BAKED SPINACH RAVIOLI

- Preheat the broiler. Melt the butter in a large ovenproof skillet over medium-high heat. Add the onion, garlic and rosemary and cook, stirring often, until the onion is soft and just starts browning, about 6 minutes.
- Sprinkle in the flour and cook, stirring, until smooth and bubbling, about 2 minutes. Stir in 2 cups water, the milk, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat to a gentle simmer. Stir in the ravioli and cook, stirring occasionally, until the ravioli are tender and the sauce thickens, 5 to 7 minutes.
- Remove from the heat. Discard the rosemary sprigs and stir in the spinach. Sprinkle with the mozzarella and grana padano. Place the skillet under the broiler until golden and bubbling, about 5 minutes.
SPINACH ALFREDO PASTA BAKE

- Bring a large pot of water to a boil. Cook the pasta in the boiling water, draining it about 2 minutes before the time on the package. It should still be a bit firm. Rinse it in cold water to stop the cooking process and set aside.
- Mix the ricotta with the parsley and lemon zest in a small bowl and set aside.
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
- In a large deep skillet over medium-high heat, melt 2 tablespoons of butter. Add the mushrooms and season with salt and pepper. Cook until the mushrooms have given up their liquid, 5 to 6 minutes. Add the spinach and garlic and cook, stirring frequently, until the spinach has wilted. Remove the vegetables and set aside, leaving any liquid in the skillet.
- Add 2 tablespoons of butter to the skillet. Pour in the wine and let it bubble up and reduce for 1 1/2 to 2 minutes. Add the half-and-half and cream, season with salt and pepper and cook, whisking, until it's all combined. If it gets too thick as it cooks, you can thin it with a little vegetable broth. When the sauce looks good, remove it from the heat and stir in 3/4 cup of the Parmesan.
- Melt the remaining 2 tablespoons butter in a small pan. Remove from the heat and stir in the breadcrumbs and remaining 1/4 cup Parmesan.
- In the buttered baking dish, stir together the pasta, vegetables and sauce. (Add a splash of broth if needed). Add spoonfuls of the ricotta mixture, pushing them a bit into the pasta. Sprinkle the breadcrumb mixture over the top of the pasta. Cover and bake for 20 minutes. Uncover and cook until the top is brown and the mixture is bubbling, about 20 minutes more.
RAVIOLI - SPINACH - ALFREDO BAKE - CASS'S
This ravioli is out of this world delicious. It's also a good way to get those veggies into the kiddos. Funny thing is...both my kids love Spinach, especially when I cream it with garlic. So, that is where I came up with the recipe..It's been a hit with them for years.. Also, I have had people try this that swore they didn't...

- 1. Preheat oven to 350 degree F. Spray a 9 x 13 x 3 inch baking dish with nonstick cooking spray.
- 2. Make the sauce: In a medium saucepan over medium high heat, bring the chicken stock to a slow boil. Reduce the heat to medium and stir in the cream, corn starch, garlic. Bring to a soft boil and stir for one minute. Reduce heat to low, add parmesan cheese, salt and pepper. Let simmer for about 10 mins to melt cheese, let thicken. Set aside
- 3. In your baking dish, spread enough Alfredo sauce to cover evenly.
- 4. Next, spread some spinach evenly onto the sauce.
- 5. Next, lay single layer of ravioli, cover with cheese ( I don't use sparingly), more Alfredo sauce ( I use a ladle, approx 1/2 cup ). Spread the sauce evenly.
- 6. Repeat the steps until out of spinach, sauce and ravioli. ( end with ravioli and top with lots of cheese. I don't measure the cheese, just put enough on to cover. I then sprinkled the top with hot pepper flakes and dried parsley. I ended up with 5 - 6 ravioli's left over.
- 7. Bake for 50 - 55 minutes or until bubbly and cheese begins to brown. I let it sit for 5 - 10 minutes before cutting.
- 8. I hope you enjoy this as much as my family and friends do..it is out of this world good!
SPINACH RAVIOLI CASSEROLE WITH ALFREDO SAUCE
I would normally make my own sauce & ravioli but I have been rushed, then realized that I had this in the fridge and threw this recipe together. I enjoyed it and hope that you will too.

- Lightly grease a 9 x 9 x 3-inch oven proof dish.
- Preheat oven to 350°F.
- Pour enough Alfredo sauce to cover the bottom bottom of the casserole (approx 1/2").
- Top with a single layer of ravioli, a third of the mushrooms and 1/3 of the mozzarella.
- Sprinkle with 1/3 of the chili flakes and 1/3 garlic, season with salt & pepper.
- Repeat layers saving 1/3 of the mozzarella & the parmesan.
- On the last layer pour in the chili sauce spreading it evenly over the top.
- Cover the casserole with foil; bake for 45 minutes, remove foil.
- Top with remaining mozzarella & the parmesan, continue to bake uncovered for approx 15 minutes or until the top is beautifully browned.
- Rest 10 minutes and serve.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a rolling boil; boil the ravioli until it floats and the filling is hot, 6 to 8 minutes; drain.
- Melt the butter in a skillet over medium heat. Add the chicken to the skillet, season with the Italian seasoning, and cook and stir until the chicken is no longer pink in the middle, about 15 minutes.
- Spread about 1/2 cup of Alfredo sauce into the bottom of the prepared baking dish. Arrange enough ravioli over the sauce to cover the bottom of the dish completely. Top the ravioli with about half the cooked chicken. Sprinkle 1 cup of the mozzarella cheese over the chicken; season with salt and pepper. Repeat the layers until all ingredients are used.

RAVIOLI IN SPINACH ALFREDO SAUCE

- Bring 2 cups of water to boil and add the spinach pouch. Bring back to a boil and cook for 3 minutes. Then add the ravioli, return to a boil. Reduce heat and simmer for 5 minutes until the ravioli float. Pour contents of pot into a colander.
- Remove the spinach pouch from the colander and cut open. Pour spinach into a large skillet. Add alfredo sauce and mix gently to blend. Heat over medium heat 4-5 minutes until the mixture just begins to bubblee, stirring frequently.
- Add the cooked ravioli and stir to coat. Heat gently. Sprinkle with 1/2 cup cheese.
- NOTE: To make your own Alfredo Sauce: Combine a stick of butter, about 1-2 cups Parmesan cheese and about 1/2 cup of cream or milk in a saucepan. Cook till the sauce thickens slightly. You can add a little garlic to this sauce, also.
