats should be golden brown and the fruit, particularly the raspberries, should have begun to break down. Overall mixture should have a pleasant creamy-pink color.
  • Serve warm immediately, or let it rest a moment to set up a little.

RASPBERRY DELIGHT

Refreshing dessert, fit for company but easy enough to make for a family dinner. Prep time includes refrigeration for the jello to start to set, I'm guessing it takes around 20 minutes or so. I prefer this recipe with fresh raspberries, but frozen works just as well. The serving size is also an estimate, I used a lasagna pan to make it in and it served 13 last Thanksgiving - it really depends how big you cut the squares.

RASPBERRY PEACH DELIGHT

A friend gave me this recipe years ago. She used all sugar-free, low-fat ingredients to make it suitable for diabetics. I lost the recipe but a JAP friend found it in a magazine. My original version is only slightly different. This tastes like a wonderful, light summery dessert and no one will know it's a diabetic dessert.
