Ravioli of Smashed Fava Beans, Mint and Ricotta image

Steps:

  • If the fava beans are very small and soft, you can use them raw. If they are medium to large, blanch them until just tender in unsalted boiling water (remove the skins after blanching if they are slightly tough). Smash or finely chop half the beans and leave the other half whole.
  • Put all the beans into a bowl with the chopped mint (added to taste), olive oil and ricotta. Lightly fork this through, adding the Parmesan, lemon juice and seasoning to taste. Stuff the ravioli with the filling and cook them in gently boiling salted water for around 3 to 4 minutes, until tender. Drain carefully.
  • Serve drizzled with a little extra olive oil, and scattered with the extra fava beans, some chopped mint, olive oil and some freshly grated or shaved Parmesan.

9 ounces podded fava beans, plus extra for garnish
1 small handful fresh mint, picked and chopped, plus extra for garnish
2 tablespoons olive oil, plus extra for garnish
5 to 6 ounces ricotta
1 handful grated Parmesan, or to taste, plus extra for garnish
1 lemon, juiced
Salt and freshly ground black pepper
1 pound basic pasta, for ravioli

White Bean Ravioli with Brown Butter and Caper Sauce image

Steps:

  • For the ravioli:
  • In a blender, puree together the beans, egg, vinaigrette, cheese, and Italian seasoning; set aside.
  • Working in batches, so the wrappers don't dry out, lay out 6 to 8 wonton wrappers. Place 1/2 tablespoon of bean mixture in the center of each. Moisten 2 connecting edges of the wonton wrapper with your finger dipped in water.
  • Fold wrapper in half to form a triangle. Press edges together to seal. Repeat with remaining wonton wrappers and filling.
  • Meanwhile, bring a large pot of salted water to a low boil.
  • For the sauce:
  • Melt butter in a large skillet over medium-high heat. Cook until it begins to brown and have a nutty aroma. Turn off heat and stir in capers and Italian seasoning.
  • Working in batches, cook ravioli in boiling salted water until just tender, about 3 minutes. Using slotted spoon, transfer ravioli to hot butter sauce. Add parsley to pan. Use a spoon to coat ravioli with sauce. Transfer to plates and add salt.
  • Serve immediately garnished with grated Parmesan.

1 (15-ounce) can cannellini beans
1 egg
3 tablespoons balsamic vinaigrette
1/2 cup freshly grated Parmesan

24 wonton wrappers (recommended: Dynasty)
1/2 cup unsalted butter (1 stick)

1 teaspoon Italian seasoning (recommended: McCormick)
1 tablespoon freshly minced parsley leaves
Salt
Freshly grated Parmesan, for serving

MINT RAVIOLI STUFFED WITH GOAT CHEESE

This pasta is well worth making from scratch, its tiny flecks of green delivering bursts of flavor that contrast sharply with its creamy goat cheese filling and tart lemon-zest garnish.

Mint Ravioli Stuffed with Goat Cheese image

Steps:

  • Make the pasta: Prepare an ice-water bath. Cook mint in a small saucepan of boiling water until bright green, about 1 minute. Using a slotted spoon, transfer mint to ice-water bath. When cool, drain, and squeeze out excess water.
  • Transfer mint to a food processor. Add eggs, and process until mint is finely chopped. Combine flour and salt on a work surface; make a well in the center. Add the egg mixture, oil, and water to the well. Using a fork, lightly beat wet ingredients. While beating, draw in the flour mixture, a little at a time, until fully incorporated. (Dough will be shaggy.)
  • Knead dough by hand or in a mixer fitted with a dough hook until very smooth and supple, 10 to 15 minutes by hand, 8 to 10 minutes with a mixer. Wrap in plastic, and let stand for 1 hour.
  • Meanwhile, make the filling: Beat ricotta, goat cheese, salt, and pepper with a mixer on medium speed until well combined and smooth, about 2 minutes.
  • Divide dough into 4 portions. Feed 1 piece of dough (keep remaining pieces covered with plastic) through a pasta machine's widest setting (#1) twice. Continue to feed through ever-finer settings, 2 passes on each setting, ending on setting #6. (The sheet will be very thin.) If dough is sticking, dust very lightly with flour. Cover dough sheet with plastic. Repeat with remaining dough.
  • Using a round cutter, cut pasta sheets into 3 1/2-inch circles. Spoon 1 generous tablespoon of the filling in the center of 1 round. Wet edges of pasta with a finger dipped in water. Top with another pasta round; press edges tightly to seal. Repeat with remaining dough and filling.
  • To serve: Bring a large saucepan of water to a boil. Add 1/2 of the ravioli, and cook until they float, 1 to 2 minutes. Meanwhile, melt 2 tablespoons butter in a medium skillet over medium heat. With a slotted spoon, transfer ravioli, along with 1 to 2 teaspoons cooking liquid, to the skillet. Cook, turning occasionally, until just glazed, about 2 minutes. Transfer to serving plates. Repeat with remaining ravioli and butter.
  • Garnish with lemon zest and mint, and serve immediately.

  • Pulse the egg yolks, whole eggs, 3 cups flour and salt in a food processor until the dough comes together in a ball. Add more flour if the dough seems very sticky. Transfer the dough to a work surface and knead briefly until the dough is smooth. Gather into a disc, wrap in plastic wrap and let it rest for an hour at room temperature.
  • Bing a saucepan of water to a boil. Remove the beans from the pods, then drop them into the water to blanch for 2 minutes. Drain. When they're cool enough to handle, make a small tear on the tough outer skins and peel them off. You should have about 3 cups peeled fava beans.
  • Divide the dough into 4 portions, keeping reserved dough covered while working so it doesn’t dry out. Flour the dough and roll into thin 3-inch wide sheets on a pasta machine (I stop at setting 6 on my hand-cranked Atlas). Trim the sheets into workable sections about 2 feet long and place on a lightly floured surface.
  • Heat the olive oil and butter in a skillet over medium heat. Sweat the leeks with a pinch of salt until soft. Add the asparagus, cover and cook 2 minutes, until tender but still bright green. Remove from heat and stir in the reserved fava beans.
