- For raspberry sauce:
- Puree raspberries, white wine vinegar, and sugar in blender until smooth. With blender running, gradually add safflower oil. Add water by teaspoonfuls as needed to thin to desired consistency. Season raspberry sauce to taste with salt and pepper.
- For chicken:
- Preheat oven to 375°F. Mix hazelnuts, panko, 1 tablespoon coarse salt, and 2 teaspoons pepper in shallow bowl.
- Mix honey mustard, mint leaves, mayonnaise, Dijon mustard, remaining 1 teaspoon coarse salt, and remaining 1 teaspoon pepper in bowl. Add chicken; coat.
- Dip chicken pieces, 1 at a time, into crumb-nut mixture, coating both sides and pressing to adhere. Transfer coated chicken pieces to baking sheet.
- Divide equal amounts of butter and peanut oil between 2 large nonstick skillets; heat over medium-high heat. Add 2 chicken pieces to each skillet; reduce heat to medium and cook until chicken is light brown, about 4 minutes per side. Place chicken on rimmed baking sheet; transfer to oven. Roast chicken until cooked through, about 15 minutes.
- Divide salad greens among 4 plates; top with chicken. Garnish with fresh raspberries and serve raspberry sauce alongside.
WALNUT-CRUSTED CHICKEN BREAST
I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

- Mix garlic, 2 tablespoons Dijon mustard, and thyme together in a bowl to make the "nut glue."
- Season chicken breasts generously with salt, pepper, and cayenne. Spread nut glue all over the chicken. Refrigerate until ready to use.
- Toss walnuts over the chicken, press down firmly, and repeat on the other side to coat thoroughly. Refrigerate for 1 1/2 to 3 hours.
- Preheat the oven to 375 degrees F (190 degrees C).
- Coat the bottom of an oven-proof skillet with some olive oil. Place chicken breasts on top, reserving excess nuts if desired. Season with a pinch of salt and drizzle more olive oil on top.
- Bake in the center of the preheated oven until walnuts are lightly toasted and an instant-read thermometer inserted into the thickest part of a breast reads 150 degrees F (66 degrees C), about 25 minutes.
- Quickly remove chicken to a plate to rest. Transfer skillet to the stovetop; stir in broth, 1 tablespoon Dijon mustard, and honey and bring to a boil over high heat; cook until reduced by about half, 3 to 4 minutes. Spoon pan sauce over and around the chicken to serve.

- Season chicken with thyme and salt on both sides. Set aside.
- Heat oil in skillet over medium heat. Cook onion until browned and soft.

- 1. Start smoker at 275' to 300' range, and then refrigerate the 2 bottles of Raspberry walnut salad dressing. Chilling it down reduces any bacteria growth on chicken. Also chilling the chicken reduces bacteria growth. Optimal temperature is below 40'F. Once chilled use a 1 gallon freezer bag and put chicken in it and 1 whole bottle of salad dressing. We marinate it for 3 or 4 hours and discard the marinate afterwards.
- 2. Pat chicken simi-dry after marinating, do not rinse off. Chicken will be very pink from raspberry, and wetness will be binder for chicken rub. Next sprinkle rub underneath chicken skin and on top of chicken. Tuck chicken skin underneath. At this point, if smoker is up to temp, place chicken on smoker skin side up. Smoking for 1 hour, spraying with apple juice, then turning chicken over after 1st hour. Continuing to spray every 30 minutes. After 2 hours cooking/spraying chicken, we glaze with raspberry walnut bbq sauce (see recipe next). After cooking 2 hours, chicken should be tender and moist.
- 3. Next, make raspberry walnut bbq sauce. Empty 1 bottle of salad dressing into a bowl, squeeze ketchup into empty salad dressing bottle as a measure of equal parts and squeeze that ketchup into same bowl. Then measure honey into salad dressing bottle, and squeeze honey into bowl. You will have approximately equal measures of each in bowl. Stir mixture well. Glaze the chicken and let sit on smoker for about 5 minutes to thicken. Chicken is done in 2 hours, but glaze can set in just a few minutes on a hot smoker.

- Place cereal and walnuts in processor and ground finely then place in shallow dish.
- Combine butter, garlic, salt and pepper in shallow dish.
- Dredge chicken in butter mixture then in cereal to coat.

- When you are ready to cook the next day preheat oven at 350°F. Remove marinated chicken and put chicken on a cookie sheet.
- Put chicken in oven and bake for 1 hour. When the hour is up, remove chicken from oven cut the chicken lightly with a kitchen knife to make sure it's done. If there is still a little pink, replace chicken back into oven and continue cooking for 15-20 more minutes. When that time is done check chicken again. If the chicken is done, remove from oven.

- Remove excess fat from chicken breasts; place them in sealable plastic bag or non-aluminum bowl.
- Combine remaining ingredients; pour evenly over chicken breasts.
